There are new investments made into multi-million dollar distilleries every week it seems. There are more brands and product extensions popping up everyday. Yet, there's a shortage of barrels that are putting a strain on existing production. But when all this evens out and everything gets produced as planned, are we going to see an overproduction and what could be the result? Russell's Reserve is coming out with their new limited edition Single Rickhouse line extension. Sure, it features barrels that are selected from the former Camp Nelson C, but does it warrant a price tag of $250? Lastly, we look at the announcement of Angel's Envy hiring Owen Martin to be their next Master Distiller. Angel's Envy hasn't had a Master Distiller since the passing of Lincoln Henderson in 2013 who co-founded the brand. Is this an attempt to fill a void that is missing after Wes Henderson announced his retirement? Episode 11! Today, we're going across the pond to the North of England and Spirit of Yorkshire Distillery. I'm joined by founder and Managing Director, David Thompson. Dave is a farmer at heart, and Yorkshire is his garden. Yorkshire is the largest county in England by far and has ample space to grow grain and everything you need for distilling. And yet, like much of the rest of England, distilleries are few and far between compared to its Northern and Western neighbors. I ask Dave why this is, what constitutes a “Yorkshire” style of whisky, if there is one, and what he and Spirit of Yorkshire bring to the table. The core answer and the most fascinating one is that they are, again, farmers at heart. Spirit of Yorkshire isn't meant to be a global, shelf-filling enterprise – it's meant to showcase what can be made with the local product and share it with those who will enjoy it. As their acreage grows, so will they, and not a second sooner. Spirit of Yorkshire is a field-to-bottle operation, distilling their own home-grown barley. Keep in mind that this is the same barley that could be going to Scottish or Irish distillers – much of what's distilled to the North and West is barley grown in mainland England, and yet there are conspicuously few distilleries where the barley is actually grown. I love talking to distillers and producers right on the cusp of something big, and that's exactly where Spirit of Yorkshire is. As we speak, new agreements with distributors in the US are being signed for their Filey Bay line to get to the US. I'd also be remiss in not mentioning that Spirit of Yorkshire is a Jim Swan-connected project. The late Dr. Jim Swan, who passed away in 2017, was prolific. If you're an American whiskey drinker, the most apt comparison might be Dave Pickerell, but with all due respect to the late Mr. Pickerell, Jim Swan's influence reached as far as one possibly could in whiskey. Dr. Swan's fingerprints remain on some of the most exciting distilleries around the world, from Yorkshire to Kavalan in Taiwan to Penderyn in Wales, India's Amrut, and Kilchoman on Islay. He had influence in every major whiskey-producing country and many of the up-and-comers, too, with a signature style that was less about him and more about what the local style was or could be like. So, does it make a difference to distill where the barley is grown? Well…to be honest, I'll have to wait to find out. Not a long time, but just a little until distribution hits New York. I am very excited to do so and will be posting my tasting notes as soon as I can grab a bottle (or three). Raj Peter Bhakta is a cult of personality to say the least — charming, charismatic, controversial, uncompromising.  But it’s the combination of these traits that make the man one of the most interesting in the spirits world.  I say "spirits" this week specifically, because while Raj is most known for his founding of and much talked about departure from the American whiskey darling Whistle Pig, he’s turned away from Rye, and started a love affair with a different brown liquor - Armagnac.  In typical Bhakta style, his latest release isn’t a traditional armagnac — Bhakta 50 is a premium spirit blended from grapes harvested as far back as 1867 and is finished in Islay Whisky casks.  Raj is inspirited by the idea of American Revival and his passion for this is evident throughout the podcast, plus he gives us a pretty epic story about the legendary Dave Pickerell. In this episode, we did a walking and talking type interview with Julian Geraldo, the Head Distiller at Gulf Coast Distillers. Julian walked us all through the distillery and took us cradle to grave through the whole operation. Watch the episode all the way through because Julian provides little Easter eggs of info throughout.Julian ran us through the unique history of Gulf Coast Distillers which is intertwined with coffee and rice industry. He also told us about Dave Pickerell’s involvement in shaping the operation. As you know, Dave Pickerell was the Master Distiller at Maker’s Mark for 14 years before he started his own consulting firm that advised over 100 craft distilleries. He was a legend in the whiskey world and Gulf Coast Distillers was one of his last consults before he passed in November of 2018. These guys are in the process of installing two continuous column stills they purchased from Makers Mark. Sadly, we lost Dave back in November of 2018 and, while this isn't Whistle Pig's first appearance in the Spirit Guide Society, it's the first since Dave's passing. Embracing more than 500 acres, we think our farm is the perfect place to experiment and provides us with ample access to the highest quality ingredients.Rye is a bratty grain. It's difficult and like a great Bordeaux takes many years to truly reach its potential. Fortunately for us we have a significant inventory of exceptionally aged Rye Whiskeys. But age isn't everything. We challenge ourselves to see if we can take this great Whiskey and make it truly exceptional. That's how our obsession with finishing started.We scoured the globe to find some of the most unique and interesting casks available and even developed our own cask using oak straight from our farm. We painfully surrendered some of our Whiskey to rest in these casks and then proceeded with the hardest part of our jobs. We waited.The results were mixed. Some finishes failed or added nothing. But many introduced new levels of complexity and depth to the Rye. Our 12 Year Old World Cask Finish Rye was the first line of finished Rye Whiskeys released, originally as 3 separate finished Ryes: Sauternes, Madeira, Port. And now The Boss Hog features a new favorite finish with each release.The wood innovation we are proudest of is our Vermont Oak Barrels made from trees harvested directly from our farm and the surrounding area. Vermont is about as far north as oak trees can grow. The shorter growing seasons leads to oak trees with more growth rings. When aging Whiskey encounters a growth ring in a barrel it imparts flavor, so our Vermont Oak barrels, with custom chars & toasts designed by Dave Pickerell, bring tremendous depth and complexities to our Ryes.WhistlePig 15 year is finished in these Vermont Oak Barrels for 1 to 3 years, and all of the Whiskeys coming out of our distillery go directly in to VT oak. The first of these estate-distilled whiskeys can be found in our FarmStock Rye series.After the relase of our 12 Year Old World Cask Finish Ryes we decided that no one finish was quite perfect. We wondered if we could take Aristotles advice and make the whole be greater than the sum its parts. Of all the craft distilleries Dave Pickerell worked with before his sudden death last November, none was more identified with him than Vermont's WhistlePig Rye. He was there at WhistlePig's founding when the first casks of whiskey were acquired from Alberta Distillers more than a decade ago, and trained the team of young distillers and blenders who now carry on his work. Jeff Kozak was around back then, too...but he was the Alberta Distillers executive who sold those casks for the first WhistlePig bottling. Samara Rivers is trying to change that with the Black Bourbon Society, a group she created two years ago to bring African-American whisky lovers together through regional tastings and an active social media presence. Her society has been welcomed by the Bourbon industry, and her ultimate goal is to bring more people of color into that industry as well. We'll talk with Samara on WhiskyCast In-Depth. In the news, Kentucky's barrel warehouses are holding more Bourbon now than they have in nearly 50 years, but believe it or not, that's actually creating a tax problem for the Commonwealth's distillers.  Dave Pickerell is well known in the bourbon world, he was former master distiller at Maker’s Mark and owns a consulting business, Oak View Spirits, where he has designed equipment, systems and processes for about 100 distilleries worldwide including WhistlePig, Hillrock, Corsair, and many others. This episode dives into to the distilleries themselves, the pricing behind Boss Hog,  and questions we would want to know from a master distiller like grain sourcing. July 1 is Canada Day, and this year it's even more of a holiday than usual. Canada celebrates its 150th anniversary this Saturday, and Hiram Walker Distillery master blender Dr. Don Livermore marked the occasion with a trip from coast to coast - and all the way from near the U.S. border to the Arctic Circle along the way. He led tastings of the new J.P. Wiser's One Fifty Commemorative Series whisky at each stop, ending in St. John's, Newfoundland. That's where we caught up with him for this week's WhiskyCast In-Depth. We'll also look at the impact of the Trump Administration's proposed 2018 federal budget on the whisky industry. That budget cuts funding for the key Treasury Department agency that regulates whisky and spirits distillers, and also eliminates funding for an Agriculture Department program that has helped boost U.S. whiskey exports worldwide. In the news, the owners of Vermont's WhistlePig Rye have confirmed reports that they're considering offers to sell the distillery and its whiskey stocks in what master distiller Dave Pickerell describes as a "feeding frenzy" market for craft distillers. Chivas Brothers workers at the company's main blending and bottling plant in Scotland have voted to go on strike after rejecting a contract offer, and the threat comes as Scotch Whisky exports during ther first three months of 2017 rose by ten percent over a year ago. We'll also look at the week's new whiskies and taste three Canadian whiskies, too!

Dave Pickerell has been keeping a low profile since leaving Maker's Mark in April of 2008. Turns out he was doing research into rye and microdistilling, and discovered a 10-year-old rye that just begged to be bottled. Dave and his partners are now selling WhistlePig Rye Whiskey, with plans to build a distillery on a farm in Vermont's Green Mountains. Dave explains his new whiskey and his research in this week's episode. The whisky business is growing by leaps and bounds worldwide, and distillers are responding with millions of dollars in new investments. This past week, Diageo announced plans to pump nearly $200 million into its Scotch production, including an all-new malt distillery in the Moray area. We'll hear from Diago's Peter Smith and Ken Robertson, along with Dave Pickerell of Maker's Mark, where Beam Global is also investing on additional capacity. In the news, Mount Vernon will be able to sell whisky from George Washington's distillery, 400 distillery workers in Southern Indiana may be able to keep their jobs, and the saga of Whyte & MacKay's sale may finally be near an end.
