DJ Chris John Live At Mojito Happy Mess
Yeah… this one goes off the rails fast.We get into the whole Jake Paul situation and how people pick and choose what they're mad about (shocking, I know). Then somehow we end up asking: if Jesus showed up today… are we canceling him too? Because history kinda says… yeah. After that it's straight chaos—real vs fake headlines and we're just as lost as everyone else trying to figure out what's actually real anymore.Couple drinks in, zero filter, and definitely crossing lines we probably shouldn't.
In this episode of The Cocktail Academy Podcast, Damian records live from Scarfes Bar at Rosewood London with Andy Loudon, Director of Bars, and Kris Bazys, Bar Manager, during the launch of the new Heroes & Villains menu.Andy breaks down the thinking behind the menu, how Gerald Scarfe's artwork shapes the identity of the bar, and why great bars are built on energy, escapism, and experience, not just what's in the glass. Welcome back to our January rerun series! For today's spotlight, I'm thrilled to revisit Episode 17, where we dive into the elegant and effervescent French 75. One of my ALL time favorites and my go to welcome cocktail to serve when hosting parties. I chose the French 75 for this rerun because it's a brilliant riff on the classic Sour cocktail—that timeless combination of spirit, citrus, and sweetener. What makes the French 75 stand out, though, is its use of sparkling wine as a mixer or lengthener. The addition of bubbles transforms the structure of the drink, making it light, festive, and perfect for celebrations or any time you want to elevate your cocktail experience. By mastering the French 75, you're stepping into the world of the Collins family of drinks. The Collins family is all about taking the basic sour template and “lengthening” it with something fizzy—traditionally club soda, but as the French 75 shows, sparkling wine is a fantastic twist. Other drinks in this family include the Tom Collins, John Collins, and Vodka Collins—each swapping out the base spirit or bubbly for different flavors and personalities. And while we're here, it's worth tipping our hat to the Mojito. Though technically not a Collins, the Mojito follows a remarkably similar template: spirit (rum), citrus (lime), sweetener (sugar), and a bubbly lengthener (soda), plus the refreshing addition of mint. It's a great example of how understanding the Collins structure empowers you to spot and create variations across cocktail families—even when they hail from different traditions or use different techniques. As you listen (or re-listen) to Episode 17, think about how the French 75 not only showcases the versatility of the sour formula, but also invites you to play with sparkling ingredients in your cocktails. Once you get comfortable with this style, a whole world of bubbly, refreshing drinks is yours to explore. Cheers to new adventures in the Collins family, and to a sparkling start to the new year!

In this episode, the drink of choice was the classic Mojito, and the boys admit to having a pretty boring Halloween — no costumes, no parties, just vibes. They take a nostalgic trip down video game memory lane, reminiscing about the good old days of Fortnite before it got sweaty. The guys also react to the latest in tech — a new AI robot that can wash your dishes (finally!). Plus, a fresh round of wild listener calls in this week's “We're Listening, Chicago” segment, and so much more! This Friday, 9pm Demon Hour Comedy at the Lincoln Lodge Chicago. BUY YOUR TICKETS!!

What's up Bros? Miami has officially come to an end. While this episode was more filler than anything, all in all it was a great season. Lisa and Larsa finish hashing out their nonsense and at the end of the day, end up making up. Stephanie has some issues with Marysol. Lisa airs out her issues with the lack of sympathy she got from the group in regards to her dad. She actually makes a few good points about how she isn't ever allowed to discuss her issues. Kiki and Adriana discuss cake gate and the wretched, ratchet scenario. And there are more than a few references about Marysol coveting a mojito... Learn more about your ad choices. In this episode, the cocktail of the night was the classic Mojito, and the boys were joined by their Venezuelan brother and Chicago comic Christian Henningsmeyer. As always, the Daily Insomnia crew hypes up their guy before diving into the wild world of the Chicago dating scene. From women's endless lists of icks, to how both sides view what makes a date “bad,” to the truth that some women have no game, nothing is off limits. The conversation gets even spicier with talk of escort pricing in Chicago, the boys' own kinks and search histories, and plenty more chaos along the way.
