As he continued to work in the field, he found that the attack surface had broadened and that IoT security was an ever-growing challenge. We're back with a second series of The English Wine Diaries podcast. This week my guest is Steven Edwards, who in 2013 was crowned the sixth winner of BBC TV show Masterchef The Professionals. At the time, he was one of the youngest ever winners of the competition at 26 years old and his food was described by Michael Roux Junior as ‘faultless'. Following his win, Steven set up etch, initially as a pop-up concept touring venues across the country, including Nyetimber Vineyard in West Sussex, before he opened his permanent restaurant, etch. by Steven Edwards in Hove in 2017. Last year, he opened a second restaurant at the Bingham Riverhouse hotel in Richmond and this summer, he will be returning to his former workplace, South Lodge, near Horsham, for an eight-week summer residency. We talk about how he feels about returning to his roots, his latest venture with The London Vermouth Company and how English wine will continue to play a huge part in etch, which will be re-opening in September following a major refurb. Merry Christmas to all our listeners Another packed show of previews for the big races on the Sunday 27th December from Chepstow, Kempton, Leopardstown and Limerick. Chris Telford is once again joined by the usual suspects, Andy Cummins, Declan Carroll & Steven Edwards as they go through the showpiece races on the cards. We start with Chepstow and the Juvenile Hurdle Finale. Nassalam is a very short priced favourite and he feels a little like Goshen reincarnated, this will be his hardest task to date. We then preview the Welsh Grand National which as ever, is very competitive. Chris & Declan agree on one horse that will hopefully take a step forward and showcase his staying pedigree. We then head to Kempton, and this is where the fun begins. The Wayward Lad Novices Chase is where we started and the word 'Shishkin' started a whole heap of discussion and opinion. You need a beer for this one! The Desert Orchid Chase should see Altior back in the winners enclosure but Andy wasn't so sure about that. Then we head to Leopardstown and preview the Rewards Club Chase, where Chancun Pour Soi is awfully short and the lads are keen to take him on. The Future Champions Novice Hurdle could be the most competitive Grade 1 of the Christmas Period and opinions where divided as to where the winner would come from. Finally at Leopardstown, we focus on the Paddy Power Chase. To round off the Christmas fun, we preview Limerick's Grade 2 Novice Hurdle where both Andy and Declan selected an outsider with a lively chance.

We then head over the Irish Sea to Leopardstown and the Knight Frank Juvenile Hurdle where we have a short priced favourite in Zanahiyr. The Racing Post Novice Chase sees Felix Dejsy and Darver Star take each other on again and once again, the race divides opinion. Over at Limerick we preview the Faugheen Novice Chase where Asterion Forlonge looks to put a stamp on his credentials but will have to brush up his jumping vs some of these in what looks a very decent renewal. We finish the episode by analyzing the Rowland Meyrick at Wetherby, and this where we find out who Rowland Meyrick actually is. Thanks to Andy.
