Outside Lands 2025 lineup Dave MacLean is back on Brew Ha Ha with Steve Jaxon and Herlinda Heras, to talk about Hidden Splendor Beer and Outside Lands 2025. He has been on the show before, the last time was this episode a couple of years ago. Hidden Splendor Beer is Dave's new brewery that will be opening soon. Dave likes to create good beer and then places to enjoy it in. That is what he did in his previous endeavor, Magnolia Brewing. He will be brewing a lot of traditional beers, bitter, mild, light mild, porter, stout, pilsners and lagers. Dave is also here to tell us about Beer Lands for Outside Lands 2025 on Aug. 8, 9 & 10 in San Francisco. His discussion of that is on this other podcast episode. It is part of Outside Lands 2025, in Golden Gate Park, on August 8, 9 & 10th. He has been on BHH before, the last time was this episode a couple of years ago. Dave is also a co-founder of Admiral Maltings and is the former owner of Magnolia Brewing. Dave is also here to tell us about opening a new brewery called Hidden Splendor Beer. His discussion of the new brewery is on this other podcast episode. This allows each of today's subjects, Outside Lands and Hidden Splendor, to have their own audio track and search traffic. ;) This is the 12th year for Beer Lands. It will get a different look and feel this year. Dave describes this year's Beer Lands setup from having seen the plans, but it is yet to be built in the new way. It will still be on the Polo field but closer to the main stage. They have 22 breweries including a couple of Cider houses. Each brewery will feature two beers. Dave's job is to curate a well-rounded menu of all the different beer styles. It should show the variety of beer being produced in the San Francisco area and not be not just an IPA fest or a lager fest. Do you really want to see the calorie count on that barrel aged stout?The requirement for brewers to list ingredients and nutrition info on beers has been going around for a while. Regulators want it, breweries are fighting it. Listing all the ingredients and nutritional data isn't as simple as printed a label. There's a lot of time and cost involved. In Part 2, Teresa shares how she came to find out about Chef Eddie Blyden through a mutual friend. She was persistent in her efforts to track Eddie down, and once she did, she asked him to teach the youth in the nascent Old Skool program, which was still taking place at Teresa's house. Eddie agreed to join the Old Skool crew and he brought in other SF chefs. They did supper salons and pop-ups as well as gala fundraisers with as many as 250 guests. Chef would cook outside the events, which were volunteer-run and meant to raise money for their own brick-and-mortar space. Later, years after Eddie had moved on and as she was preparing for the 10-year anniversary of the Old Skool spot just off Third Street, Teresa reached out again to her chef friend. Eddie Blyden was born in Nigeria. His dad was born in Sierra Leone, and his mom was from Massachusetts. He has lived in the US, the Virgin Islands, Africa, and Europe. He was living in Zurich, Switzerland, when a friend told Eddie he was opening brewery in The City. This is what brought him to the Bay—he moved here to help open 21st Amendment. Eddie says that he has remained here for nearly three decades because of the beauty, the proximity to so many diverse landscapes, the food scene, and the laid-back way of life we enjoy. After they opened 21st Amendment, he left briefly to work in Philadelphia, but came back to work at Magnolia Brewing as they were ramping up to open The Alembic. He lists off many restaurants and hotels, in SF and the East Bay, where worked for years before going private as well as doing some catering. The Old Skool chef tells us that the menu at the supper club was inspired by the youth who've worked there, drawing from several family food lines from Central America and other parts of the world. He cites three challenges of running the kitchen at OSC: 1. the food itself; 2. working with youth around the food; and 3. the youth and their life challenges. What a joy it was to sit down with John Ferguson, Co-Founder and Manager of New Magnolia Brewing. Located on Bevis Street in Houston Heights, New Magnolia will celebrate its 2nd anniversary in November. They make some of the best beers in Houston, and we got to try some! We started with the Heights Light Lager, a bronze medal winner at the U.S. Beer Open Championship. We also tasted Hella Pils, Czech Style Amber, WYSIWYG, and Tropical Splitz. We learned the origins of the names of WYSIWYG and Ennio Pils. And we talked about their Revolution IPA, a series using the same malt base with different hops. Our road trip conversation diverged into a discussion about the best BBQ in Texas. And if you want to try the beers that John would drink if it were his last day on earth, you'll need to visit the brewery. They are open 7 days a week. Make sure to check out their art wall. Craft Brew News – 12/07/18WE ARE RANKED # 12 IN FOOD CATEGORY ON iTUNES !!!!California ABC Uncovers Brewpub ViolationsA statewide investigation by the California Department of Alcoholic Beverage Control (ABC) into 70 brewpubs with “Type 75” licenses uncovered violations by nearly 50 of the licensees.As Brewbound reported in late July, the Type 75 retail restaurant license gives brewpubs the ability to produce between 100 and 5,000 barrels annually. However, some business owners sought to obtain the licenses with the primary intent to sell spirits.The investigation found that nearly 50 licensees were either not brewing beer, not meeting the quotas or not functioning as a brewpub.California Gov. Jerry Brown signed a new law in September allowing Type 75 licensees to sell their products for off-premise consumption. The law also tightened requirements for obtaining the license, requiring license holders to operate at least a 7-barrel brewing system and produce and sell at least 200 barrels annually.Previously, Type 75 licensees were required to produce at least 100 barrels per year, with no sales requirements. That led some business owners to seek the licenses, which cost about $14,000, instead of obtaining liquor license, which can cost hundreds of thousands of dollars.More than 1,200 Breweries Join Sierra Nevada Wildfire Relief ProjectMore than 1,200 breweries have signed up to brew a special IPA, created by Sierra Nevada in an effort to raise money for wildfire relief. As part of those efforts, beer companies will brew the same beer and donate proceeds to the Camp Fire Relief Fund, which supports those affected by the California wildfire that killed 88 people and destroyed thousands of homes and businesses.Sierra Nevada founder Ken Grossman wrote that his company will donate 100 percent of sales from Resilience Butte County Proud IPA to the fund.“Our hope is to get Resilience IPA in taprooms all over the country to create a solid start for our community’s future,” Grossman wrote.Brewers large and small have agreed to participate.New Belgium Brewing Launches ‘Up Next’ Rotator Series with Brut IPAFORT COLLINS, Colo. — New Belgium Brewing’s brand new Up Next Series taps into the brewery’s tradition of innovation by offering easy-drinking, unique and flavor-bending beers that reflect evolving trends in food and drink. Dave Maclean is back on Brew Ha Ha with Steve Jaxon and Mark Carpenter. Steve opens by mentioning that Dave has sold Magnolia Brewing, which he started in 1997. Also in is Baron Ziegler of Banshee Wines. Dave’s new company is Admiral Malting. They turn raw barley into malt that brewers need to make beer. They use an old traditional practice called floor malting, where they lay it out on the floor. They sell to a lot of local brewers. Until now there has not been access to local barley malt. Mark Carpenter notes that almost all commercial cereals have malted grain, which has more flavor, and that today they will taste some beer from Seismic that used Dave’s malt. It is called Alluvium Pilsner from Seismic Brewery. It just won a Silver Medal at the California State Fair. It will be one of the beer featured at Outside Lands Music Festival. The other beer is a Pilsner, also from Seismic. Herlinda points out that any local brewery would want to source their Most or all of the malt would come from England or Germany or Canada or the upper Midwest. This is the first time that local California brewers can access malt that is made from locally grown grain. Baron Ziegler of Banshee Wines has brought a Pinot Noir that they make using sustainable and organic practices. They also make Chardonnay. They have a tasting room in Healdsburg. They produce their wine in a shared facility called Sugarloaf. The Outside Lands music festival will have about 65,000 people and more than 20 different breweries. Dave feels that it does a good job of capturing a sense of place, with all local food and local breweries and wineries.
