There’ll be a lot of South East Queenslanders heading to the beaches over the Christmas break, and this means for our Lifesavers and guards, there’s plenty of activity to monitor. Dave McLean, Duty Officer at Surf Life Saving Sunshine Coast, told Dean Miller on 4BC Summer Drive, 'We just want everyone to stay safe, and remember, stay between those red and yellow flags.' Following the rain, Mr McLean continued, 'The water is still a little murky. The surf has brought some marine life around, so that's another advantage of staying between the flags.' Chris Maynard, Chief Lifeguard for the City of the Gold Coast told Dean Miller, 'Absolutely gorgeous down here on the Goldy, just a picture along the coast.' Mr Maynard continued, '[The water] has really cleared up here... looking really good for a swim anywhere along the coast.' The Admirals, on the sea of malt. Dave McLean from Admiral Maltings in Alameda is our guest on Brew Ha Ha with Steve Jaxon and Herlinda Heras. Admiral Dave has been on Brew Ha Ha before, including this interview recorded on June 28, 2018. Dave is also the Beer Lands coordinator for the Outside Lands music festival. On Saturday June 29 they are putting on It's The Malt, which they hope will become an annual event. Admiral Maltings' three partners all have backgrounds perfect for their roles in the company, in beer and agriculture. They wanted to have locally grown organic malt to use as brewers and now the company supplies many other brewers too. Dave explains the role of malt starting with the fact that beer is made mostly from barley but as it grows in the field it is not ready to use in brewing. The malting process involves steeping the grain in water, germinating it and then stopping that process. Then the brewer takes it and does all the other steps in the brewing process. Admiral Maltings is the first floor malting facility in California since Prohibition. They do different types of malt, to follow specifications that their customers, the brewers. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more. Admiral Maltings also operates The Rake pub, on the same site as the malting facility in Alameda. They only serve beers and distilled spirits that use their malts. The Rake has windows that overlook the malting floor, which is a unique feature. Dave McLean and Martin Voigt are back on Brew Ha Ha with Steve Jaxon and Mark Carpenter this week to talk about the Outside Lands festival which will be going on August 9, 10 & 11 in Golden Gate Park, San Francisco. Dave is a partner in Admiral Maltings which produces malt for Bay Area brewers. Herlinda Heras has judged beer in various competitions with Martin Voigt who was on the show last September. He is a beer blogger from Austria and had extended his California trip to attend the festival. This is the 12th year of the Outside Lands festival and the 8th year of Beerlands. There is no beer competition, it’s just three days of great beer, wine and restaurants doing a “Taste of the Bay Area” showcase. There are 30 breweries in Brewlands, including Anchor. There is Ace Cider and Bear Republic and Lost Coast, Sierra Nevada, Speakeasy and Seismic, among others. There is also Winelands, which has been on every year, with a VIP area. The Gastromatic Stage may be the most interesting place in the festival, including butchery going on with live music on the same stage. Oxbow Market from Napa is now curating Cheese Lands, too. There will be different kinds of beer. Dave McLean tells how it's hard for it not to become an IPA festival but there are other varieties there too. Martin Voigt says that there are good reasons why the American brewers are winning awards for their Pilsner beers, over the German producers. Mark is tasting an IPA from the Freewheeling Brewing Company in Redwood City, which uses Admiral Malting's malt. Dave McLean's Admiral Malting also has a taproom, in a beautiful old redwood timber building. They have a little restaurant and Herlinda says the food is really good! You can see the malting floor from the dining room. It is located on the old Navy base in Alameda. They serve only beers that use their malt. Martin Voigt points out the importance of malt in beer. Dave McLean says you build your recipe starting from the malt and you achieve the flavor of the beer on top of that foundation.
This special Tuesday edition of Brew Ha Ha features Christopher Jackson, from Seismic Brewing. His family owns Jackson Family Wines. He felt brewing and winemaking are closely related that he wanted to make world-class beer in an environmentally sustainable way. He and his partners started planning four years ago and started producing two years ago. Now Seismic Brewing has a new home of its own. They are opening a new taproom in Sebastopol. Its first day is tomorrow, July 3. It is right on Sebastopol Avenue, Hwy 12 turns into Sebastopol Ave. just as you enter the town. They have about 30,000 cars per day that pass by. They will not make their own food but Kendra from Farmer’s Wife will provide sandwiches and Sebastopol Cookie Co. cookies and Volo Chocolate from Windsor, just some choice local food products from the community. They will have as many as 12 or 15 beers at one time, with 13 to start with. Herlinda has sampled every one and Christohper has brought the Steinstrasse and Danger Zone brews. Danger Zone won a Silver Medal. It is very tart and if you like that style, it’s great. “If you like light American lagers, or if you like heavy-handed IPAs, we’ve got something for everyone.” Christopher is proud that his brewery was built with sustainable practices including water efficiency and is close to carbon neutrality. He credits Ken Grossman for helping him by sharing his wisdom and experience. He has spoken to all the prominent local brewers to learn about their best practices. Next week, Dave McLean from Admiral Malting will be in the studio talking about Outside Lands, the beer and music festival set for next August.

Photo by Clara Rice When Dave McLean moved to San Francisco’s Haight-Ashbury neighborhood after college, he was chasing one particular thing: the Grateful Dead. McLean was a small part of a wave of hippies, idealists, and rock mega fans who came to the city at the same time for a similar reason, but unlike many of the others, Dave actually stuck around. And then he built a business here: the Magnolia Brewing Company. With the nearly 20 years Dave was at the helm of Magnolia, he became part of the fabric of the modern Haight District. For a neighborhood that is synonymous with counterculture and the “summer of love,” turned out Jefferson Airplane and Janis Joplin, that’s something. Magnolia was, and is, a stalwart brewpub in a historic neighborhood of a rapidly changing city. But no one is immune from the effects of a changing economy. An investment in a difficult property in another evolving neighborhood proved too far ahead of its time, and Magnolia faltered financially. As a last resort, Dave called Kim Jordan and sold the business to New Belgium, Dick Cantwell, formerly of Elysian, and Oud Beersel of Belgium. It was a deal that was deeply personal for Dave. Ultimately, on as good as terms as possible, he left Magnolia, but not before setting out on a new venture: Admiral Maltings. The founder of another longtime brewery in San Francisco, Ron Silberstein of ThirstyBear Organic, knew Dave’s affinity for quality malts, and tapped him to help him establish a new craft malt house in Alameda —- the first of its kind in California. Brewers flocked to it because the offer was notable: local farm grown barley, sent to a local malting facility, sold to local brewery to be purchased by a local drinker. I’m not sure Dave would regard it as a renaissance for himself, but all things considered, it’s an incredible next step. And don’t count him out for any new breweries down the line. The Bay is, after all, the home to progress and reinvention.
