Mokhtar Alkhanshali was a doorman in San Francisco when he saw a statue that changed his life. The statue was of an Arab man holding a cup of coffee, and it led Mokhtar to learn about the origins of coffee, in Yemen, where his family is from. While coffee's roots in Yemen run deep, Mokhtar learned that present-day Yemeni coffee was hard to source, and the quality was inconsistent. But when it was good, some experts said it was the best they had ever tasted. Mokhtar saw an opportunity to start his own coffee company, and help Yemeni farmers in the process. This was supposed to be the Queens Night Market's big summer... When the open-air market debuted in 2015, the crowds were massive. Founder John Wang selected food vendors who represented more than 90 countries. And he had one rule for them: no item could cost more than $5. That way the market would be accessible to nearly everyone, and big businesses would stay away. In 2019 the market set a new record for attendance, and finally started to turn a small profit. In 2020 they planned to release a cookbook. Instead, because of coronavirus, the market never opened. For two decades, Flamin' Hot Cheetos has been one of the most popular snacks in America. In recent years its legend has grown, as word spread that they were invented by Richard Montañez, a Mexican-American janitor at Frito-Lay who went on to become a company executive. 81-year-old Patsy Grimaldi may be the last person making pizza today who trained under someone who trained at Lombardi's—the first pizzeria in American history. On this episode of Special Sauce we pay tribute to the great author, chef and cooking teacher Raghavan Iyer. He introduced much of America to the joys of cooking and eating Indian food. We talked to Raghavan last in March of 2023 about his life, his work, and the last book he ever wrote, "On The Curry Trail". Raghavan talked openly and movingly about his terminal Stage 4 cancer diagnosis and the work he was doing on healing comfort food. His voice occasionally wavered -- you could hear the pain in it -- but he was clear-headed and just as articulate as ever. Raghavan had so much to say, we devoted two episodes to his story, which we have condensed into one. Tragically, he died just as the two episodes dropped. "White people are comfortable anywhere," says restaurateur Andy Shallal. "In order for a Black person to walk into a space, there need to be signals that say, 'You're welcome.'" Jake Cohen didn't care much about Jewish food when he went to culinary school and worked in high end restaurants. But when he met his future husband, Jake was introduced to the Middle Eastern Jewish recipes of his in-laws, like tahdig and kubbeh. Soon, he was mining his own family's Eastern European Jewish recipes, and putting his spin on matzo ball soup and kasha varnishkes. Earlier this year Jake published his first cookbook, Jew-ish: Reinvented Recipes From A Modern Mensch, and he's become a social media star.
