For those of us who have been blessed and fortunate enough to travel on a plane ✈️ we all know the issues of delays- lay overs- wait times - missed connections- Now no matter how prepared we are or how seasoned we are at travel we are still in the hands of the travel gods when it comes to how quick or long travels may take. So for me personally and this is just me - I try to pack snacks and healthy treats or meals for my flights - but today something happened which I had not had ever dealt with prior. So a 3 hour delayed flight.... we all been there done that but the area I went into to wait in had a fruit
In part two of my illuminating interview with French-American super chef Daniel Boulud, he and I talk about—believe it or not—airline food. Daniel has designed some business class meals for Air France, and the airline flew me over to Paris to experience his food in the air. While the food was tasty, it wasn't perfect. (Having worked on airline food as a consultant, believe me when I say that "tasty but not perfect" is about as good airline food is going to get.) I asked Daniel how it felt to work within the constraints of airline food preparation, particularly as a self-confessed obsessive perfectionist. "I enjoy the challenge," he replied. "And I hope people appreciate the fact that I'm just trying to elevate the offering." Daniel also talks about a remarkable older book of his, Letters to a Young Chef, which he has updated and is being reissued in October. I asked him about the qualities a young cook has to possess to become a successful chef-restaurateur. "You have to have the passion for hospitality, the passion for making people happy," he said, adding that that passion has to come through in a "respectful, intelligent way." Daniel has a whole lot more to say about his career and his success in the restaurant business, and he also lets me in on how he'd like the world to celebrate a hypothetical Daniel Boulud Day, and on which band he'd like to perform at his last supper. Historically Thinking: Conversations about historical knowledge and how we achieve it
Incredibly enough on precisely the second occasion that humans ever flew, they went up drinking. It was December 1, 1783, and as a crowd containing King Louis XVI of France and Benjamin Franklin watched, the physicist Jacques Charles handed his fellow aeronaut Nicholas-Louis Robert a glass just a moment before liftoff. As the ropes were let go and the balloon began to rise, Charles popped the cork on a bottle of Champagne, filled their glasses, and together they toasted the crowd and the miracle of flight. That had a certain quality of...savoir faire. Style. Panache. And in fact the food eaten aloft after that second flight abounded with style, panache, savoir faire, and oftentimes savor as well. It was often–no, typically–eaten in tremendous quantities. Nice groceries, and lots of them: that could have been the motto of eating in the air. Needless to say, when most of us travel this summer, that won't be the motto of our airline's dining service. We feel very fortunate to get peanuts and a soda. So what exactly happened? My guest, Richard Foss, has written the first-ever book devoted to the history of eating in the air and space (appropriately enough titled Food in the Air and Space: The Surprising History of Food and Drink in the Skies.) He's eminently qualified to do so, having authored many articles on culinary history. Additionally he's the California Curator of the Museum of the American Cocktail, and the author of Rum: A Global History. (He's also curated and introduced the links below.) Bon voyage! This week, we talk to a guy who deals with food gone bad. Tainted hamburgers, sour burritos, salmonella-laced chicken: Food poisoning attorney Bill Marler confronts the aftermath of foodborne illnesses. Since gaining a reputation through his litigation during the infamous 1993 Jack-in-the-Box E.coli outbreak, Marler has worked on cases involving companies like McDonald’s, Odwalla, and most recently, Chipotle. He’s also a major force in food safety policy and runs a website called Food Safety News. During our conversation, he traces the rise of illnesses like E.coli and salmonella (“We have to keep up with these bugs”), gives us some tips on avoiding them, and reveals the real scoop on thrice-washed-spinach. We also explore some news about the superbugs emerging from antibiotic resistance in the livestock industry, and discover how food changes when in flight.
