Le Beau Bizarre Critique #71 – Une exploration sensible et chorale de la critique Le Beau Bizarre est un espace vivant et ouvert, où les voix se croisent et s'entrelacent pour réinventer les manières de voir, d'écouter et de parler des créations contemporaines. Cet épisode se veut un appel à prolonger les résonances, transformant la critique en un lieu de partage et de discussions passionnées. À 3 min : La séquence archive critique À partir d'archives, nous explorons les multiples visages de la critique : est-elle un exercice de subjectivité assumée ? Un art à part entière ? Ou bien un espace poreux où se rencontrent analyse, création et engagement ? Au programme, deux œuvres marquantes de l'automne : À 20 min : In Absentia de François Chaignaud et Geoffroy Jourdain Une œuvre où danse et chant s'entrelacent dans une polyphonie organique, immergeant le spectateur dans un souffle collectif, à la frontière entre incarnation et absence. À 41 min : Skinless de Théo Mercier Un voyage radical au cœur d'un paysage composé de rebuts et de métamorphoses. Ici, les corps, la matière et le désir interrogent nos excès, nos limites, et l'humanité qui nous reste. Et à 51 min : Clin d'œil à Mathis Grosos À travers ces deux créations, nous questionnons les tensions entre utopie et désenchantement, la fusion des formes et les ruptures intimes. Une tentative, peut-être impossible, d'épuiser les possibles de la discussion critique. Terminer l'année en beauté : Les coups de cœur des critiques À 1h07 : Le coup de cœur de Callysta Croizer Avec Kill Me, Marina Otero clôt sa trilogie (Fuck Me, Love Me) dans une autofiction audacieuse et débridée. Entourée de quatre danseuses aux troubles psychiques et d'un double de Nijinsky, elle expose les fragilités et les folies de ses interprètes. Une performance radicalement libératrice, où les corps deviennent porteurs d'une vérité poignante et intime. À 1h13 : Le coup de cœur de Belinda Mathieu Dans Bless This Mess, la chorégraphe Katerina Andreou nous plonge dans une rave techno effrénée. Sur un rythme infernal, les gestes et les musiques évoquent les univers du gabber et de la hardtek. Les corps des quatre interprètes tiennent bon, alimentés par l'énergie des secousses, dans un vibrant éloge de la résistance face à un monde en perpétuel ébranlement. À 1h17 : Le coup de cœur de Léa Poiré Les sœurs Labrosse, fondatrices du magazine Censored, nous offrent un abécédaire féministe de l'autoédition. Avec une sincérité désarmante, elles partagent leurs apprentissages et leurs outils, dévoilant les arcanes d'un savoir-faire souvent inaccessible. Un guide pensé et écrit avec un soin rare, qui incarne l'essence même de l'engagement éditorial. Théo Mercier est tout autant sculpteur que metteur en scène. Tour à tour explorateur, collectionneur, curateur et artiste, il mène une réflexion située au carrefour de l'anthropologie, de la géopolitique, du tourisme et du paysage. Au cours de cette rencontre, il revient sur son parcours mais également sur son dernier spectacle Skinless, actuellement présenté dans le cadre du Festival d'Automne à Paris, au théâtre de la Villette. Bâti sur un paysage de détritus, Skinless est un Eden désenchanté. Dans ce panorama de la fin du monde un couple hors norme s'aime et se déchire sous la surveillance d'un tragique observateur. Skinless met en scène un couple à trois têtes qui habiterait les ruines du capitalisme. Échange avec Emmanuelle Huynh, artiste et cheffe d'atelier aux Beaux-Arts de Paris, et Audrey Illouz, responsable de la programmation culturelle. Théo Mercier est représenté par la galerie mor charpentier (Paris, Bogota) et est artiste associé au Théâtre National de Bretagne (Rennes). Revendiquant une liberté formelle, il s'emploie à déconstruire les mécanismes de l'histoire, des objets et des représentations dans laquelle il remonte d'harmonieuses contradictions. Pensionnaire de la Villa Médicis en 2013 et nominé pour le prix Marcel-Duchamp en 2014, Théo Mercier a également remporté le Lion d'Argent de la Biennale de Venise de la danse en 2019 avec Steven Michel, le Prix Art of Change 21 ainsi que le Prix du Jury pour le Pavillon Français de la Quadriennale de Prague en 2023 avec Céline Peychet. Il a bénéficié d'importantes expositions personnelles à la Villa Médicis (Rome), la Conciergerie de Paris, la Fondation Luma Westbau (Zurich), la Collection Lambert (Avignon), le Museo El Eco (Mexico), la Biennale de Cuba (La Havane), le Musée de la Chasse et de la Nature (Paris), le Musée d'art contemporain (Marseille), le Lieu Unique (Nantes) ou encore le Tri Postal (Lille). Son œuvre a également été présentée dans de nombreuses expositions collectives, notamment au Centre Pompidou (Paris, Shanghai), au Hamburger Banhof (Berlin), au Palacio Bellas Artes (Mexico) ou à Arts Jameel (Dubaï). Passant d'une pratique de « white cube » à celle de la « boite noire », Théo Mercier est aussi metteur en scène. Michael is joined by Sarah Boorer, Communications professional & CWA award-winning cook, to look at the world of baked goods, delicious treats and & easy recipes. This week Sarah looks at Teriyaki Salmon Noodles. Recipe courtesy recipetineats.com WHAT YOU NEED Salmon– Anywhere between 200 to 250g / 7 – 8oz salmon. Skinless is convenient, though if you can only get skin-on that's fine too as the cooked flesh comes off the skin easily. You can use fillets, or cutlets with the bones removed. Noodles – I've used dried ramen noodles because it's what I always have in stock in my pantry. While I actually prefer the flavour and texture of fresh noodles, I don't always have them. Other dried noodles (yellow, white, rice noodles) and fresh noodles will work as well, see recipe notes for quantities. Chinese broccoli (gai lan / kai lan)– Probably my most used Asian vegetable, for sheer convenience (easy to chop) and also because I like the “broccoli” like texture of the stems. Substitute with any leafy Asian greens like choy sum, bok choy, pak choy, or about 2 1/2 cups of other vegetables sliced into stir fry-suitable sizes (eg. carrots and zucchini sliced on the diagonal). Onion and garlic– Essential flavour base ingredients I use for virtually every stir fry. Especially garlic! TERIYAKI SAUCE While I've been very up front about how this recipe is not a traditional Japanese dish (there is no such thing as teriyaki noodles in Japan!), the sauce ingredients are authentic. Soy sauce– All-purpose Japanese soy sauce. Please don't use dark soy sauce, the flavour is far too intense and won't work for this recipe! Sweet soy sauce is also unsuitable. Cooking sake and mirin – Two types of rice wines that are essential to Japanese cooking. No self-respecting Japanese restaurant or cook would ever call something “teriyaki” without using these! Alcohol content note: The alcohol in cooking wine mostly evaporates when cooked, and the amount of wine used is small to begin with. Sugar – Typically used in Teriyaki Sauce to make it a bit glossy and syrupy so it coats chicken nicely. In this recipe, it also helps the noodles caramelise, which adds flavour. METHOD Teriyaki Sauce– Mix the ingredients in a bowl. Coat salmon in 1 tablespoon of the Teriyaki Sauce. No need to marinate – we're cutting the salmon into thin-ish strips, which affords a good amount of salmon surface area for the Teriyaki Sauce to cover. The strips mean it also speeds up the cooking time. Win, win! Cook salmonfor just 1 1/2 minutes on each side until golden and just cooked through. The thin strips cook quickly! Once cooked, remove to a plate and set aside. Sauté aromatics– Give the pan a quick wipe (else we'll end up with burnt teriyaki sauce throughout our noodles). Next we give the onion and garlic a head start before adding the Chinese broccoli stems. We won't add the leafy part of the Chinese broccoli until towards the end as they take barely a minute to wilt. HALF the sauce – Add the noodles then just HALF the sauce. This allows the noodles to absorb the sauce faster so we can get nicer caramelisation on the noodles as they cook. If you add all the sauce at the same time, it takes almost double the time for the sauce to reduce. Toss the noodles until the sauce is absorbed and you no longer see any traces of it in the pan. Add remaining sauce then toss to disperse. Leave 30 seconds– Once the sauce is absorbed again, spread the noodles out and leave them undisturbed for 30 seconds. This encourages caramelisation of the noodles, compared to constantly tossing. Repeat this 3 to 4 times until you see the noodles get some nice colour on them. Extra oil + leaves – Add a bit of extra oil (again, for caramelisation encouragement!) then toss in the leafy part of the Chinese broccoli. Toss for another 1 minute or until the leaves wilt. Return salmon to the pan – Just tumble them on to the noodles along with any juices pooled on the plate. Serve! Break the salmon into large chunks, and briefly toss through the noodles.
