Literal Translations of Chinese Dish Names 直译菜名很多中国菜如果直译(literal translation),也就是逐字翻译(translate word by word),就会变得吓人又好笑。It can be totally different. 一起来看看这些有趣的例子吧!(1)夫妻肺片→ Husband and Wife's Lung Slices其实这就是steamed beef and ox offal (牛肉和牛杂) in chili sauce。跟“肺(lungs)”没什么关系。Offal:动物内脏Chili sauce:辣椒油它既说出了这道菜的做法“steamed(蒸)”,又说出了调料“chili sauce”和ingredients(食材),这确实和实际的菜品更贴切了。(2)皮蛋→ Century Egg“Century Egg”听起来有些令人疑惑,其实它就是经过长时间marinated(腌制的)egg。It's called century because it's preserved (被保存) for a long time. Century(世纪)这个词确实是such a funny way to exaggerate (夸张) the time。(3)狮子头→ Lion's Head它不是真狮子的头,而是大颗红烧猪肉丸(braised pork ball),因为它又大又圆,就像个狮子头一样,所以被叫做“狮子头”。它也可以清蒸(steam)或炖煮(stew)。(4)过桥米线→ Cross Bridge Rice Noodles这就有人会问了:Do you need to actually cross a bridge to eat it (过桥才能吃吗)?其实这道菜的背后有一个动人、浪漫(romantic)的故事:a wife used to cross a bridge to bring hot noodles to her husband, which is a long haul (路途遥远),当这位妻子把米线送到的时候发现已经凉了。于是,这位妻子就开始熬鸡汤(make chicken broth),在熬鸡汤的时候,她发现把薄薄的肉片和米线放在里面居然可以一直保温(keep the food warm),因为上面有一层厚厚的油。现在过桥米线里面也会把各样的食材放进滚烫的汤里煮,the boiling soup is a must (沸腾的鸡汤是灵魂所在)!(5)佛跳墙→ Buddha Jumping Over the Wall传说(legend says)这道菜太香了,连佛都会跳墙来品尝(even Buddha jumps over a wall to eat it)!其实它里面是汇集了鲍鱼(abalone)、海参(sea cucumber)、干贝、冬笋、火腿等十几种食材(ingredients),慢炖而成,鲜美无比。It's kind of hard to say all the ingredients.(6)蚂蚁上树→ Ants Climbing a Tree主播Maelle表示:听到菜名就已经觉得痒痒的(itchy)了。It likes someone is tickling you (挠你).“蚂蚁上树”中的“蚂蚁”其实是“绞碎的猪肉馅(minced pork)”,“树”是“粉丝(vermicelli)”。It looks like little ants climbing on a tree. 很多菜的名字其实都是根据它的样子(based on the visual)命名的。It leaves a better impression (更加印象深刻)!(7)狗不理包子→ Dog Won't Care about This Bun一家老板的绰号(nick name)叫“狗子”,他忙到没空搭理人(so busy he didn't even care to talk to customers),店里卖得包子因此而得名。但是“狗不理包子”这个名字会让我们觉得it's not good that even the dog won't care about。这些“吓跑老外”的菜名,引起了广泛的讨论,中国的国家语言文字工作委员会(国家语委)出台了《公共服务领域英文译写规范》,就是为了让菜单翻译更准确、更友好,避免吓跑外国顾客。02. Recipe Pickled mustard seeds 1 tablespoon yellow mustard seeds 2 tablespoons cider vinegar Place the seeds in a small bowl and cover with vinegar. Cover and allow to sit at room temperature for 2 days before using4 x 175g boneless shoulder chops 1 tablespoon oil ½ teaspoon smoked seasalt ( or regular seasalt) 2 teaspoons maple syrup 1 tablespoon cider vinegar 15g butter 1 shallot, finely chopped 200ml chicken stock 2 teaspoons pickled mustard seeds 1 teaspoon Dijon mustard 1 tablespoon chopped chivesMix the oil with the salt, maple syrup and vinegar and rub all over the chops. Cover and chill overnight. Heat a large pan until smoking hot and add the chops. Cook for 2 minutes each side then lower the heat and cook through gently. Remove from pan and set aside, covered in foil. Add the butter and shallots to the pan and cook until golden. Add the stock and reduce by half. Whisk in the mustard and then add the pickled mustard seeds. Add resting juices from pork and the chives and warm through. Check the seasoning. Slice the pork and spoon over the sauce. Cider Cabbage 1 sweetheart cabbage 1 tablespoon oil Salt and pepper 20g butter 150ml dry local cider Cut the cabbage in quarters through the root. Heat the oil in a large pan until smoking hot. Add the cabbage wedges. Cook until golden brown on both sides and add the butter. Turn to coat in the butter. Season with salt and pepper and add the cider. Cover with a lid, lower the heat slightly and cook for about 8 minutes or until cooked through. Boil to reduce any excess liquid. Serve with the pork and some mash.

Chili pickled vegetables Cook time: 5 minutes Prep time: 10 minutes Serves: 12 Pickled vegetables can include: Carrots, fennel, baby beetroot, radish, red onions, cucumbers or red cabbage 1 tbsp fennel seeds 1 tbsp coriander seeds 2 fresh chili, sliced 2 bay leaves 1 tsp mustard seeds 300 ml cider vinegar 250 ml water 1/4 cup sugar 1/2 tsp salt Jar and lid Firstly prepare the vegetables for pickling. Clean all the vegetables and cut in 1/2 or 1/4 or finely slice. Trying to make all the vegetable pieces roughly the same size. To make your pickle mixture, start by toasting your seeds in a pan until fragrant. Place the rest of the pickling mixture ingredients into a pot, adding seeds once toasted and heat until boiling. Remove the pickling mixture from the heat and carefully pour the hot mixture over the top of the vegetables and seal with a lid. (If pickling cucumbers or finely sliced veg allow mixture to cool first) Roasted beetroot & cummin hummus Cook time: 45 minutes Prep time: 10 minutes Serves: 6-8 2 cups chickpeas, soaked overnight in water 2 whole beetroot 1 tbsp cooking oil 2 tbsp tahini 1 tsp baking powder 11 tsp cummin powder Sea salt Pre-heat the oven to 180*c Individually wrap the beetroot in tin-foil, drizzle over a little oil and sprinkle over a touch of salt before wrapping. Place into the oven and cook for 30 minutes before testing. Test by inserting a small knife to see if the beetroot is cooked. Once cooked allow to cool before removing skin. While the beetroot is cooking, place the soaked chickpeas into a large pot, cover with cold water and add a touch of salt and the baking powder. Bring to the boil and cook until tender. Once cooked drain. Place the beetroot into a food processor and biltz until smooth. Add the chickpeas and biltz until smooth. Add the tahini, curry powder and seasalt to finish. Yoghurt flatbreads w coriander butter Cook time: 2 minutes Prep time: 10 Serves: 6-8 Flat breads 350g bread flour 2 tsp baking powder 350g natural yoghurt 1 tsp salt Coriander butter 200 gm unsalted-butter 1 cup fresh coriander, finely chopped 1/2 tsp sea salt 4 cloves garlic, peeled and crushed For the flat breads Combine all the bread ingredients together in a bowl and mix with a spoon, then use your hands to pat and bring everything together. Dust a clean work surface with flour, tip out the dough. Knead for a minute or so just to pull everything together, before leaving while you make the coriander butter. For the butter, Add to the butter and mix in the rest of the ingredients. Re-dust a clean surface with flour, divide the dough into small balls. Flatten with your hands, then using a rolling pin roll roughly 3mm thick. Either place dough into a griddle pan on a high heat or onto a tray in a very hot oven. Cured and roasted salmon pate Cook time: 10 minutes Prep time: 20 minutes Serves: 6-8 1/4 side of salmon; de-boned with the skin on Salmon salt 100gm flaky seasalt 2 tbsp brown sugar Pate 200gm cream cheese 1/2 tbsp Dijon mustard 1 lemon 1 tbsp chopped fennel or dill 1 small red chili 3 tbsp sunflower oil Salt Serve with Lebanese flat breads Pickled cucumbers Start the night before by curing the side of salmon. Lay the salmon skin side down onto a rack and then place the rack into a tray to catch all the juices. Combine the salt and brown sugar and spread over the top of the salmon. It should be a nice thick layer. Cover with cling film and refrigerate overnight. Next morning, wash off any salt and pat dry. If you have a cold smoker, smoked for 4 hours at this point. Preheat your oven to 220*c. Lay the salmon skin side down onto a roasting tray and brush the top of the salmon with oil. Cook for 10 minutes, before checking. The salmon should be cooked just under. Remove from the grill and leave to rest. For the salmon pate Take the cooked salmon and put into a food processor with the cream cheese, Dijon mustard, lemon juice, chili, fennel and remaining oil. Blitz until smooth. Check seasoning. Serve with the flatbreads and pickled cucumbers. LISTEN ABOVESee omnystudio.com/listener for privacy information.

When your central PA town is too small to get the attention of Wegmans, or Giant, or Weis, it's time for a local hero: the independent grocer! Rural Pennsylvanians need to eat too, and we like variety just as much as city-dwellers. Luckily, just like with craft brewers, and small butchers, independent grocers can often deliver stuff that bigger supermarkets can't. Local stuff that's too small to work with the big guys, the delicious favorites that the big guys don't understand (pepper slaw? Pickled quail eggs? Ham salad!!), and fresh-as-this-morning local produce! I interviewed two local grocers: Russ Burkholder, of Burkholder's Country Market right here in Millheim, and Lindsay Hutchinson, who runs People's Provisions, in Elliotsburg. Burkholder's has made local a mission, and Russ has some great insights on how an independent stays afloat. Lindsay has a very special idea at People's Provisions, about fostering community with food in central Perry County. You'll want to visit both places -- and your local grocer -- when you're done listening.  I cooked with some provisions I got at Burkholders, mixed with vegetables from a friend's garden, and I'll tell you about that; lots of hot peppers and corn and cheese!  What else? RecipeHomemade mayonnaise 1 egg yolk 1 teaspoon Dijon mustard 1 tablespoon white wine or cider vinegar 200ml light vegetable oil or good local rapeseed oil Juice of 1 lemon ( keep the zest for the crab) Salt to taste Blend the egg yolk, mustard and vinegar together for a minute then slowly trickle in the oil,blending as you do. When fully incorporated add the lemon juice and check seasoning. This is more than you need for the crab but store in the fridge for up to a week.Crab salad 200g white crab meat 100ml of mayonnaise 2 tablespoons chopped fresh dill – keep a few fronds for on top Zest of lemon from above Salt and pepper to taste Pick through the crab in case there's any rogue shells. Mix in the remaining ingredients and check seasoning.Pickled radish 10 radishes, finely sliced 2 shallots, finely sliced 50ml cider or white wine vinegar 50ml water 2 teaspoons castor sugar ½ teaspoon salt Place the vinegar, water, sugar and salt in a pan and cook until sugar has dissolved. Mix the radishes and shallots in a bowl and add the pickle liquor. Chill for a few hours, giving the odd stir. What you don't use can be stored in the fridge in a clean jam jar. Savoury French toast 1 brioche loaf cut into rectangles ( make breadcrumbs from trimmings) 2 eggs 100ml milk 50g butter Whisk the eggs and milk together and season with salt and pepper. Dip the bread in ensuring its covered. Melt the butter in a pan ( you might want to do this in two batches and keep cooked warm in the oven). Fry the bread until golden all over.Spoon the crab mixture on top and garnish with the pickled radish and shallots. Add a few sprigs of dill.

Quick late-night taco bowl using leftovers was a winner — beans, meat, rice, and pantry odds-and-ends. Question from Brent How to get started with my freeze dryer Operation Independence The Rabbit Processing Class was a huge success. Students built their own gambrels, processed their rabbits, and got a crash course in rabbit as food. We even sold coffee — win-win. Also, the new HVAC is in at Holler Roast. A friend did the install as a trade, and I'll be returning the favor next year with something from my skillset. Main Topic of the Day: Multiple Ways to Prepare Squash Why This Matters Squash piles up fast — and it's easy to get sick of it. Most people fry it or make bread. There's a lot more you can do. Fresh & Fast (Use It Now) Sautéed with onions — our daily go-to. Grilled slices — pairs great with eggs. Grated raw on salad. Scrambled into omelets. Zoodles — spiralized and tossed with sauce or oil. Main Dishes Squash lasagna — layers of meat, sauce, cheese, and squash slices. Ratatouille — classic, often forgotten, but easy to batch. Stuffed squash boats — ground beef, bell pepper, topped with cheese. Preserved & Long-Term Flour-dusted slices (chicken flour) — freeze for winter sauté. Pickled squash relish — excellent with charcuterie, recipe from Dawn Gorham. Ratatouille — freezes well in portions. Squash lasagna — prep now, freeze, and bake later. Stuffed squash boats — freeze unbaked or parbaked for easy winter meals. Zucchini/squash bread — not our thing anymore, but worth mentioning. Main Topic of the Day: Ways to Beat The Heat on The Homestead Why This Matters Heat waves can wreck your garden, stress your animals, and push you to your limit. If you ignore the signs, you pay for it later — in lost yield, poor health, or burnout. It's time to adapt. Plant Care During Heat Plants struggle to uptake calcium through roots when soil temps go above ~85°F — a CalMag foliar spray helps keep them from curling up and dying.   Shade cloth is your friend. Your garden doesn't need full sun all day — especially in the South. I built a PVC shade structure that changed the game.   Water early, mulch deep. Timing is key.   Know when to leave stressed plants alone — sometimes less is more.   Livestock Management Pay attention to microclimates. Move animals to shaded, breezy areas if you have them. If not, start figuring out how to create them.   Always be checking water — manually or with sensors. Don't assume it's fine.   Look for signs of heat stress: panting, lethargy, standing in water, reduced feed intake.   Think long-term: is your pasture layout working in July?   Homesteader Self-Care Hydration is more than water — think salt, trace minerals, cucumbers, bone broth.   Plan your day around the sun. Hard stuff in the morning and evening.   Work in bursts — short and intense is often better than long and slow.   Know the signs of heat exhaustion in yourself and others. Don't tough it out.   Systems & Tools Yolink sensors saved my butt this week. Don't rely on memory for water or power checks.   If you have a natural feature like a cold creek — use it. My 55-degree creek is the MVP right now.   Heat is the best teacher. Pay attention and plan infrastructure improvements while you're sweating — you'll actually solve the problem. The online price of a 2x4x8 stud at Home Depot is still $3.85. Aldi was last.  We found everything we wanted.  There have been a number of price changes since the last report, but nothing dramatic.  Egg and milk prices have definitely come down.  Staple prices were: bread (20 oz. white): $1.39; eggs: $3.46 (-); whole milk: $2.66 (-); heavy cream: $5.29; OJ: $4.25 (+); butter: $3.75 (+); bacon: $3.99; potatoes: $4.39; sugar: $3.29 (+); flour: $2.35; and 80% ground beef: $4.69 (+). I may make an additional trip tomorrow to Walgreens as I recently opened my last melatonin, and I want another wrist brace.  I will likely also stop at the adjacent Food City for another bag of Meow Mix (that our cats ask for by name). Untainted regular gasoline at Weigels is still $3.59/gallon. Frugality Tip from Margo Down here in Florida we are getting ready for the Disaster Preparedness Sales Tax Holiday.  For two weeks we get to purchase things such as batteries, coolers, tarps, radios, fuel tanks, and generators and not have to pay sales tax.  We are currently in the market for a new generator and we are going to save about $100 buying that during this break.  So look up your states tax holidays and see what you can purchase during them and save some money. Happy Savings y'all Main topic of the Show: A variety show Tina in Arkansas asks: “I've got more beets than we can eat—how do you preserve them? Nicole Sauce's Pickled Beet Recipe 1/4 bushel beets makes about seven quarts Brine: 1/2 cup pickling or kosher salt 5.5 cups 5% vinegar 6 cups water Per quart jar spice mix (add to jar) 2 heads dill weed 2-4 cloves garlic 1-2 hot peppers (cayenne or jalapeno) 6 peppercorns Process method: Cold pack Process time: 20 minutes for pints, 25 minutes for quarts (wait 6 weeks before eating so everything tastes well blended) Aunt Helen's Beet Pickles with an extra step (Courtesy of Mama Sauce) 1/4 bushel beets makes about 10 pints. Brine (make enough batched to cover beets) 1 qt vinegar (5% acidity) 6 c sugar 2 TBSP salt (plain, kosher, or pickling: may not be iodized) 2 tsp pickling spice Lots of beets Boil beets in water. Skin and slice more thinly than for a regular pickled beet: say 1/8” or thinner. Pack in glass container or containers. Keep track of how many beets you've pickled (for backpack portion control.) Bring brine to boil. Completely cover beets. If you plan to eat these without further processing, pack and seal in wide-mouth Mason jars in the usual fashion. If you plan to dehydrate, why not pickle in a single glass bowl? Cover and let pickle for 2 weeks. Then you can eat or dehydrate them. To dehydrate: Drain beets. You can save and reuse the pickling solution a time or two before you should dump it and make fresh, so you can run successive batches.
