In episode 280 of iCantCU, I share my experience traveling to New York City for Jane's apartment settlement. I reflect on navigating the subway, offering reassurance to those hesitant about using public transportation. Drawing from my father's advice—"Be careful, but don't be afraid"—I encourage everyone to embrace new challenges, whether in travel or life. I also detail my visit to Jane's studio apartment, describing its compact yet functional space in a desirable building. Post-settlement, we explored the city, visiting Grand Central Terminal, Fifth Avenue shops, and indulging in delicious food—including a memorable trip to Salt & Straw for ice cream. Beyond the trip, I touch on my recent participation in an accessibility panel and share insights on the importance of confidence in mobility, particularly within the blind community.  To be clear, though, the person afraid of the subway is fully sighted. Tyler Malek is the Chef and co-owner of one of Portland's now most iconic brands and restaurants, Salt & Straw.  Now with locations cornering the continental US, Tyler and his cousin Kim have made some serious noise in the ice cream world.   In this episode, Tyler talks about the longshot pitch to Disneyland to be their official ice cream vendor, and how quickly the folks at Disney decided they wanted Portland's Salt & Straw vibe over some of the big, more well-known ice cream brands, like Ben & Jerry's.   Tyler talks about the process of building the store and all that was involved with that with the input from Disney.   Also, Tyler talks about the business of building and using the Salt & Straw brand to its advantage, and what that has meant for growth.   We cover sampling, flavors, staffing, as well as some of the places Tyler loves to go in Portland right now.   This is our third interview with Tyler and that's because he's one of the good guys who has represented the Portland psyche so well.   Right at the Fork is supported by: Zupan's Markets: www.Zupans.com RingSide Steakhouse: www.RingSideSteakhouse.com Portland Food Adventures: www.PortlandFoodAdventures.com

Trendy food and beverage categories often elicit a gold rush. The nascent market for ready-to-drink cocktails, in which new brands are launched seemingly every day, has sparked the latest one. Cy Cain, the co-founder and CEO of Portland, Oregon-based Straightaway Cocktails, praises growing interest and demand for bottled and canned cocktails, but he believes that “there will always be a flight to quality.” Indeed, the brand's prioritization of premium ingredients and blending methods continues to pay off.  Launched in 2018, Straightaway produces a range of RTD cocktails crafted to replicate bar quality libations. The company also markets ACCOMPANi, Straightaway's sister brand of liqueurs, amari and vermouth. The award-winning products are available in 48 states through its e-commerce platform, Whole Foods stores and select locations of regional chains New Seasons and Market of Choice. In this episode, Cain spoke about how years of preparation prior to launching Straightaway gave the brand a strong foundation on which to build, why passion and opportunity equally drive the business forward and how he assesses a broader opportunity to reach consumers in other beverage alcohol categories. Show notes: 0:43: Interview: Cy Cain, Co-Founder & CEO, Straightaway Cocktails - Taste Radio editor Ray Latif spoke with Cain about Straightaway's hometown of Portland, Oregon, how “honoring the craft” and collaboration is driving the city's CPG scene, and the brand's partnership with Alaska Airlines. Cain also discussed how his background in the coffee industry impacted and informed his decision to launch a cocktail company, Straightaway's roots as an underground brand, how early learnings influenced its development and why “balance is everything” is key to its formulation strategy. He also explained how an analysis of consumer behavior and growing demand for high-quality cocktails led to his belief that standardization of batched cocktails would be a viable, and potentially thriving, business. The conversation further touches on growth drivers for the RTD cocktail category and why he sees it challenging beer and wine in the coming years, why strategic companies entering the space is a good thing and the reason he describes Straightaway as both a “first-wave” and “third-wave” brand. Chances are you've heard of Salt & Straw and if you're one of the lucky ones, you've enjoyed firsthand some of their insanely delicious ice cream, but this Portland born-and-bred company wasn't always the ice cream powerhouse it is today.    In 2011 cousins Kim & Tyler Malek set out to create an ice cream gathering place unlike anywhere else. Kim was the brains behind the concept, bringing years of experience from her career at Starbucks, and Tyler utilized his skills honed in culinary school to develop 30 different flavor recipes in just 7 days (all made with ice cream makers purchased secondhand). They took two tubs of ice cream, chocolate gooey brownie and sea salt with caramel ribbons, served it from a garden trough to their first time customers on Alberta Street, and the rest is history.    From challenges they faced early on to wins they've enjoyed as seasoned business owners, Kim & Tyler discuss it all on this episode of That Was Delicious.    Find a Salt & Straw location near you Follow Salt & Straw on Instagram Follow Female Foodie on Instagram

Paul Voge, the co-founder and CEO of artisanal sparkling water brand Aura Bora, wasn't too worried about his first large scale production run.  Aura Bora, which markets zero-calorie sparkling waters infused with herbs and botanicals, was born out of Voge's belief that an opportunity existed for an artisanal option within the carbonated water category. If, however, the brand failed to get off the ground, Voge, a prolific sparkling water consumer himself, was comfortable with the idea of having a personal stash of 35,000 cans to drink over the next few decades.  Thankfully, Aura Bora has resonated among category consumers, and over the past two years the Colorado-based company has expanded beyond its original focus on the natural channel and ecommerce and into conventional retail stores. Its drinks are now available at 3,000 locations, including nationally at Sprouts, and are also sold at 7-Eleven and Raley's along with Harris Teeter and United Supermarket, chains operated by Kroger and Albertsons, respectively. In an interview featured in this episode, Voge, who co-founded Aura Bora with his wife Maddie,  explained how he attempted to differentiate the brand from other sparkling water brands in name, package design and formulation, why he was inspired by artisanal food brands, the clever way he landed a meeting with a Whole Foods buyer; and how his pricing strategy was ahead of the curve for premium sparkling water. He also discussed his tension-filled, yet ultimately successful, experience on “Shark Tank,” why investors were at ease with an evolution of Aura Bora's retail strategy, why acquiring sales data has been critical to the brand's development and how he's attracted industry veterans for key roles.  Show notes: 0:46: Paul Voge, Co-Founder/CEO, Aura Bora – Voge and Taste Radio editor Ray Latif riffed on the entrepreneur's cap collection and experience at Expo West 2022, hand-canning Aura Bora's first products and the impact of launching the brand a couple months before the onset of the pandemic in the U.S. He also spoke about what attracted retail buyers to the brand, what he and Maddie wanted to convey in the label and package design, the thoughtful approach to naming the brand and how functional beverages factored into Aura Bora's pricing strategy. Later, Voge explained why Aura Bora is attempting to “own” a subset of sparkling water, how he indirectly met Whole Foods buyer, utilizing data and information from online sales to support innovation, R&D and marketing and his wild ride on “Shark Tank.” Voge also discussed why buying SPINS data has been a valuable investment, why the hire of a sales director made him realize that “he was driving without glasses,” and why, despite the many uncertainties of running a beverage company, it's important to have a plan.  Brands in this episode: Aura Bora, Sanzo, LaCroix, Polar Seltzer, Poland Spring, Jeni's, Van Leeuwen, Salt & Straw, Kettle Chips, RxBar, Waterloo, Topo Chico, JoJo's Creamery, Hoplark, Liquid Death, KIND Snacks, Pipcorn, Genius Juice, Harmless Harvest, Voss, Super Coffee, GT's Kombucha

Kim Malek built a successful ice cream business around one central idea: community. As the CEO and co-founder of Salt & Straw, Kim disrupted the idea of a typical ice cream shop by building an inviting, accepting environment that showcases local artisans and unique flavors. Kim's career started at Starbucks, where she worked in marketing when the iconic coffee brand only had about 30 stores nationwide. With previous marketing experience at companies like Yahoo!, Adidas, and (RED), she learned a lot about what it takes to build a global brand. "I always like to say I learned enough to be dangerous about a bunch of different things —  operations, real estate, branding, but most importantly… building a company based on people and how you treat people," Kim says on this episode of The Empowered Challenger. During her years in corporate America, Kim kept her ice cream shop vision on the back burner. After a decade of toying around with the idea, she moved to Portland, Oregon, and was struck by the strong sense of community in the entrepreneurial city. She knew it was "the perfect vehicle" to bring her ice cream store idea to life. She partnered with her cousin, Tyler, to figure out a unique ice cream making process. They shopped around town and found standout local ingredients —  chocolate, salt from a local saltmaker, and cheese from local farms. They realized they could foster a true sense of community by focusing on "farm-to-cone" ingredients, highlighting the artisans who made them. One of Kim's favorite pieces of advice is to not take advice. She welcomes stories about the experiences of fellow business owners and entrepreneurs but, unless you're in her exact shoes, she doesn't want to be told what to do. If Kim had followed everyone's advice when she was starting her business, she'd never be where she's at today. Kim started by opening a single store in Portland's Alberta Arts District. Now, there are 25 more throughout the U.S., plus a successful ecommerce business.  Featured Challenger

Our guest today is Carrie Bobb, the founder and CEO of Carrie Bobb & Co., and the CEO of hellojenny. In this episode, we cover everything from working for one of the largest commercial real estate companies to becoming a serial entrepreneur. We talk about how innovation, branding, and social media can take our game to the next level, how companies with a purpose can be heroes, and how Carrie's Law is changing the corporate landscape. Learn more about Carrie and her story at: www.growingcareersandcompanies.com.   “Creating good content is a muscle. The more you create, the more you think of to create.”   02:55 Carrie built a career as a retail broker. Over the years, she learned about the influence that social media has on people's lives, so she started a digital media company for retail properties called hellojenny.    Carrie talks about the importance of personal branding. People connect with people on social media, so it is crucial to add value to your personal handle even more than to your company's handle.   “I realized that businesses can be heroes too.”   12:42 At the peak of her career, Carrie had been working at a fortune 200 commercial real estate firm for 15 years.  While attending a prominent industry event in 2018, Carrie was drugged and raped by an executive from her firm, throwing her life and career into turmoil.   Carrie wanted to pursue a lawsuit, but she found a blanket arbitration clause in her contract, which meant that she had to waive her right to pursue justice in court.   But Carrie didn't give up - she went through mediation, and negotiated her way out of her confidentiality agreement. In the summer of 2019, Carrie lobbied Congress about the issue and in the end, Carrie's Law was introduced. This legislation carves out sexual assault and rape from arbitration language in employment contracts.   Prominent companies of all sizes & industries  have supported this initiative, which has the potential to impact the 60 million Americans are subject to these types of arbitration clauses. You can endorse the bill, and get more information & resources to share at https://thecarriebobbfoundation.org/.   “When we all team up and work together, we can accomplish a whole lot more. “   26:00 Carrie explains how the female consumer market is currently growing at a fast rate. We're expected to see the largest transference of wealth to women in history over the next 10 years.   Female purchasing power is huge. Knowing your consumer and customer and how they spend is very powerful.   The Final 3 Questions   34:50   What is the lesson that has taken you the longest to learn?   Carrie spent a long time second-guessing herself and being afraid of failure. Over the years, she learned to trust her own instinct and go for her dreams without hesitation.      What are the 2 principles from the Growing Careers & Companies Framework that resonate the most with you?   Purpose and impact. Carrie is driven to make a difference in the world and influence people.     What do you hope others take away from your story?   Don't wait too long to be brave. When Tyler Malek, alongside his cousin Kim, began making and selling ice cream from a cart in 2011, he began charting the course for changing the way people experience and perceive ice cream forever. And he was recognized for it. Tyler was selected as one of Forbes 30 Under 30 for “Changing The Way America Eats”. With out-of-the-box ingredients like turkey, sweet potatoes, bleu cheese, garam masala, sea urchin and kale, Salt + Straw is the foodie favorite of ice creams. It’s all about what the family-run, small batch ice cream company calls “tasteprovoking” flavors. For Tyler, ice cream is an experience, a freeing experience, and he goes all in. This deeply passionate inventor is most connected to collaboration. It’s collaboration that fuels his fire. Each individual, artisanal creation is the physical embodiment of just that. You can taste the love and integrity in every bite. Does he consider himself creative? That answer is, notably, no. He considers himself more of a mix master, using his skill for math to balance, tweak, and elevate flavors. On this podcast we talk about Tyler’s unique perspective on ice cream, all the details for how Salt + Straw’s complex flavors come together, his initial career goals and what got him in the kitchen, how he miraculously produced ice cream from scrap product, the stories his flavors tell, the brand’s expansion and famous investors, career highs and lows, exciting new collabs, and more, including items you can discover + shop here: 1. Take the Long View

Why would a man pursuing a career in law and politics suddenly give it all up and gamble his future on a restaurant? Just ask St. Louis native Danny Meyer, who turned that one restaurant into a hospitality empire and eventually founded Shake Shack, the beloved burger spot with over 250 locations around the world. Aside from the countless awards Danny Meyer has earned as a restaurateur, he also penned Setting the Table, which distills his philosophy on hospitality and leadership. But in his earlier years, he wouldn’t have predicted this future for himself.  After the success of his first restaurant, he wanted to prove to himself that it wasn’t a fluke. That challenge brought him face to face with a harsh reality: he was a horrible manager. If he was going to make both restaurants work, he had to sharpen his leadership skills and instill the values of enlightened hospitality into his team so they could carry on in his absence. This self-improvement mission would be the spark for Danny’s restaurant empire: Gramercy Tavern, Blue Smoke and Jazz Standard, Shake Shack, The Modern, and many more. Today, with his philosophy of enlightened hospitality and belief in the importance of building community wealth, Danny Meyer continually prods the restaurant industry to level up and create better career opportunities for its workers, while challenging himself to share his insights with new industries through his investment fund. Key Topics: Introducing Danny. [00:42] Why Danny wrote Setting The Table in secret. [01:51] Missing out on genuine interactions in a highly transactional society [03:08] Danny’s philosophy on hospitality as an organizational principle. [04:12] The turning point of Danny’s professional life. [06:53] Developing a unique leadership style by managing volunteers. [10:04] Having a growth mentality towards employees. [11:42] Early lessons from Rich Melman. [12:42] Finding and hiring for the 51%. [14:16] Why Danny was so hesitant about opening a second restaurant. [16:45] Being forced to become a better manager. [18:14] Managing difficult family dynamics. [19:41] Why you shouldn’t spend too much money on your first venture. [20:31]  Learning what it means to be responsible to your investors. [22:28] Early inspiration for Shake Shack. [25:25] Restoring Madison Square Park. [25:51] Testing Danny’s theory of enlightened hospitality with a hot dog cart. [27:17] Building community wealth. [30:06] The role Shake Shack plays in the Madison Square Park community. [30:51] The downside of the tipping system. [32:45] Taking the restaurant industry to the next level. There’s nothing worse than feeling like you’ve got a great idea, sitting on it, and then seeing someone else doing it—successfully. That’s exactly what happened to Kim Malek back in 2010. The marketing executive had been going back and forth on her idea of creating an artisan ice cream shop for years. Then boom! She opened the New York Times and read about someone else doing it. “I was literally enraged!,” she recalls. But she turned that anger into action. She cashed in her 401k to open a Salt & Straw ice cream shop in Portland, Oregon with her chef cousin, Tyler. With Tyler creating never-before-heard-of flavors like Honey Lavender and Goat Cheese Marionberry Habanero, the shop was an overnight success, ultimately spawning 18 more up and down the west coast. Kim shares with Linda the lessons she’s learned along the road and another pretty amazing thing that was going on at the same time she was growing her company: she married and adopted three fosters kids, ages 2, 4 and 5. Talk about a Super Woman.
