A new study from the Environmental Working Group has determined that 80 per cent of Americans are regularly exposed to the plant growth regulator chlormequat. It is used to control growth in grain crops such as oats, wheat, and barley in order to make them easier to harvest.Terry Tyson is the General Manager of Grain Millers Canada in Yorkton, Sask.  He provides his take on the situation and shares how this work aligns with the Yorkton Brick Mill Heritage Society's Interpretive Station. The main export market for Canada's malting barley is China. Heyward Gualandi works for Root Shoot Malting (website, Instagram), a 5th-generation family farm in Loveland, Colorado. We sat down to talk about their investments that helped them leave the commodity-farming market, which is good for the business but also allows them grow more flavorful crops, which ultimately creates better tasting beer, whiskey, and food.There is a lot of talk these days about the impact of terroir on agave and sugarcane distillates. Root Shoot wants us to know that whiskey and beer are influenced by it as well. We just haven't farmed our grains in a way that has allowed the land to play as large of an impact. They and others are working to change that story. The Financial Conduct Authority has published its initial review into 'de-banking' - that's when banks decide to terminate certain accounts. The issues surrounding 'de-banking' were raised when politician Nigel Farage revealed he had been refused banking facilities. Among the evidence the FCA has considered, is a report from the British Association for Shooting and Conservation. They surveyed their members and said 41 percent of the 325 who answered, had found difficulty with their banking, and that just over half of those people had been told by the bank, off the record, that their connection with shooting and firearms was the reason why their banking had been stopped or restricted. As the war in Ukraine continues, the longer term consequences are being assessed, including the impact on farmland soil, which has been contaminated by heavy metals like mercury and arsenic. Staff from a Ukrainian university have spent a week at in the UK at the Royal Agricultural University, learning how to heal their soil back home. All this week we're looking at British booze, today it's beer. Malt is a key ingredient and it usually comes from barley, grown specifically for brewing. Malting barley production across the UK got back to pre-pandemic levels last year, at nearly 2 million tonnes, but the price of malting barley has risen dramatically since 2019, pushing up the price of a pint. This week, Beer Sessions Radio welcomes two homeschooled brewers — Jeff Lyons from Endless Life Brewing in Brooklyn, and Jaega Wise from Wild Card Brewery in East London, who also happens to be the author of “Wild Brews.” The gang will bang out lessons on homebrewing and sour beers, before revealing the secrets to the water section of Jaega's latest book. The episode starts with Jaega's and Jeff's introduction to the homebrewing world as well as their backgrounds outside of the beer industry. While Jaega grew up in the Midland region in UK, noted for Burton-on-Trent, with a CAMRA beer festival as her first, Jeff hung out with the Beer Judge Certification Program gang in the back room of Jimmy's No. 43. Jaega also shared her unexpectedly perfect journey to beerdom, studying chemical engineering and going to water school for her previous job in water treatment. She went on to explain the keys to controlling what she considers the most underappreciated ingredient in brewing — water. The gang then goes deeper into sour beer and the history of homebrewing, with Jimmy admitting to only being able to make “the no hygiene beer” inspired by the Victorian era's Tudor. They also discuss the revival of cask beers along with the brewing scene in London, with a tiny surprise about water in Scotland and whisky distilling. There's no doubt about it, flavour is a key factor in the success of any alcohol-free drink, but it's also one of the most difficult areas to master. How do you match the flavour of a single malt whisky, the taste of a session IPA, or the burn of a shot of tequila? Is it even about trying to replicate the taste of alcohol or should efforts be focused on different aspects? In this episode of Table Talk, brought to you in partnership with Kerry, we delve into these questions, as well as the science and the art of flavouring low and no alcohol drinks. We find out just how much work goes into getting the right flavour, including the sniff, taste and session tests. This week we meet Dr Glen Fox, Senior Research Fellow, Centre for Nutrition and Food Sciences, Queensland Alliance for Agriculture and Food Innovation at the University of Queensland. We often overlook what we have in our own backyard and Dr Fox is a great example. While we have regularly had international experts on the podcast, I was unaware of the research that was going on here in Australia until I met Glen at a function recently. Dr Fox has just been named Charlie Bamforth's successor as Anheuser-Busch Endowed Professor of Malting and Brewing Sciences at University of California, Davis. Today we meet Glen and learn about his research in the ingredients side of the industry and what his role will be at UC Davis. Along the way we also get a little tease into some research being done into Australian plants that may be able to assume the role of hops in brewing, learn that Toowoomba once had a hop industry of sorts, the concern about the effect climate change will have on barley and brewing and also that from 2020 the University of Queensland will be including brewing training in its food science degree.
