RUN  This week we speak with 2022 Boston Marathon Finisher Adrianne Haslet.  She is a survivor of the 2013 Boston Marathon bombing.  She lost her left leg below the knee, which profoundly impacted her life.  Adrianne is a professional runner, advocate for amputee rights and motivational speaker.  Her passion and positivity set an example for anyone facing tough challenges in life.   Last April, she ran the Boston Marathon with the 2017 New York City Marathon Champion Shalane Flanagan.   We talk about her experiences leading up to and training with Shalane on this week's show. She has many valuable lessons and tips in this conversation for anyone pursuing a tough challenge or goal.  Take this one on a long run with you for sure! Exactly a month after they ran ten miles of the New York City Marathon together, Tina and Elyse Kopecky connected to talk about eating to support your running, how “healthy” eating can become unhealthy, dealing with a picky eater, and how to set the tone for your entire day. Elyse is a mom, a trail runner, and with her co-author, elite runner Shalane Flanagan, a three-time New York Timesbestselling author. “I did want to run a marathon at one point in my life, just to experience it.” Elyse was a competitive runner in college, but she suffered from low bone density and stress fractures, amenorrhea, compartment syndrome, and I.B.S.  By the time she graduated, she was burned out on racing and had no desire to get back on a starting line.  “I still had a love for running and got really into trail running,” she says, “but just running casually, like going for five mile runs with friends at a slow pace.”  As time went on though, she wanted to run a marathon. It happened that her 40th birthday coincided with the New York City Marathon's 50th anniversary and her friend Shalane Flanagan completing the six world marathon majors in six weeks, finishing in New York.  Clearly it was the race that she had to do. “I wanted to prove to myself that all the nutrition advice that I was giving everyone else would work for myself.” She was nervous going into training: “If I ended up with a stress fracture while marathon training, I would think I was a fraud, like none of my nutrition was working.”  But it did work; she ran the entire 26.2 miles without ever hitting a wall.  She used to think that she couldn't eat before running because she has a sensitive stomach, but training for the marathon taught her that eating before a run actually helps her. “When I'm marathon training, I'm like a grizzly bear.” Elyse says that people would be surprised if they saw how much she ate when she was marathon training.  It wasn't easy because I.B.S. limits the foods that she can tolerate. She had to cook constantly, which was the hardest part of training.  “The miles are the easy part; that doesn't take up as much time,” she says.   That doesn't mean that she only eats “healthy” foods.  During training, she found that she needed gels and sports drinks, because “sometimes foods that seem less healthy are the ones that are going to fuel me the best.” Everyone has to find what works for them, but the important thing is to take in enough fuel.  Elyse observes, “I used to think that I wasn't a long distance runner because I never felt good past five miles, but now I realize that it was because I wasn't eating enough beforehand to feel good past five miles.” “I think I was meant to have a picky kid so that I could relate more to parents and who knows, maybe this will result in a book down the road.” Some people, like Elyse, can't eat certain things because of health issues.  Others, like her son, just don't like them.  Her daughter will try anything and has “an incredible palate.”  Elyse says that “with her being my first kid, I was like, I don't understand what's wrong with parents, like why they can't figure out how to feed children.” Her son is a different story.  She's figured out what he will eat, and makes sure that he has healthy, balanced meals, even if that means preparing the same dishes over and over.  “They're not vegetables,” she acknowledges, “but I think parents get caught up that it has to be vegetables. There are a lot of nutritious foods that are not vegetables.”  “I think I need to put it out there more on social that I do eat normal.  Like my family does go out for tacos, we do get pizza take-out on Fridays.” There are a lot of Run Fast. Eat Slow fans in Bend, OR, where Elyse lives, and they frequently stop to talk to her at the supermarket.  She jokes with Shalane, “I don't want them looking at my cart because I have tortilla chips in there, and ice cream, and beer.”  She emphasizes though, that it is a joke.   “I want people to know if you think you're eating perfectly, you probably aren't. If you're stressing that much to where your diet is perfect every single day, then maybe you're not enjoying food, and it gets to a point where it's unhealthy to eat overly healthy.” “The more you restrict yourself, the more you're going to want that food.” Because she allows herself to enjoy all foods, Elyse doesn't develop a craving for something because she's been depriving herself of it.  That allows her to easily avoid overindulging over the holidays, which is a pitfall for so many people.  She likes having something sweet every day, but she tries to make sure that it's something healthy, like homemade muffins or cookies made with butter.  “I think that food is meant to be enjoyed and everything should taste delicious,” she says, “even healthy food.” "We believe that how you start your day impacts your whole day." Elyse and Shalane's new book, Rise and Run, is subtitled, Recipes, Rituals, and Runs to Fuel Your Day.  The title reflects their belief that, as Elyse says, “how you start your day impacts your whole day, and that's everything from your mindset in the morning, to getting outside and getting the first rays of sunlight and setting your circadian rhythm by moving outside.  That doesn't mean you have to go for a 10 mile run, but even just a two mile walk in the morning at first light can really impact your entire day in a positive way.” The book is full of advice about training and how to start your day more mindfully, and of course, delicious, nourishing recipes.  As Elyse says, “the biggest part of starting your day right is what you eat in the morning.” Resources: Elyse's website Run Fast. The Challenges of Writing The unexpected start of the pandemic posed a significant challenge in finishing the book. Elyse's pandemic writing routine included writing in the early morning during quiet hours. Halfway through the writing, her publisher decided to move up the deadline by six months. She makes it a practice to stay away from noise and other distractions such as her phone to increase her focus. She warms up by writing the easier parts first before doing sections that take the most brainpower. Her youngest is still in part-time preschool, so she only has a short window for writing. Having limited time helps her increase her focus and productivity. Food for Creativity A guiding principle of Run Fast, Eat Slow is the benefit of healthy fats for the brain. Athletes often quickly deplete their food fuel, so they need nutrient-dense and heavy meals. Elyse writes best with a healthy hearty breakfast with protein and good fats for brainpower. Elyse Kopecky, Author, Runner, and mom, spent her college cross country and track careers at UNC with Olympic marathoner Shalane Flanagan. This week I had the pleasure to sit down with a very inspiring serial marathoner Julie Benson. Julie shares with us her incredible story of Overcoming Adversity. When asked how she got into running marathons Julie said- "I hated running most of my life. Then after I had my children I wanted to lose some baby weight so I went out for a walk and it turned into a run that turned into a 5K that turned into a half marathon that turned into a marathon". IN THIS PARTICULAR EPISODE YOU WILL LEARN: Julie shares with us her experience of that terrible day in 2013 when she was closing in on the finish line of the Boston Marathon when the explosions rang out and everything turned into chaos. Just when Julie though she lived through the hardest part of this experience, her husband a SWAT member of a nearby police department was activated to join in the hunt for the bombers. Julie and I talked quite a bit about the struggle we have with the concept of "What If". When something tragic happens and we survive it, we often play different scenarios in our heads. What if this happened, What if I did that instead. The list of scenarios is endless! I wrote a post a while back that talks about just this topic called "Have Your Ever Met What If" I have to warn you though it is probably not meant for everyone. It is a bit on edge and I use some colorful language. Julie's Homemade Energy Bars! Ingredients: 1 cup (12-15) whole pitted dried dates 1 cup dried fruit (cranberries, apricots, cherries, etc. Choose one, or mix a medley!) 1 cup nuts (almonds, pecans, walnuts, your choice) Equipment: Food processor Wax paper Sharp knife Preparation: 1. Roast nuts (optional). Nuts can be raw or roasted; roasting will add a toasty, nutty depth to the bars. If desired, roast nuts at 350F for 10-12 min, until fragrant and golden. 2. Combine the nuts, dried fruit, and dates in a food processor. Pulse a few times to break it up. Separate dates if they start to clump together. 3. Process continuously for 30 seconds. By this point, the ingredients should all have broken down into crumb-sized pieces. 4. Process continuously until a ball is formed, 1-2 minutes, or until ingredients clump together. 5. Dump ingredients onto a piece of wax paper. Press the dough with your hands until it forms a thick square, roughly 8"x8" in size. Wrap and chill for about an hour. 6. Unwrap the chilled dough and transfer to a cutting board. Cut into squares. 7. You can store the bars in the fridge for several weeks or in the freezer up to 3 months! ADD-INS! I often add shredded coconut, chia seeds, chocolate chips, cocoa powder (for some caffeine), ground nutmeg or cinnamon or even lemon zest!! You might need extra dates if you put in additional add-ins. Sarah Conklin is perhaps best known on the internet as the blogger behind “Once Upon a Lime.” She lives in Bend, OR, where she works for Picky Bars, the sports bar company founded by professional athletes Lauren Fleshman, Jesse Thomas, and Stephanie Bruce. Before that, she worked for Oiselle, the women’s athletic wear company, and was an avid marathoner. Now, after taking a bit of a break from the marathon distance, Sarah is back at it, training under Lauren Fleshman’s guidance. On this episode, we talked about everything from what a day in the life of a Picky Bars employee is like (bonus: it sometimes includes starting the day on the ski slopes) to failed Boston Qualifying attempts to getting a divorce in your twenties. Born in the coastal town of Marblehead north of Boston, Massachusetts, Shalane showed an early aptitude for distance running. A three-time All-State cross country athlete, she also finished first in the state in the mile and her 4:46 performance won the National Scholastic Indoor championships. Her two-mile performance still stands as a Massachusetts record. Flash forward to to 2004 when Shalane turned professional and her achievements kept piling up. A two-time national champion in the 5,000m, she won the short course cross country championships in 2004 and 2005. Today, Shalane is one of the most dominant female distance runners on the planet, boasting achievements like: 2008 Bronze Medalist in the Olympic 10,000m Multiple American Record holder 2nd fastest American female marathoner of all time with a 2:21:14 personal best 2012 Olympic Trials marathon winner and 10th overall at the 2012 London Olympics 6th overall at the 2016 Rio Olympics in the marathon But Shalane isn't just a runner. She's now a New York Times best-selling author with her coauthor Elyse Kopecky of Run Fast, Eat Slow: Nourishing Recipes for Athletes. This was one of the easier interviews I've ever done because Shalane is so easy-going and relaxed. When something tragic happens and we survive it, we often play different scenarios in our heads. What if this happened, What if I did that instead. The list of scenarios is endless!  I wrote a post a while back that talks about just this topic called "Have Your Ever Met What If" I have to warn you though it is probably not meant for everyone. It is a bit on edge and I use some colorful language.    Julie's Homemade Energy Bars! Ingredients: 1 cup (12-15)  whole pitted dried dates 1 cup dried fruit (cranberries, apricots, cherries, etc. Choose one, or mix a medley!) 1 cup nuts (almonds, pecans, walnuts, your choice)   Equipment: Food processor Wax paper Sharp knife    Preparation: 1. Roast nuts (optional). Nuts can be raw or roasted; roasting will add a toasty, nutty depth to the bars. If desired, roast nuts at 350F for 10-12 min, until fragrant and golden.  2. Combine the nuts, dried fruit, and dates in food processor. Pulse a few times to break it up. Separate dates if they start to clump together.  3. Process continuously for 30 seconds. By this point, the ingredients should all have broken down into crumb-sized pieces.  4. Process continuously until a ball is formed, 1-2 minutes or until ingredients clump together.  5. Dump ingredients onto a piece of wax paper. Press the dough with your hands until it forms a thick square, roughly 8"x8" in size. Wrap and chill for about an hour. 6. Unwrap chilled dough and transfer to a cutting board. Cut into squares.  7. You can store the bars in the fridge for several weeks or in the freezer up to 3 months!    ADD-INS! I often add shredded coconut, chia seeds, chocolate chips, cocoa powder (for some caffeine), ground nutmeg or cinnamon or even lemon zest!!
