Stainless steel is an alloy of iron that is resistant to rusting and corrosion. It is also known as rustles steel or corrosion-resistant steel. It contains at minimum of 10.5 % chromium and usually nickel, and may also contain other elements, such as carbon, to obtain the desired properties. Stainless steel's resistance to corrosion results from the chromium, which forms a passive film that can protect the material and self-heal in the presence of oxygen.The biological cleanability of stainless steel is superior to both aluminum and copper, and comparable to glass. Its cleanability, strength, and corrosion resistance have prompted the use of stainless steel in pharmaceutical and food processing plants. This is the reason why stainless steel is the ideal material for all brewing equipment.Passivation is coating a material so that it becomes "passive", that is, less readily affected or corroded by the environment. During passivation an outer layer of shield material is created as a micro-coating, created by chemical reaction with the base material, or allowed to build by spontaneous oxidation in the air. As a technique, passivation is the use of a light coat of a protective material, such as metal oxide, to create a protective shield against corrosion.What happens during the passivation? What methods of passivation are available and what are the advantages and disadvantages? What tests are possible to ensure a solid passivation layer? These questions and more will be answered in the presentation.Oliver is the Technical Director of the Brewing Division and consultant for Zee Loeffler. He studied at the University of Munich, graduating with a Dipl.-Ing. degree in Brewing Science at the Berlin Institute of Technology where he received his second Master's Degree in Industrial Engineering. He spent 7 years at the VLB (Research and Teaching Institute for Brewing in Berlin) as a Project Manager followed by 7 years at the Berlin Institute of Technology as an Assistant Professor. He is in his current position for 12 years. This is always a good time to reflect and get excited about a new calendar year. To help put the industry into perspective and to think about how to strengthen beer in the year to come, I've asked three smart and plugged in folks to share their insights, knowledge, and even offer some homework. If you're a small brewer navigating these tough craft beer waters, there's a lot you can learn and hopefully take to heart. Guests:Steve Parkes. He is the owner and lead instructor at the American Brewers Guild Brewing school in Vermont. He graduated from Heriot-Watt University, with a degree in Brewing Science in 1982 and has spent the last 42 years working in small and medium sized breweries on both sides of the Atlantic. He has built breweries from scratch using both used and new equipment, and has years of experience in practical problem solving. He has been a regular speaker at the annual Craft Brewers Conference, is a veteran GABF and World Beer Cup judge, held office at the regional level with MBAA, and at a national level with the AOB board of advisors. In 2009 he was the recipient of the Association of Brewers Russell Scherer award. He is also the owner of Drop In Brewing in Middlebury Vermont.Laura Lodge began her craft beer journey in the distribution tier in the late 1990s working with a small, independent distribution company in the mountains of Colorado. As anyone in small business knows, “everything” is your job description. She shares her experience to benefit the artisanal/craft business owner in Distribution Insight for the Craft Brewer. Today, Laura is the owner of Customized Craft Beer Programs, a consulting business offering insight and assistance with all things craft beer. With experience over all 3 tiers, she has consulted for breweries and distributors, created retail programs for destination resorts, is the Executive Director for the well-known Big Beers, Belgians & Barleywines Festival held in the Colorado Rocky Mountains each year (pre-pandemic), and has participated with the creation and production of educational & experiential craft beer events throughout the country. It was recorded in front of an audience of brewers at the annual Schilling Oktoberfest in New Hampshire, and the panel includes:  Maggie Pinto left a successful job in home infusion pharmaceuticals to pursue her dream of brewing beer. She enrolled in a craft beer brewing program at a local college, found a job at a small local brewery (Fidens) and worked her way up from the taproom and can sales. With that in mind, we brought together three leading names from across the brewing spectrum to find out… In this panel discussion, which took place at our Brewers Congress in London, top of the agenda was biotechnology past, present, future and how to harness it. In this episode we hear from Margaux Huismann, Stephanie Brindley and Todd Isbell, who share their brewing expertise and observations of the changes taking place in this fast-moving industry. Panel host Margaux Huismann works for Molson Coors as a Research and Development manager She got her start in the industry by doing a Masters in Brewing & Distilling and completing her PhD on Understanding the Physical-Chemical stability of Dry-Hopped Beer.  Stephanie Brindley is a brewing scientist with more than 10 years of experience in the industry. As a technical representative at Murphy and Son, she is passionate about the science, creativity, and social aspects of beer. And completing the panel is Todd Isbell. Ava Kemper's Hello Hello Hello Collin MacDonnell, of Henhouse Brewing Co. and Ava Kemper, intern, are our guests today on Brew Ha Ha with Steve Jaxon and Herlinda Heras. Ava Kemper holds a BS in Environmental Science and Management from UC Davis and is also a graduate of the UC Davis Master Brewers Certificate in Brewing Sciences program. This year Ava has been an intern at Henhouse Brewing Co., where she developed and then brewed her own beer called Hello Hello Hello. Collin tells about Henhouse Brewing Co.'s intentions in organizing their internship program with UC Davis. They wanted to create job opportunities for everyone and Ava's internship is the first one under the new program. Ava describes entering the UC Davis Master Brewer's program after starting to work in the field of her first degree, which is Environmental Science. Ava's beer is called Hello Hello Hello. Its name comes from the title of a song by one of her favorite artists, Remi Wolf. Herlinda appreciates Hello Hello Hello, she calls it clean and aromatic, a perfectly balanced beer. Henhouse's 12th Anniversary Henhouse is coming up on its 12th anniversary. Since 2015 they have been located a short walk from where The Drive's radio studio is located, in a converted train car. Henhouse does support many local non-profits and they feel strongly about their position in the community. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more. It's tough to find positive news when looking at beer and brewery stats right now.  New permit applications are down, beer festivals are on the decline, and we've all seen the closures of some of our favorite breweries this year.However, there's a small ray of hope for Anchor Brewing after announcing their closure last week.  A few investors have stepped forward to express their interest in buying the brewery.  Two have said they'll keep things small and focused to start, and one wants to make the relaunch a reality TV show.  Oof.Beer Festival BustSpeaking of beer fests... Some of the biggest festivals in the country are on hiatus, or cancelled.  Folks just don't seem to be as in to them as they used to be.  With that country's largest festival, Great American Beer Fest, coming up soon all eyes are on the turnout there.  We think it may not be beer fests as much of the type of fests, with a preference for smaller, specialized events.  What do you think?On the science front, Omega Yeast Labs has found the gene responsible for bringing the haze to your hazies.  They're calling it HZY1.  After comparing yeast strains that produce hazier beers and isolating this gene, they've got the magic formula.  We'll have to wait to see what this may mean in the future.Beer Cocktails on the riseSurvey says more people are trying beer cocktails these days, or they're expressing an interest in trying them.  For now, the research is on gateway cocktails like beeritas, shandies, and radlers.  But once they're through the gate who knows what may happen.For our Midwest listeners, have you had Red Beer?  Is it still a thing?  My dad drank "Tomato Beers" back in the day but I just thought it was a crazy thing he did.  Google says this beer cocktail is still pretty popular in the region.  Pops was a trendsetter.Beers of the WeekAnchor Steam BeerSierra Nevada Flipside (Red IPA, Fan Favorites Pack Re-release)Deschutes Black Butte XXXV (Imp. On this episode of the BYO Nano Podcast we're talking about best practices and advice for someone who wants to take over a small, existing brewery. The idea came from a listener who wrote: “I'm someone who is overwhelmed by the non-beer aspects of starting a taproom from scratch - legal, regulatory, architectural design and layout, branding, marketing, and a blank sheet of paper. I've explored a couple of taprooms and small brewpubs for sale. What's a smart way to go about this?” That's a jumping off point and our panel will start with the from scratch aspect then transition into what it takes to acquire an existing brewery. The lessons shared are also applicable to someone just starting out as well.   The panel includes: Jon Carpenter who his career as a summer brewing intern at Drakes Brewing Co in 2002 while attending UC Davis, studying Brewing Science. After graduating with a BS in Food Science & Technology (Brewing Emphasis) and a BA in Political Science in 2005, he went on to work for Anheuser-Busch in their Research Pilot Brewery. Daniel Carey operates the New Glarus Brewing Company in Wisconsin along with his business partner and wife, Deb, as well as two daughters and grandchildren. He shoveled out his first mash tun in 1979 at the age of 18 while earning a Bachelor's Degree in Food Science at University of California Davis. Dan was Valedictorian of the Siebel Institute Course in Brewing Science. He served his apprenticeship at the Ayinger Brewery near Munich then passed the Institute of Brewing Diploma Examination followed by the Master Brewer Exam. He also was a Production Supervisor for Anheuser-Busch. Dan won the Association of Brewers 2003 “Small Brewer of the Year” Award, the 2005 and 2006 “Mid Size Brewer of the Year” Awards as well as the 2006 Russell Schehrer Award for Innovations in Brewing. www.CraftBeerProfessionals.org

Graining In is fresh off the heels of its most successful Week One episode to date, with Scott Janish! The Matty and Noah revel in the success, try to find valuable lessons from the recent the podcast's growth in listenership; instead, their predictably petty takeaways are merely fixations on self esteem issues and disbelief in the fact that Scott, a man who has dedicated his brewing career to pushing the scientific understanding of IPAs, isn't in love with lagers. Thankfully, the latter point proves to be a good topic of discussion and the guys don't quite board the technical train, but at least take a ride on the Brewing Science & Psychology Shuttle Bus. Noah and Matt discuss how lagers grew to become the definitive "brewer's beer", the importance of place in beer enjoyment, each share their favorite lager, and Noah rambles phonetic on his philosophy with lager yeast selection, why he never homebrewed lagers, the importance of decoction and alternative mash schedules, talks temperature, and gushes about spunding valves. The response to a very technical conversation with Scott was nothing short of eye opening, so hopefully this will be the first of many episodes that live more in that practical arena, while still appealing to brewers, drinkers, and just people in general on a more consistent basis. The California native spent 32 years, 20 of which were active-duty, serving in the Army.   In July 2011, Trost spent his last deployment in Spin Boldak, Afghanistan. His objective as a civil affairs specialist was to work with the local community in developing infrastructure in the region.   On Feb. 20, 2012, he was escorting an aid from the U.S. Agency for International Development when Trost and his team came under fire, killing one U.S. solider and injuring Trost and a fellow corporal.   He was medically evacuated to Walter Reed National Military Medical Center, where he spent 10 months receiving 31 surgeries, to repair the injuries of five gunshot wounds to his lower extremities. In 2014, he medically retired from the Army.   Due to complications from his combat injuries, in April 2016, Trost made the decision to have a below-the-knee amputation on his right leg and was fitted with a prosthetic.   Since retiring from the Army in 2014, Trost has concentrated on his growing farm and has earned a certificate in Brewing Science. His goal is to use the donated backhoe to grow hops to sell to local micro-breweries and home brewers in the Knoxville, Tenn. area.
