I must stop talking about the cabbage. I won't shut up about it. So I figured if I brought chef William Eick to talk me through it, it will resolve my lingering emotional fixation on what is one of the best dishes I've eaten in a very long time. Eick opened Matsu about six months ago. It's a minimalist ode to modern Japanese cuisine. He's been a talent in San Diego for a long time, and this is the big idea, what he's been working for. In a spare room in Oceanside, where the “biggest” design element seems to be a single white orchid on a bar top, he's serving 8- and 10-course tasting menus. And the cabbage is the shocker. “I've been obsessed with Japanese culture since I was five years old,” says Eick. “Everything about it. A modern Japanese restaurant with a tasting menu, there are probably only a handful in the country that I can think of.” For this episode, Eick walks us through some of the magic tricks that make Matsu stand out. For instance, he creates various dashis (Japanese broth, a cornerstone of the cuisine) like the one in his crab dish that is made with carrots and A5 Wagyu beef trimmings. We talk about how Japanese cooks and chefs have been masters at discovering new levels of flavor (the concept of “umami” is Japanese). And William gives us a primer on koji, the incredible Japanese marinade that makes his duck breast vastly more interesting. Gives it a good funk. In “Hot Plates,” we talk about the San Clemente icon Nick's going into the former International Smoke location at One Paseo. The owners of Madison are opening an all-day brunch spot in Normal Heights called Madi. Wolfie's Carousel Bar (if you're not familiar, you need to check this out) has hired a new chef, formerly of Coronado's excellent Little Frenchie. And renown Japanese fried chicken chain, Tenkatori, is opening in San Diego. For “Two People, Fifty Bucks,” I rave about the chilaquiles at Cocina 35, and whether or not it's OK to call them breakfast nachos (a term told to me by a great Mexican chef, but which some food purists get very, very angry about and defend chilaquiles' honor). David can think of nothing but baseball (it's his cabbage), and points people to Mexican food classic Lolita's by Petco Park for game days (trivia: Lolita's is family of the legendary Roberto's). And William makes a regrettable decision to tell the world about his favorite ramen spot, which was a secret until right about now. Go, Padres. See ya next week.
Kelli Crosson bid her time, put in the work, earned this. The California native cooked alongside Jeff Jackson for 11 years at AR Valentien as his chef de cuisine (the iconic restaurant's second in charge). Starting at The Lodge at Torrey Pines over 20 years ago, Jackson was the one of the earliest and brightest stars of San Diego's food scene—doing farm-to-table before it was a marketing buzzword, cooking tip-to-tail when the rest of America was “just cook the sexy cuts.” Under his watch, the family-owned Lodge became a high-culinary attraction on par with the famed golf course it sits on. Still is. And now he's stepping aside to let his beyond-ready apprentice take the reins. Crosson is now the executive chef of all things Lodge—A.R., The Grill, banquets, events. If you eat it, she's had a say in its creation. Jackson is still very much “around.” The Evans family created an emeritus role for Jackson—corporate culinary advisor (soon you'll see his guiding influence at the new restaurant at Evans' family's other property in Mission Bay, The Bahia). On this episode of “Happy Half Hour,” we get to know Crosson beyond the kitchen. How she grew up on a fruit tree farm (“we'd take our entire bedroom and put it under the orange trees, just live under there”), how at age 27 with a good marketing job she decided to upend it all and grab her knives, and how the magic of AR Valentien and the Lodge gets done (hint: source the absolute best ingredients on the local part of the planet, tweak them with just enough of your accumulated art as a chef, but let them shine), and what makes that famed “Drugstore Burger” so explitively good. Over the years, she learned about the influence that social media has on people's lives, so she started a digital media company for retail properties called hellojenny. Carrie talks about the importance of personal branding. People connect with people on social media, so it is crucial to add value to your personal handle even more than to your company's handle. “I realized that businesses can be heroes too.” 12:42 At the peak of her career, Carrie had been working at a fortune 200 commercial real estate firm for 15 years. While attending a prominent industry event in 2018, Carrie was drugged and raped by an executive from her firm, throwing her life and career into turmoil. Carrie wanted to pursue a lawsuit, but she found a blanket arbitration clause in her contract, which meant that she had to waive her right to pursue justice in court. But Carrie didn't give up - she went through mediation, and negotiated her way out of her confidentiality agreement. In the summer of 2019, Carrie lobbied Congress about the issue and in the end, Carrie's Law was introduced. This legislation carves out sexual assault and rape from arbitration language in employment contracts. Prominent companies of all sizes & industries have supported this initiative, which has the potential to impact the 60 million Americans are subject to these types of arbitration clauses. Animae, Il Dandy/Arama, Morning Glory, Cesarina, International Smoke and Rare Society were among the dazzlingly delicious newcomers that helped make this one of the most exciting culinary years in memory. With a critical mass of first-rate eateries, San Diego is finally shedding its restaurant also-ran status and emerging as a bona fide dining destination. This kicked off his love of food, and he switched gears and moved to New York City to attend the Culinary Institute of America in Hyde Park. Michael went to own to open his namesake restaurants in San Francisco and Las Vegas, which each have a Michelin star. Today, through his company the Mina Group, he owns over 40 restaurants around the world. We chatted with Michael about the International Smoke concept and how it was inspired by cooking traditions found around the world, and the art of smoking meats and live-fire cooking. We also learned that Carl Schroeder, the executive chef at Market in Del Mar, used to work for Michael back in the day, and talked about how much the industry has changed over the years. Michael’s San Diego pick for Two People, $50, was Chiko, and the staff liked Claire’s on Cedros and Puesto. In Hot Plates, we learned about Green Oceanside Kitchen, the city of Oceanside’s new food recovery and preservation facility; La Doña, the new Mexican restaurant in Ocean Beach that’s going to replace the former Nati’s; and The Holding Company, a three-story drinking and live music venue in Ocean Beach from the owners of OB Noodle House. We also talked about Artisan Noodle Tatsuki, a new ramen shop downtown helmed by an alum of LA’s famed Tsujita (which has a one-hour wait). We want to note that there has been a delay in the restaurant’s opening date: It’s now estimated to be August 31. Sadat explained how The Kebab Shop went from concept to reality, and how the famous cilantro sauce found its way to the menu. His pick for Two People, $50 is Barbusa Modern Sicilian, and the staff liked Northgate Gonzalez Market’s menudo, Village Vino in Kensington, and Bay Park Fish Company. This week in Hot Plates, we have new celebrity chefs in town. Michael Mina and NBA-star wife Ayesha Curry are opening their upscale BBQ chain, International Smoke, next month in One Paseo. Little Frenchie, a Parisian-style bistro with a “drink by numbers” wine-pairing system, recently opened in Coronado with Chef Matt Sramek (Thomas Keller's Bouchon) leading the kitchen. The owners of U-31 are opening The Original 40 Brewing Company in North Park, and our very own Troy Johnson got a look at the new spot. The brewmaster is from Mikkeller, and the chef, Luke Johnson, has worked at Melisse in L.A. and Sky Room at La Valencia. Last but not least, Sisters Pizza just opened in Bankers Hill, where first-time restaurant owner Emily Green serves New York and New Jersey-style pizza by the slice, as well as whole pies. In regards to Hot Topics, Star Wars fans, listen up: Disneyland just opened the Star Wars Galaxy’s Edge theme park. The 14-acre park also includes Oga's Cantina, where fans can get a Star Wars-themed cocktail. It's the first and only bar in Disneyland that serves alcohol. This week, we chatted with Mary Kay Waters, owner of Waters Fine Foods & Catering, which has been in business in San Diego for almost 30 years. Waters describes herself as a food perfectionist with very high standards who refuses to accept anything less than the best. She also has a café that sells “fine foods to go” on Morena Boulevard that you can visit (Troy likes the Coconut Magic Bar). Waters also just released a cookbook, which you can pick up at the café or on their website. Her pick for two people, $50 was DaoFu. In Hot Plates, we’ve got some North County news! My Yard Live is opening in San Marcos in the old Hometown Buffet space, and will have a restaurant, brewery and a patio with a dedicated kids’ play space all under one roof. The place will be huge — over 17,000 square feet — and is opening in June. Stone Brewing Co. is back in the pantry aisle at Whole Foods — they teamed up with Homegrown Meats to create two new beef jerkies that are marinated in Tangerine Express IPA and Arrogant Bastard Ale. One Paseo has officially opened! The mixed-use development project in Carmel Valley has been steadily building buzz over the past year, and curated a mix of local and national eateries: we can expect Michael Mina’s International Smoke, The Butchery, Ways & Means Oyster House, and the first San Diego location for Blue Bottle Coffee to open here. Juniper & Ivy is having its five-year anniversary this month and is celebrating by bringing back some classic dishes from the original menu, like the squid ink linguine and clams, beef cheek dumplings and grape toast. In news elsewhere, we talked about La Plaza Cocina, a museum devoted to Mexican food and culture that is set to open in downtown L.A. this spring. The Mexican food mecca will not only have exhibitions and lectures, but interactive programs and events. Are mail-order meal kits doomed? This is a Hot Topic in the food world right now, and headlines in a variety of news outlets recently asked this question. Companies like Blue Apron were all the rage when the concept first launched in 2012, but it seems the novelty has worn off.
