From Paris to New York: Jonathan Waxman on Food, Wine, and Cooking's New Frontiers

Famed Chef Jonathan Waxman came to Wine Talks through a mutual friend who we lost last year to cancer; Melvin Masters was a one-of-a-kind character in the wine trade and Jonathans partner in the famed Jams Restaruarant.    On a recent trip to Nashville, Tennessee, I insisted that the group I was with follow me to Roberts Western (most probably the last true country bar in Nashville), for a fried bologna sandwich. They looked at me crosseyed and followed blindly. You see, we had just finished dinner and everyone had overeaten and were tired. But I knew if I didn't go the first night we were there, I wouldn't make it.  Pray tell, why would one do that? Well, if Jonathan Waxman says the first thing he did was take famed Italian Chef Giada De Laurentiis to experience the $5 fried bologna sandwich. Who shouldn't? A slice of flat top freid bologna between two pieces of white bread with a side of Lays potatoe chips, I was in hog heaven. Add a PBR, and you are off to the races. Jonathan Waxman is the kind of chef who can turn a honky tonk fried bologna sandwich in Nashville into high culinary art, then philosophize about the virtues of a perfectly marbled 1961 steak—all before your first glass of Beaujolais is finished. In this episode, you'll discover the inner workings of an acclaimed chef's mind as Jonathan shares the flavors, friendships, and formative experiences that shaped his career. You'll hear about how “wine comes first, food comes second” became his guiding principle, the serendipitous plane rides sourcing lamb and lobster for legendary winery dinners, and the awe-inspiring meals in the kitchens of France that sparked his lifelong passion for simplicity and flavor. Alongside host Paul Kalemkiarian, Jonathan revisits the rollicking days at Michael's and Jams, brushes elbows with food world icons from Alice Waters to Melvin Masters, and reveals the quiet intensity required to survive and thrive in the high-wire environment of fine dining. From the intricacies of nouvelle cuisine to the rainbow of immigrant influences shaping American food culture, you'll gain an insider's appreciation for the nuances of restaurant evolution, the subtle art of pairing local wines with regional dishes, and the uncompromising drive that keeps chefs inventing and adapting—even when the world turns upside down. Whether you're curious how the Michelin Guide still shapes a restaurant's fortunes, or just want to know what it's like to be mentored by legends while flying by the seat of your pants, this episode peels back the layers of taste, tradition, and tenacity, one delicious story at a time.

The first Venice episode was # 247. I came back and added more to that here and the following episode.  In this episode, the FAQ is: Would I return to Venice? Today's Destination is Venice, Italy Part 2 of 3 Today's Misstep: Spend more time in the region of Northern Italy.   Travel Advice: In Venice, Get Lost FAQ: Would I go back to Venice?   Answer: The answer is yes because I hardly saw the main attractions the first time. I was in a crowd of tourists, and it was under construction. I think there will be better crowd control now that there's a fee. Today's destination: Venice, Italy Part 2 of 3 Venice is called the City of Dreams.  It's the capital of northern Italy's Veneto region and is built on over 100 small islands in a lagoon in the Adriatic Sea. It has no roads, just canals—including the Grand Canal thoroughfare—lined with Renaissance and Gothic palaces. The central square, Piazza San Marco, contains St. Mark's Basilica, tiled with Byzantine mosaics, and the Campanile bell tower, which offers views of the city's red roofs.  Yes, Venice is sinking. This is due to sediment settling and freshwater pumping from below ground. What are the main places to explore here?   Take the canals everywhere, because there are no cars.   So many corners. Away from glitter and gloss. 70,000 people live here. Tens of millions vacation here. https://whc.unesco.org/en/list/394/   Detours throughout the city due to construction. Rialto Bridge is in the middle of the busy tourist activity.   If I had more time, I would have spent it in Venice. I only had four days, which got me more interested in being part of the city life. I'd go back outside of the summertime. I'd visit the historical sites and ride the vaporettas, trains, and buses. I'd also explore the area around Venice to learn about its history and meet the people. Today's Travel Advice- In Venice, Get Lost

In this episode of The Mentors Radio, Host Dan Hesse talks with Manfred Krankl, the successful builder of multiple businesses including the restaurant Campanile and the bakery La Brea, but he is best known as a winemaking icon. Manfred is the founder, owner and winemaker at Sine Qua Non, which has redefined the term “cult wine” and earned 25 perfect 100 point scores from Robert Parker's Wine Advocate, more than any winery in the world during this time period according to my research. Krankl is an innovator with unusual wine bottle shapes plus his own art that changes each year. According to Chat GPT, Sine Qua Non wines have appreciated more in value in the last decade than any wine in the world, including the famous French Burgundy Domaine de la Romanee-Conti. His new winery Next of Kyn is yet another remarkable success. Listen to episode below, or on ANY PODCAST PLATFORM here. This is Stephen Schmidt from the Gazette Digital News Desk, and I'm here with your update for November 27, 2023.According to the National Weather Service it will be sunny in the Cedar Rapids area on Monday with a high near 27 degrees. A west wind of 10 to 15 mph could gust as high as 25 mph. On Monday evening it will be mostly clear, with a low of around 10 degrees.Just one year into the public portion of the University of Northern Iowa's $250 million comprehensive fundraising campaign, the Cedar Falls campus already is most of the way to its goal — putting it more than two years ahead of schedule. But UNI doesn't plan to wrap its Our Tomorrow fundraising push early — before 2026, when the campaign's finale is supposed to converge with UNI's sesquicentennial — especially since unforeseen circumstances have added new projects and fundraising needs.“The goal is certainly to exceed $250 (million),” UNI President Mark Nook told The Gazette, noting the campus hasn't set a new specific goal. “We may in the future. But for now, we will run the campaign through June of 2026. And we're using that because 2026 is our 150th anniversary.”The campaign is funding scholarships, additional majors at UNI, faculty initiatives and research, and the renovation of noted campus spaces, such as the Campanile, the Gallagher Bluedorn Performing Arts Center, and the UNI-Dome.A residence on M Avenue NW had “major” damage after an early morning fire on Sunday.According to a Cedar Rapids Fire Department media release, firefighters were dispatched at 3:48 a.m. to a residential fire at the 500 block of M Ave NW.Upon arriving at the scene firefighters reported flames showing from the front of the house. They pulled one water line, and then another, before bringing the flames under control, according to the release.A search of the interior of the home was done before an all clear was reported, according to the release. No residents appeared to be home at the time of the fire and no injuries were reported. Damage to the residence was listed as “major” in the release but no other information was given. The fire remains under investigation.According to reporting from the Waterloo Courier, no one was injured on Saturday evening when there was an explosion at a POET bioethanol plant that sent a fireball into the sky.Emergency responders were called at around 4 p.m. after the resulting boom caused by the explosion.Butler County Emergency Management Coordinator Chris Showalter told the Courier that the fire had mostly resolved itself by the time fire crews had arrived. The fire remains under investigation, but Showalter said the current speculation is that combustible dust somehow exploded.

The Miami Hurricanes are reportedly interested in Miami Dolphins linebackers coach Anthony Campanile for their vacant defensive coordinator job. Coach Campanile has had success in the college ranks at Boston College and Ruters. He was very successful as defensive coordinator of New Jersey powerhouse high school Don Bosco Prep. Mario Cristobal was interested in Campinale for DC last year. This year, his situation might be different with the Dolphins since a new DC, Vic Fangio, is coming in. Campanile interviewed for the Dolphins DC job before Fangio was hired. Host Alex Donno and guest Larry Blustein discuss the Campinale possibility, but Blu makes the case for why the best decision might be to promote linebackers coach Charlie Strong to DC. The guys also discuss the offensive coordinator vacancy. Blu does not expect Jason Candle to leave his head coaching position at Toledo for the OC job at Miami. How important is it for Mario Cristobal to wrap up these searches quickly? Spring football practices start in just three weeks, on March 4th. Donno and Blu recap an incredible win by Miami basketball over the Duke Blue Devils. Jim Larranaga's Hurricanes pounded Duke 81-59, improving to 13-0 at home. The guys discuss quarterback recruits Air Noland, Michael Van Buren and Julian Sayin for the class of 2024.Support Us By Supporting Our Sponsors!LinkedInLinkedIn jobs helps you find the candidates you want to talk to, faster. This is The Campanile, a 284-foot tower on the south-west corner of Westminster Cathedral.Saturday 23rd February 1924 was an ordinary day for happily married mother-of-two Margaret Ann Davey; she made breakfast, she packed some sandwiches for lunch, and – at 11:30am – she climbed the steps to the top of The Campanile.Having purchased a ticket, the doorman had no suspicions that her mind was unbalanced, as she seemed happy and well. But at 2:10pm, having jumped from the top, and plummeted 86 metres, she ended her life on the hard stone road of Ambrosden Avenue. But why was she so unhappy, why did she choose to die here, and did she choose to take the lives of two innocents, who were just enjoying their lunch?Murder Mile is researched, written and performed by Michael of Murder Mile Walks with the main musical themes written and performed by Erik Stein and Jon Boux of Cult With No Name and additional music, as used under the Creative Commons License 4.0.
