Hendrick Verspecht joins Herlinda Heras and Harry Duke today on Brew Ha Ha. Hendrick is a co-founder of the first authentic Belgian-style brewery in Sonoma County, cuVer Brewery. The last time he was on Brew Ha Ha was this episode on September 16, 2021, when cuVer was just about to open their Windsor location to the public. Since then the brewery has won an important award and has seen an increase in orders for its award-winning brew. He learned brewing in his garage at home in Belgium and studied plant biology at university in Belgium. Now the family has this brewery in Windsor with a lot of others nearby. Tara Nurin will call in from Minneapolis, Minnesota to report on the Craft Brewers Conference. They had the most entries they have ever had at this year's edition. Tara's call is posted separately on this podcast episode. Hendrick and his extended family opened the brewery just over a year ago to make the Belgian styles that they missed. They had an opportunity to purchase a brewery and they have had a great first year. They are located off Bell Road in Windsor in the beverage district near Artisan Alley. Check the website for up-to-date hours. The Award-Winning Pepperwood Ale cuVer Brewery won the award for Best Session Beer for their signature recipe called Pepperwood Ale. It also won an award as a home brew at the California State Fair in 2018. He is especially proud of the fact that they won an award with a Belgian beer, in a category that is not strictly for Belgian beer. It was for any that are ABV 5% or less. It is made to be refreshing and relaxing and not too strong. Hendrick says "it's a farmworker's beer. I just went for local spices that I find in my backyard." The native California Bay Laurel is also called the Pepperwood tree. He also uses Meyer lemon peel, and finding enough of those can be a problem. But it also uses Saison yeast, which is a key ingredient. Belgian beers are fermentation-driven and a lot of the flavor comes form the yeast itself. They are snacking on Herlinda's home-made frittes with the beer, which are a daily chow in Belgium. "It happens to be thee perfect beer pairing food," says Hendrick. Their orders have increased since they won. Lambic and Gueuze Styles He has also brought some other special Belgian beers for tasting. Lambics are a style of spontaneously fermented beer, made in the Bruxelles area. You don't add yeast to it. It is exposed in a shallow, flat vat called a cool ship. Russian River Brewing Co. has one and Shady Oak has a mobile one. It picks up yeast in the environment, then gets pumped into barrels, where it slowly starts to ferment. This bottle is a 2020 bottling, so it has been in the bottle for 2 years. A Lambic is a single brew and the Gueuze is a blend between 1, 2 and 3 year old brews. "It lives somewhere between beer, wine and kombucha." There is even a pellicule that is film floating on top where the microbes are growing. (Pellicule is Latin for "film" literally "little skin.")

You need talent, and Landau has truckloads of that. Since wowing the judges with his interpretations of classics by the likes of Frank Sinatra and Dean Martin and walking away with the million dollar grand prize in front of 14 million weekly viewers on AGT, Landau has released his Columbia Records debut “That’s Life” (the CD hit #1 on the Billboard Jazz chart and was produced by Grammy winner Steve Tyrell, who also helmed Rod Stewart’s Great American Songbook album). Landau has performed all over the country, from the California State Fair to New York’s famous Apollo Theatre, Caesars Palace in Las Vegas to the Marina Civic Center in Florida and all points in between. After years of coordinating and observing the judges, Pooch noticed a large amount of variability in the results. This may not be surprising, since taste is subjective. But after some tweaks to the process, he even began to notice that judges were inconsistent with themselves!Enter vintner and retired oceanographer Robert Hodgson. Pooch teamed up with Hodgson to devise a way to study and improve the consistency of wine judging and push for a more objective competition. Tom Simoneau this week has brought two guests from Silver Oak Cellars, David Duncan, proprietor, chairman and CEO and Nate Weiss, vice president of wine growing. Barry Herbst is also in. Tom says Silver Oak is maybe the original cult Cabernet Sauvignon producer in the Napa Valley. 1972 was the first vintage. They made the 1972 through 1976 before they started selling the 1972. (They still wait 4 years to release so they just released their 2014.) Their 1974 vintage won a Gold Medal at the California State Fair in 1979. This news came out before wine critics were so influential and it is what put them on the map. They use American oak for all of their Cabernet. As their founding winemaker Justin Meyer thought American oak tasted good. Justin Meyer was much under the influence of André Tchelistcheff and Buena Vista. Their wines get 2 years in barrels, then 2 in bottle and are “deliciously drinkable upon release.” They own their own cooperage now, in Missouri. It’s called the Oak Cooperage. Some wineries in Europe also have cooperages but they believe they are the only American winery that does. David Duncan tells the story of his father’s friendship with Jack Novak. They bought a vineyard in Alexander Valley called Los Amigos vineyard in 1970. In 1972 Justin Meyer was a brother at Christian Brothers winery working under a winemaker named Brother Timothy. Then he met a woman named Bonnie, left the order, married Bonnie and met his dad all in about five months time. Justin wanted to make Cabernet and age it in American oak with a long aging program. David Duncan offered hi 50-50 partnership and they founded the winery over a handshake. They had a wonderful friendship and collaboration for many years. Justin sold to the Duncan family in 2001 when and they are still very close friends. David majored in English then went to business school and wrote a project about a business model for Silver Oak. He moved from Denver to California when his dad asked him to come run the winery. His brother Tim has been the Silver Oak sales guy since 1986 and David manages finance and growing. Nate Weiss grew up in Napa and Sonoma Counties. His dad has been a winemaker at Mondavi since the late 1960s and followed his father’s vocation. Twomey began in 1999 with Soda Canyon Ranch vineyard, making a Pomerol style red wine like the one he learned when he interned in France. The next year they acquired a Pinot Noir vineyard then Sauvignon Blanc in 4 vineyards, two in Napa and two in Sonoma. Tom says there is a lot of SB in that area. It’s the perfect wine to go with oysters. Tom says it’s a little grassy and has some grapefruit. The 2016 Bien Nacido Pinot Noir is next. They also make several single vineyard Pinot Noir wines. The Bien Nacido vineyard is in northern Sonoma County. It is one of the only vineyards that is “own rooted” and they have to take careful precautions to prevent philoxera from spreading, as Tom explains. Vineyards that are not replanted with philoxera resistant rootstocks are succeptable to it. Very few people escaped having to replant. They have to wash their shoes and not use outside vehicles. (Philoxera is an aphid-like pest that eats the young root hairs thus killing the vine.) Nate takes care to specify that the vineyard does not have philoxera. Then it’s time for a Russian River single vineyard Pinot Noir called Last Stop, after a railroad terminal in Forestville. It will be released in 3 weeks. Barry thinks it could handle up to 15 years in the bottle. They finish with a Twomey. Nate Weiss mentions the winemaker, Erin Miller. They have many single vineyard releases in their wine club. David tells how Twomey was his grandmother’s maiden name, his dad’s middle name and his son’s middle name. Barry Herbst has lots of Silver Oak wines at Bottle Barn. The Twomey tasting rooms are on Westside Road outside Healdburg and in Calistoga. Their winery was founded in Oakville.

It all started with converting potato fields into rows of vineyards in a sleepy field in the heart of California. It was during the late 1960s when a bad potato crop pushed the Bogle family to plant those first grapes -- and now, five decades later -- Bogle Vineyards has become one of the world’s most popular wine brands on the market. In addition to the Green Medal Leadership Award, Bogle was also honored by the California State Fair for the family’s contribution to the wine industry. Jody Bogle is of the third-generation winemakers & Director of Public Relations for Bogle Vineyards in Clarksburg, California. Jody grew up playing and working in the fields with younger brother Warren, but didn’t see a future for herself due to the size of the fledgling winery. She graduated from Linfield College with a BA in English and Secondary Education. While teaching middle school, she worked in the tasting room on weekends until it became clear the winery would be her full time profession. Committing to the family business in 1999, Jody created the Bandwagon wine club and took over management of international sales. Today, Jody enjoys the connection she is able to make with consumers far and wide.

Dave Maclean is back on Brew Ha Ha with Steve Jaxon and Mark Carpenter. Steve opens by mentioning that Dave has sold Magnolia Brewing, which he started in 1997. Also in is Baron Ziegler of Banshee Wines. Dave’s new company is Admiral Malting. They turn raw barley into malt that brewers need to make beer. They use an old traditional practice called floor malting, where they lay it out on the floor. They sell to a lot of local brewers. Until now there has not been access to local barley malt. Mark Carpenter notes that almost all commercial cereals have malted grain, which has more flavor, and that today they will taste some beer from Seismic that used Dave’s malt. It is called Alluvium Pilsner from Seismic Brewery. It just won a Silver Medal at the California State Fair. It will be one of the beer featured at Outside Lands Music Festival. The other beer is a Pilsner, also from Seismic. Herlinda points out that any local brewery would want to source their Most or all of the malt would come from England or Germany or Canada or the upper Midwest. This is the first time that local California brewers can access malt that is made from locally grown grain. Baron Ziegler of Banshee Wines has brought a Pinot Noir that they make using sustainable and organic practices. They also make Chardonnay. They have a tasting room in Healdsburg. They produce their wine in a shared facility called Sugarloaf. The Outside Lands music festival will have about 65,000 people and more than 20 different breweries. Dave feels that it does a good job of capturing a sense of place, with all local food and local breweries and wineries.
This episode is a bit fun, as we recorded it this summer during the San Diego County Fair, well before we knew that WZ Productions, LLC was going to be our 2018 Barham Award winner. William Zakrajshek is the founder of Out at the Fair, a family-friendly, all-day festival celebrating the Lesbian, Gay, Bisexual, Transgender, Queer/Questioning, Intersex, Asexual community (LGBTQ+). The event originated at the San Diego County Fair and has now grown to include events at the California State Fair and the New Mexico State Fair. Joining Will in this interview is San Diego County Fair’s Multicultural Marketing Specialist, Luis Valdivia. Luis shared with us how he came across Will’s original ‘Unofficial Gay Day at the Fair’ through Facebook and what the event has meant for the San Diego County Fair as well as the San Diego LGBTQ+ community. Finally, Will and Luis will share how you can connect with resources in your community to ensure everyone feels welcome, safe, and included while enjoying your fairgrounds.

Our fourth talk is with the Brewmasters, two people who've won lots of awards for creating some of some of the best craft beer to come out of Northern California. One is a seasoned vet who helped a small Chico-based brewery grow into a billion-dollar company. The other is a young whippersnapper who, 13 months after moving his beers from the garage into a professional setup, won two gold medals at the California State Fair. To celebrate Octoberfest, we raised some pints and celebrated California craft beer with a great discussion by these two guys who've helped to make it famous. PANELISTS * Steve Dresler - the just-retired Brewmaster of Sierra Nevada Brewing Co., who has overseen the development and production of almost all of its new beers for more than 30 years, and has won the the brewery eight World Beer Cup awards and 31 Great American Beer Fest medals during that time. * Michael Mraz - the owner and founder of Mraz Brewing Company in El Dorado Hills, who went from homebrewer to superstar homebrewer (he was crowned Homebrewer of the Year at the California State Fair just two years after starting the hobby), then went from professional brewer to superstar professional brewer in 13 months (he won two gold medals for his Belgian Tripel and red ale at the CA State Fair). Based in California, Alexandra Kicenik Devarenne is an international olive oil consultant and educator focusing on olive oil sensory education, communication, and quality improvement. She is cofounder of Extra Virgin Alliance (EVA), an international non-profit trade association with members in fourteen countries that is dedicated to promoting quality authentic extra virgin olive oil. Starting with research and outreach at UC Cooperative Extension, she has written on many aspects of olive oil for both popular and scholarly publications, and is the author of the pocket reference book Olive Oil: A Field Guide. She is a member of the American Oil Chemists’ Society expert committee on olive oil, and cooperates with AOCS and others in the USA and abroad on olive oil research projects. An official taste panel member since 2003, she has taught olive oil tasting classes at numerous venues, including international conferences, Olive Oil Sommeliers of Japan, California State Fair, Culinary Institute of America, LA County Fair and UC Davis. She serves as a judge and advisor for various California and international olive oil competitions and is chair of the Napa Valley Olive Oil Competition.
