Almost 10 years, we first sat down with Ricardo Pico as his journey in Sotol was just beginning. Now, so many achievements and projects later, what does Ricardo Pico reflect on in this new world of Sotol awareness. One of the only guests to appear on the show twice, Ricardo shares his tales of Don Lalo, the creation of Nocheluna Sotol, and what success looks like.
Chihuahua is not only Mexico's largest state but also full of neverending stories. The first episode I ever recorded about this state was more of an ode: two people who had recently found Chihuahua and had become hardcore fans overnight. But, after that, I wanted to record with someone that had deep roots and a fine-tuned expertise in the territory. In this groundbreaking, down and dirty conversation with Gian Nelson of Jano Spirits, some of the topics we discuss include: How Gian found his home in the creative and multidisciplinary workspace of the wine and spirits industry and why he's selected Agave Americana as the canvas on which he expresses his passion. An overview of the different types of agave spirits currently being produced here in the US, specifically: the differences between using imported agave syrup vs. actual farmed or wild agaves. Why Mexico is becoming the “Old World” of Agave spirits production, and how American and other international producers are responding to a lack of shared knowledge across borders with characteristic punk rock innovation. What it would mean for a bartender or beverage program in Mexico to import American Agave spirits specifically to feature on their sipping or cocktail menu. And How many thousands of pounds of pinas it takes to make just ten cases of agave spirits. Along the way, we meditate on the mystical nature of inulin conversion, celebrate the influence of Chicano flavors and cultures, learn how to get your neighbor to let you dig up their agave plants, and much, much more. Featured Cocktail: The Batanga This episode's featured cocktail is the Batanga. To make it, you'll need: 2 ounces tequila (generally, a silver tequila is utilized, but you can feel free to substitute with any agave spirit of your choosing) 1/2 ounce lime juice 3 ounces Cola Salt for rimming the glass. Begin by slicing a fresh lime, squeezing it for juice, and rubbing a spent half around the rim of a highball glass. Next, rim the glass with salt and fill it with ice. Since this is a built drink in the style of a Cuba Libre, all you need to do is add your agave spirit, lime juice, and cola to top (in that order), and, important to the ritual of this drink, stir it with the knife you used to cut the lime. Garnish simply with a lime wheel or a nice lime twist and enjoy.

In the spirit of spirit month, we're starting out with a well-deserved bang. Let's talk about the liquor that comes in hot, and leaves us even hotter – sizzling with a well-paletted spice on the tip of our tongue and a soothing warmth in our bellies. I'm talking about tequila, baby. The tip of the iceberg in the Mexican spirits world. Some of the best are distributed right from San Diego. In fact, Happy Half Hour brings on an old friend who's expanded his company's rotation since his last feature in 2020. CEO Gaston Martinez of IZO Spirits saw his one stop mezcal leave people craving more from his Durango-based distillery and heart grown message captured in every bottle. Following its launch, backed by seasoned marketing executive and co-founder Linda Belzberg three years ago, Gaston knew they were destined for greatness – expansion. After curating a mezcal that was consumed on a hypnotic level, yet still competed for space with larger moguls, IZO had to change the game in order to keep up. Here are a couple of updates on IZO since they were here with us last. Soon after its initial debut, their mezcal made its way into the bulky hands of Costco Wholesale, where it reached its biggest audience and gave the team the leg room needed to create other lines of spirits. Their most recent venture: a sotol that takes 15 years to harvest from the plant. Gaston takes pride when describing the sustainable and old world traditions they use to grow and ferment their sotol, as well as all of their other batches. He brings a little piece of home into every step of the process, capping it off with an onyx stone topper mined and shaped straight from Durango, Mexico. “Durango is kind of a small town, but I want to bring it to the world,” he says. Brent Looby, Co-Founder of Desert Door, is no stranger to difficult endeavors and is trailblazing the spirits industry with an wild-harvested plant called, Sotol. After a career of flying jets in the Marine Corps, he and fellow Veterans, Ryan and Judson, decided to start distilling what they believe captures the essence of Texas. Brent talks about what it takes to enter a highly competitive, highly regulated and capital intensive industry. He says much of what is takes, is not fully knowing. He describes the benefit of not having all the facts before you start, because if most folks knew how hard it was, they wouldn't even try. Brent shares the intricacies of the Sotol plant and how this ancient crop that was once forgotten, was actually one of the earliest spirits created. Over the years they have developed a strong reverence for this wild-harvested plant and its applications beyond making a great spirit. Sotol, is a plant strong enough to use as a tool and delicate enough to nurture livestock when a severe drought hits. Brent also shares the importance of understanding who you are as a brand and the importance of listening to your customer. In the early days of Desert Door, the Team was very particular on how they wanted their audience to perceive and interact with their product. What they found is that all walks of life enjoyed their bottles of Sotol and to dictate a universal perspective didn't make much sense- Let folks enjoy as they please. Brent also talks about the importance of taking care of the environment and how that is not only directly correlated to good stewardship but also good future profits. Desert Door's revival of Sotol, is taking the industry by force and and is changing the way folks celebrate good times.
