Born in Sweden in 1985, Oscar Brekell developed an interest in Japanese tea during high school, something that grew into a passion that later led him to relocate to Japan. In 2010, he studied at Gifu University, and in 2013 he came back to Japan for a job at a Japanese company.He became a certified Japanese Tea Instructor in 2014 and completed an internship at The Tea Research Center in Shizuoka, and has also been working for Japan Tea Export Council. In 2018 he set up his own business and is now involved in tea education projects overseas and arranges tea events and seminars in Japan. He is the first non-Japanese to receive a certificate for making hand-made Sencha, and in 2016 he was awarded the CHAllenge prize by the World Green Tea Association. Lately, he also appears frequently on Japanese radio and television and is getting increasingly known for encouraging the Japanese to rediscover the joy of drinking green tea while also making it more accessible to a non-Japanese audience as well. With a focus on single-estate high-quality Japanese leaf tea, Oscar Brekell started his own tea brand, SENCHAISM, in 2018. Te är en naturlig del i Japan, säger Yuko Ono. Det dricks både kallt och varmt. Det kan vara en snabb dryck efter träning, en törstsläckaren på tågstationen, en dryck som barnen tar med sig på utflykten eller så brygger man hemma i kanna. I Japan finns te överallt och i alla stunder,.Allt te härstammar från samma buske: Camelia sinensis. De olika japanska tesorterna beror på när teet skördats, vilken del som används och hur det sen tagits om hand. Ibland använder man bara bladen, ibland endast kvistarna och ibland en blandning. En del teer har skuggats några dagar innan skörd, de anses vara extra fina.Man delar också in teerna i vårskörd och höstskörd, samt rostade teer. Sencha hör till vårskörden, ett te som dricks både till vardags och i finare sammanhang. Det första skördade vårteet bryggs koncentrerat och smakar som buljong. Höstteerna kallas bancha, ofta består de av både kvistar och större blad och är mildare i smaken. Rostat te kalla hojicha.Cha är det japanska ordet för te.Ofta brygger man samma te flera gånger. Ibland äter man till och med upp tebladen. Man brygger två till tre gånger, säger Yuko. Det gör man för att få fram olika karaktärer på teet.I dagens program brygger hon ett höst-te och vårens första sencha. Hon visar också upp sina fina tekannor.

Green tea mainly comes from China and Japan. Although Japan is more commonly associated with green tea, China is actually the bigger producer. Its most popular green tea is Longjing or Dragon Well, and it comes from the Longjin No. 43 cultivar. Meanwhile, in Japan, the most common green tea is Sencha, and the cultivar mainly responsible for producing it is the Yabukita. It comprises about 85 percent of the country's entire tea production. Farmers favor it for large-scale production because of its high yield, frost resistance, and ability to thrive in various locations.
