Today I'm talking to Bartek (Bert) Glinka & Brendan D'Amelio at Uncle's Smallgoods. Bert and Brendan are friends, brothers-in-law and the charcuterie makers supplying many Melbourne cult institutions. You'll find their pastrami at places like Hector's Deli, Nico's and Hugo's and their bacon is fried in cafes like ST ALi, Rustica, and Earl Canteen. Bert and Brendan's smallgoods journey started when they decided to sell kranskys at the Polish Festival and wondered how they might go about making their own. Eventually, after proving their commitment by chopping a pile of wood, they convinced a Polish husband and wife team, Marian and Nora Poprawski to sell them their Polish Deli in 2013. They now have two sites in Dandenong, a dedicated state of the art Smokehouse and the flagship Deli Cafe Foodstore. I had a full tour of the small but super efficient factory with the main attraction being the two large woodfired smoke ovens where they use red gum wood that they light early in the morning and then add wood chips to for the smoke. It is the artisan way of doing it and Bert and Brendan are particularly proud of this. I got to eat kransky warm out of the smoker and went away with a very generous ham bag filled with some of the best smoked salmon, smoked chicken, bacon and polish sausage I have ever tasted. Bert and Brendan's passion for creating the best possible product is palpable and they were so lovely to talk to. They are putting out over 10 000 Christmas hams this year and if you miss out this year, mark your 2025 calendar because this ham is 100% free range, treated with so much care and love and is delicious.

An American who's lived in Cape Town for 30 years, Ilana Sharlin Stone is a great food writer whose portfolio includes work for Saveur, Life and Thyme,  Los Angeles Times, and many others. After starting out as a writer, Ilana took herself off to study at the Culinary Institute of America and became a chef so that she could better understand and write about food. Of course that opened more doors and she started working in restaurant kitchens, ultimately moving to Cape town with her South African husband in 1994 where they opened the seminal modern Italian restaurant 'Rustica'. after closing 'Rustica' in 2000, Ilana concentrated on raising her two young children and building her writing career. Exploring more than just shiny palaces full of delicious temptation, Ilana writes about the grit and grime of restaurants, food security, sustainability and life in the trenches. We chatted about writing, restauranting and much more. I suspect we'll meet again to continue nattering about our love of food and the industry that surrounds it. QUICHE RÚSTICA DE LEGUMES Ingredientes da massa 2 colheres de sopa de manteiga ou azeite 1 ovo Farinha de trigo (o necessário para dar ponto) Sal e ervas desidratadas à gosto Ingredientes do recheio Cebola, pimentão e milho à gosto. Varie com a sua preferência! Brócolis, aspargo, abobrinha, etc. 1 copo grande de iogurte natural 3 ovos batidos Sal e pimenta-do-reino à gosto Parmesão ralado à gosto Modo de Preparo Em um recipiente, coloque todos os ingredientes da massa e misture bem até formar uma massa homogênea e modelável (caso precise, adicione um pouco de água se ela ficar muito seca). Transfira para uma forma redonda, de fundo removível e untada. Forre toda a forma com a massa (só não deixe o fundo e as laterais muito grossos). Leve ao forno preaquecido a 180 ºC por cerca de 10 a 15 minutos (apenas para pré-assar a massa). Reserve. Em uma panela, esquente um fio de azeite e refogue a cebola, o pimentão e o milho. Ou os legumes e verduras, de acordo com a sua preferência e escolha. Transfira para um recipiente, acrescente os ovos, o iogurte, o sal, a pimenta e misture bem. Despeje sobre a massa na forma e polvilhe o parmesão ralado por cima. Shawn McKenzie started baking cookies at 11 years old alongside her chef father at a senior center. He taught her patience, waiting for the dough to be ready. Even then, she says she focused on the chocolate chips coming through with just the right texture and flavor lasting for days. “I was always obsessed with making sure it didn't taste like it was old or crusty.” Her obsession that started, and continues, with cookies helped the Minneapolis chef move to the top of her profession. McKenzie and four other bakers from around the country are the finalists for the best pastry chef award from the James Beard Foundation. The foundation made the announcement on Wednesday. McKenzie co-founded Café Cerés, which has two shops in south Minneapolis. She's also the executive pastry chef at Rustica. On MPR News' Minnesota Now, host Cathy Wurzer asked McKenzie Tuesday what the nomination means for the future. McKenzie credits others who have worked with her and said while it's an honor for her team, "I'm trying not to think of, OK, what is this going to do. I guess I'm still trying to take one step at a time … I need to bake off cookies today, you know?" The best chef Midwest category includes five chefs from Madison, Milwaukee, Omaha and Sioux Falls. None of the Twin Cities chefs in the category made it past the semifinalist round. Beard award winners will be announced June 5 in Chicago.

Greg opened the doors to specialty coffee and found a niche that became DOGWOOD coffee. In 2015, Greg became full owner. Greg has expanded his passion for entrepreneurship in the food ecosystem space through his establishment Gather Venture Group. This investment fund provides resources for emerging food and beverage brands.  Though this podcast shares the story of our favorite local bakery and coffeehouse, it is so much deeper than that. This is an episode for all the emerging and established entrepreneurs, for the life-long learners, and for the individual who could use a reminder of how to look at failures as successes.
