Everybody should have access to outdoor recreation, regardless of their abilities. That's the mission of Adventures Without Limits, an Oregon nonprofit that takes people outside and finds creative solutions to whatever barriers they may be facing. On this week's episode of Peak Northwest, we talk to Anna Eick, program coordinator for the organization. The group has a wide variety of outings through the year, including hiking, snowshoeing, cross-country skiing, kayaking and whitewater rafting, Eick said. The trips are open not only to people of all abilities, but also all ages, genders, ethnicities and socioeconomic statuses. Here are some highlights from this week's show: Adventures Without Limits has been a part of the community for nearly 30 years. Some of the most popular excursions they offer. How does the organization adapt to so many different needs? How does somebody know if Adventures Without Limits is a good fit? Our Happy Half Hour guest today is the local chapter CEO of probably one of the most beloved and recognizable charities in the world: The Make-A-Wish Foundation, San Diego chapter. We invited Suzanne Husby, who garnered her title in 2021, to talk all things Make-a-Wish at Matsu in Oceanside. Husby has been with the foundation for 17 years, moving up the ranks from intern to wish coordinator, a few more big titles, and finally ending up as chapter CEO most recently. Her specialty was overseeing wish-granting operations, volunteer management, and medical outreach, and she was key in granting a whopping more than 3,200 wishes for local children. Recently, the Foundation decided to partner with executive chef/owner William Eick of Matsu to host their upcoming gala and collaborate on special appearances to benefit Make-A-Wish. When gala chair Dai Logan first approached chef Eick, it was instant kismet. Logan had been a superfan of the chef while chef Eick has always had big heart for the organization. The pair formed a new friendship and partnership shortly after. In the episode, Husby chats wish fulfillment and details several wish-making missions that have taken place in San Diego during her decades-long tenure at the organization. As we chat, Logan opens up about her Happy Half Hour fandom as well as her recent trip to Japan, during which she existed solely on chef Eick's recommendations, and shares a special bottle of sake with us that she brought back to the states. Finally, we get the scoop on the foundation's Make-a-Wish gala which takes place on October 12 at the Park Hyatt Aviara with chef Eick. Closing out the show, Troy discovers radishes at Marisi; Jackie finally finds NY-style pizza that she likes; 24 Suns pop-up is teaming up with IRS Cocktails to open Swan & Fox in Oceanside; the Puesto group is opening a CDMX-style restaurant at The Headquarters; and The Del is opening beer spot The Laundry Pub as part of its new sprawling reno.

There are good restaurants, and there are great restaurants. Then there are restaurants that challenge the entire notion of what a dining experience can be - Matsu, in Oceanside, CA, is this type of restaurant. It is not just a fantastic place for Japanese cuisine - it is as close as one can get to the soul of Japanese culture outside of living there. It is a love letter - an adoring obsession even - to the craft, ingredients, and very ethos of what Japanese fine dining can be, and it is all thanks to Chef William Eick. Our interview with Patti Eick Hutzel equates to exactly why we started this podcast - to learn about people that you sort of know but not really. Patti and I attended the same college, had a lot of the same friends, ran in the same circles but didn't really know one another. It was only through these many years on social media together we started to know each other. This was such a fascinating interview - learning about Patti being an interior designer, work flow designer, photographer, and tv show extra!

I must stop talking about the cabbage. I won't shut up about it. So I figured if I brought chef William Eick to talk me through it, it will resolve my lingering emotional fixation on what is one of the best dishes I've eaten in a very long time. Eick opened Matsu about six months ago. It's a minimalist ode to modern Japanese cuisine. He's been a talent in San Diego for a long time, and this is the big idea, what he's been working for. In a spare room in Oceanside, where the “biggest” design element seems to be a single white orchid on a bar top, he's serving 8- and 10-course tasting menus. And the cabbage is the shocker. “I've been obsessed with Japanese culture since I was five years old,” says Eick. “Everything about it. A modern Japanese restaurant with a tasting menu, there are probably only a handful in the country that I can think of.” For this episode, Eick walks us through some of the magic tricks that make Matsu stand out. For instance, he creates various dashis (Japanese broth, a cornerstone of the cuisine) like the one in his crab dish that is made with carrots and A5 Wagyu beef trimmings. We talk about how Japanese cooks and chefs have been masters at discovering new levels of flavor (the concept of “umami” is Japanese). And William gives us a primer on koji, the incredible Japanese marinade that makes his duck breast vastly more interesting. Gives it a good funk. In “Hot Plates,” we talk about the San Clemente icon Nick's going into the former International Smoke location at One Paseo. The owners of Madison are opening an all-day brunch spot in Normal Heights called Madi. Wolfie's Carousel Bar (if you're not familiar, you need to check this out) has hired a new chef, formerly of Coronado's excellent Little Frenchie. And renown Japanese fried chicken chain, Tenkatori, is opening in San Diego. For “Two People, Fifty Bucks,” I rave about the chilaquiles at Cocina 35, and whether or not it's OK to call them breakfast nachos (a term told to me by a great Mexican chef, but which some food purists get very, very angry about and defend chilaquiles' honor). David can think of nothing but baseball (it's his cabbage), and points people to Mexican food classic Lolita's by Petco Park for game days (trivia: Lolita's is family of the legendary Roberto's). And William makes a regrettable decision to tell the world about his favorite ramen spot, which was a secret until right about now. Go, Padres. See ya next week.

Given the aging condition and economic importance of much of the nation's navigation infrastructure, asset managers need accurate and real-time information on the conditions of structures operating well beyond their expected design lives. However, visual inspections of structures like locks and dams are often difficult and expensive. ERDC is filling this void with a broad range of structural health monitoring capabilities. It has developed sensors that serve as virtual eyes and ears, providing constant real-time information on structural conditions. Combined with ERDC's predictive modeling tools – and enhanced by data analytics and machine learning – this capability helps revolutionize and accelerate decision making and better prioritize maintenance funds. On the latest episode of the Power of ERDC podcast, we discuss ERDC's Structural Health Monitoring program with Dr. Brian Eick and Dr. Matt Smith. Eick is a research civil engineer at ERDC's Construction Engineering Research Laboratory and the technical lead and program manager for ERDC's Structural Health Monitoring program. Smith is a technical director at ERDC's Geotechnical and Structures Laboratory and until recently oversaw ERDC's Structural Health Monitoring efforts. We discuss the broad scope of ways ERDC is working to tackle this problem (13:25), new vision-based monitoring approaches being applied by ERDC (11:22), what makes ERDC a unique place for structural health monitoring R&D (21:46), ways each of ERDC's seven laboratories are involved in this effort and the power of that cross-disciplinary collaboration (24:21), and other current and potential future uses of ERDC's structural health monitoring tools (31:40). Today I'm talking to Melissa Eick. Melissa is the Communications Director for a non-profit organization called the Beautiful Dream Society. BDS works to raise awareness, take legal action where appropriate, and offer rehabilitation services to rescued victims of human trafficking. Personally, I knew virtually nothing about human trafficking until a few years ago. I was shocked by what a huge problem it is, even in my own home state. I'm in the Bible Belt for goodness sake! In this interview Melissa does an excellent job of explaining human trafficking in all its forms, so if you are as clueless about this topic as I was, prepare to have your eyes, and your heart, opened.
