The world of spirits judging to most consumers means medals, recommendations, and this idea that someone knowledgeable somewhere said they liked it. But it's far more complicated than that, as we learn on this episode with the LA Spirits Competition. When the San Francisco World Spirits Competition Managing Director Nicolette Teo decided to branch off and launch a spirits competition in Los Angeles, she knew she needed to keep all of the integrity that competition was known for while putting her own spin on it. Hancock Lee and his brother Willis Lee followed the ancient buffalo crossings along the banks of the Kentucky River in Franklin County, and through these Buffalo Traces, found the limestone rich water that would form the cornerstone of the distilling site where it stands today. Guys, this distillery produces some of the heavy hitters we all know and love, everything from that classic Green Label Buffalo Trace to the now coveted Blanton's single barrel and even the rare and celebrated Pappy Van Winkle line. On this show we got to taste Old Charter, E.H. Taylor Single Barrel, Eagle Rare, two different Wellers, Antique 107 and Weller 12, Hancock's Reserve, Elmer T. Lee, Rock Hill Farms, and the extremely rare and coveted George T. Stagg. Mezcal is sometimes seen as the little brother to tequila, but the world of mezcal is actually far wider reaching that tequila, especially considering tequila is actually just a subset of the wider family of mezcal. Made from any variety of agave, not just blue weber, Mezcal is known in Oaxaca with the saying “Para todo mal, mezcal, y para todo bien, también” which translates to "For everything bad, mezcal, and for everything good, as well." For this episode we brought on mezcal expert Max Reis. Looking at the long haired tattooed metal rocker you wouldn't guess a mezcal connoisseur, but the man has worked in the alcohol industry since he was of legal age and has spent enough time getting his hands dirty with the mescaleros south of the border that he has indisputably earned the title. We talk about various methods of fermentation including leather sacks, as well as methods of creation that range from artisanal to ancestral. What do you think of when you think of Tennessee? Barbeque? Country Music? That bright orange and white colors of the state football team? Kentucky gets a lot of attention when it comes to whiskey, but it's neighbor state to the south has a term all to its own: “Charcoal Mellowed”. That is a specific designation unique to the state, governed by the Lincoln County Process and laws protecting what can and can't be called Tennessee Whiskey. Wednesday September 17th 1986. The day that Ron White and Alex Reymundo met in the world of comedy. Two Texans that started a friendship that would go beyond standup and into the world of Tequila. In fact, as far as I can tell from hanging out with these guys, the only thing that has changed is Ron's signature scotch has been replaced with that tequila. Otherwise, they are about fun and the endless party. And what better spirit to celebrate that than tequila. Ron and Alex tell the story of how they stumbled upon a small family distillery down in Jalisco and seven years ago formed a partnership that brought that tequila to drinkers in the United States. Their tequila Number Juan is, as they put it: water, agave, and love. On this episode we are exploring Bardstown Bourbon Company, a relatively new but award winning and quickly growing distillery. But distillery doesn't really capture the full extent of what Bardstown is doing. Sure, they are distilling their own spirit of course, but they have been making a big name for themselves in the blending and finishing realms as well. We tasted through their Fusion series which really highlights their year after year blend, their Collaboration series which highlights interesting barrel finishes in conjunction with wine makers and other spirits makers, and their Discovery series which is about the blending of the young and the old. I think it is really easy to throw around a word like innovation, it's a buzzword that anyone just starting off is likely to reference, but tasting a very wide variety of products from the company really made me feel as that is in fact the exact right word to describe Bardstown. While they are letting their own distillate age, they are constantly experimenting, tweaking, and not afraid of missteps on their way to making something new. Just as an example, in their contract business, they have over 40 different mash bills that they are making in house for other different companies. In a world where many distilleries have a mash bill or two and stick to it, these guys celebrate variety. We learned this and much more from Dan Callaway of Bardstown Bourbon who hopped on a video call with us to chat through many of their products, stories behind their creation, and what Bardstown has coming up. The prohibition era invokes romantic feelings of speakeasies and illicit whiskey, the idea of protesting the government by imbibing in spirits still loved by many. While you might think of the people who were booze runners back in the day as mobsters with machine guns and big cigars, we're turning to the story of Grandma Sextro who continued to make authentic Templeton Rye in Iowa, during that time all while looking over her shoulder to make sure the federal government wasn't close at hand. The story is best told by our guest Heath Schneider from Iowa Legendary, and they honor their grandmother by making historically accurate Rye, and the team is relentless about each step of the process being done exactly as it was in 1931. And I do mean relentless, they have been turning down any offers or ideas to expedite the process or allow larger batch sizes because doing so would compromise being faithful Miss Sextro herself. Rum: is it still a sticky sweet pirate's drink or is there far more nuance to the spirit? On this episode, we're diving into the world of rum with Taylor Persh, head chef at Lost Spirit's restaurant Fish or Flesh and Jordan Fattal, bar director for Baldy's Restaurant Group, both rum lovers and have a bit more rum knowledge up both of their sleeves than we do. We tasted a wide range of the spirit with a lineup from Grander Rum, the love child of a native Kentucky whiskey drinker and a small rum distillery in Panama. Their lineup challenged what we thought the spirit was capable of with unique barrel aging and different aged blends. We ended with a big one two punch from Lost Spirits including their Navy Style Rum and a collaboration they did with Rational Spirits clocking in at 141 proof. The story and history of rum is a lot more complex and region specific than you may have imagined, so while we did indeed explore the classic tiki drink side to rum, we also dive into the influence of the European colonies and how their histories influence the types of rum we see today. One more interesting aspect to this podcast is the fact that we are in the middle of the coronavirus quarantine which is strongly and uniquely affecting the service industry. On this episode we are heading to Park City Utah to drink through an incredible lineup from High West Distillery. In 2006 High West became Utah's first legal distillery since 1870. They'd been making waves in the industry well before Whisky Advocate named High West the Distiller of the year in 2016 with excellent barrel aging and finishing.
