Although it's still a few months away I'm already getting excited about this year's FyneFest. It's one of the most important dates in my calendar, not just because we head up there to host our Meet the Brewer panel discussions, but because it's simply one of the best beer-focussed events that the UK has to offer.While I tend to get misty-eyed over glorious pints of Jarl from the source, I also recognise it as a chance to try some truly special beers that I don't normally get to enjoy. The Origins Bar, where our talks take place, is a great example of this. Here you'll find plenty of funky wild beers and mixed ferments from several breweries including Fyne's own Origins project, plus wild-fermented ciders from producers such as Ross-on-Wye. For this discussion we decided to focus on the biggest beers pouring at the festival: stouts, barleywines, strong saisons and biere de garde—the kind of beers a situation like FyneFest is the perfect place to treat yourself too. On the panel I'm joined by Gareth Young from Glasgow's Epochal Barrel Fermented Ales, Lally Morrison from Polly's Brew Co in Mold, North Wales, and Sean Knight from Siren Craft Brew in Berkshire. Each brewer brought something truly special for us to taste, in addition to their wealth of knowledge and experience in producing these kinds of beers. Launching a new business is always an exciting time. It's also a challenging one, too. In our sector, you need a quality liquid, great branding and a team that knows the industry. Thankfully, with today's guests you have all of those and more.Earlier in the summer, the cider category welcomed one such new addition. Developed by a team with decades of experience in building successful beer and cider brands, Red Fin Cider is all about offering licensees a medium dry cider that can be stocked as an added value product, alongside existing offerings.The team is made up of the trio of Graeme Baldwin, David Tugwell and Freddie Rouse. Graeme was the first employee at Orchard Pig and heavily involved in the meteoric growth and eventual exit deal for the brand.David Tugwell has worked with huge growth challenger brands, including Estrella Damm and Orchard Pig cider, as well as in the craft beer sector, heading up the sales function at Big Smoke Brew Co and Double-Barrelled Brewery.The third founding partner, Freddie Rouse, has worked with several craft breweries establishing them throughout independent pubs and groups across the UK and most recently at Amathus Drinks, helping grow its agency list with other UK Wholesalers. And after a successful whirlwind few months, Red Fin has just announced a new initiative with Berkshire-based Siren Craft Brew enabling it to service pubs and venues in Berkshire, Brighton and London.So what better time to catch-up with Red Fin co-founder Dave Tugwell to talk through the company's journey so far. In the first part we focus mainly on Fuller's and the earlier part of Hayley's career whilst the second part picks up when Hayley joins Siren Craft Brew.* So today, I'm heading to Staines and to one of the local pubs of Hayley Pearce, shift brewer at Siren Craft Brew. Hayley's brewing career started with homebrewing with her Dad, before joining Fuller's as part of their graduate scheme and going through a number of different stations, training to run the big kit, helping commission and run the pilot kit at the brewery before joining Siren Craft Brew. We talk about the differences of what it's like working for a family brewer - "standing on the shoulder of the giants" of previous generations that have brewing at that since 1845 - versus at relatively small (although probably medium-sized) craft brewery founded 11 years ago that has a range spanning everything from West Coast to barley wines, braggots and everything in between. Along the way Hayley has - in her words - had to figure out her way of doing things in breweries that have often been built around men; with processes, tools and designs that haven't changed much in generations. Hayley's been a proponent for opening doors and removing obstacles to help open brewing up to more people that might otherwise be put off.We talk about keeping fermenters warm with ski jackets, the ballet performance of getting large malt sacks into the mill with a wheelbarrow and the different languages of brewing that are spoken at different breweries by different people. As SHE Compliance Manager at Beavertown Brewery, Jessica Maye looks after all things health & safety, food safety and environment & sustainability across their London sites.  Previously a quality & compliance manager at Fourpure, and a PhD candidate at Queen's University Belfast, Jessica's role at Beavertown Brewery as SHE Compliance Manager has allowed her to continue to develop and grow her expertise in Food Safety, in addition to responsibilities such as taking on artwork and label sign off. During this discussion she is joined by Tanya Kondratyuk, formerly quality manager at Leeds-based Northern Monk and also Amber Thorne. Having started her career in beer in the sales team at Siren Craft Brew, Amber has since moved to the iconic Bristol beer scene working with Good Chemistry and is now the Customer Account Manager at Arbor Ales. During this episode they discuss how best to ensure the flow of essential information travels from brewhouse, to quality assurance right through to taprooms and sales - and how that flow really needs to go both ways! We meet with Jamie Duffield (who you may know as JD) the canning line lead at Siren Craft Brew.JD's known for recipe design and innovation - plenty of that at Wild Weather - and most recently with an amazing smoked porter called Fire and Stars (it's available in bottleshops but not currently on Siren's website and I'd recommend you get yourself a can or two!) He's also known for brewing with Spruce Tips and we'll hear about how he's worked with local homebrewers, Reading Amateur Brewers.We'll talk about his interest in beer and learning all about it and how this has helped him as an assistant brewer at Bingham's and (head brewer at) Wild Weather, as canning line lead at Siren Craft Brew and working behind the bar and in the cellar. We have all taken different routes on our journey in beer and today's guest has taken a path from Wigan, leading to London before heading some 40 miles out to Wokingham in Berkshire. Hayley Pearce is a brewer at Siren Craft Brew. Originally from the north of England, Hayley headed south in 2008 to study Biochemistry at Imperial College London.  In 2012 she joined the Fuller's Graduate Programme and it soon became clear that her future lay in the brewhouse. Progressing from junior brewer to shift brewer and now with an IBD Diploma in her pocket Hayley was ready for a new challenge.   At Fuller's she helped commission and run the Pilot Brewery until 2021, when she was drawn by the song of the Siren where she continues to spread her infectious enthusiasm. In this episode, recorded at our Brewers Congress in London, Hayley recounts her career so far, the lessons she has learned along the way and her hope that her journey in beer can inspire others, too.

My website is named Beer n Biceps, and that is the name of the podcast that I run. The idea behind the podcast/website was to teach people how to drink good beer while leading a healthy life and losing weight. So, I feel uniquely placed to answer the question "Why are pubs opening before gyms?". It is an emotive subject and one that has generated a lot of hurt over the last few weeks. It has also created quite a lively debate. My personal opinion is that pubs should be opened before gyms. But that the two businesses should not be compared in the first place. In the podcast, I go into why I think that is. Why are Pubs Opening Before Gyms? The problem is, that my opinion doesn't really matter that much. We are talking about people's livelihoods here, and I feel obligated to support my many friends within the industry. A lot of personal trainers and fitness instructors will be worrying about their jobs and how they are going to pay their rent. They certainly don't want to listen to me lecture them about the health and safety capabilities of a gym vs a pub! Still, I have tried my best to answer the question as best as I can, using a combination of science, economics, and my own opinion. I may be completely wrong. Luckily, it doesn't appear that this will ever be proven either way. Gyms are scheduled to open within the next couple weeks, and I for one cannot wait to get back! Chairs have begun to squeak ominously when I sit in them, which is always a sign that the gym is needed. Siren Lumina I did not really go into much detail about the beer in this week's podcast. Which is a shame, because it was really good. The problem was that unlike many of my podcasts, I just jumped straight in and grabbed a beer randomly from the fridge. So there was no time to research it, and for that I can only apologise. Lumina is a session IPA from Siren Craft Brew. It is 4.2% abv, and uses a combination of American and German hops. Siren Craft Brew was founded in 2013 and is situated in Wokingham which is near Reading. I've had their beers before, and they are always a treat. Definitely worth checking out their website, or picking up a can or two when you next see them in the shops.
