"I'm still passionate about what I do, I still love what I do, and I still think I'm one of the luckiest people in the world. I get to make beer for a living and, especially taking the step coming here to Bali, I get to mentor people that might not have necessarily ever had an opportunity like this before, so I feel really lucky that I have the power to be able to do that and pay it forward."Given her fondness for travel, adventure and life on the ocean, perhaps it was destiny that Sam Füss would end up brewing in Bali. Certainly, more than two years after moving to the island's northwest – the "real Bali" as she puts it – she's embracing every opportunity that has come her way.Sam was enticed to move there with her partner Dani by the founders of Beaches Brewing Co back in 2022, and in recent weeks oversaw the release of their first two beers, Pale and Cerveza. The switch of scenery gave her the chance to help build another brewery after being involved in the early stages of a number in Australia, including Little Creatures in Freo and Philter in Marrickville.She joined us from her beautiful home – ocean views on one side, volcano on the other, a pool a few metres behind her, the call to prayer carried on the wind outside – to take us inside the experience of getting Beaches off the ground, training up locals with no prior experience, educating people who've never encountered craft beer before, and working in a beer culture that, in its own way, is like the Australian scene when she moved from the bar at Little Creatures to the brewery around a quarter-century ago.We also trace her career from those early days through building a race track inside Matilda Bay's former brewery in Dandenong to True South, Young Henrys, and the trophy-laden days at Philter prior to the big move. Oscar McMahon is one of the Co-Founders of Sydney brewery Young Henrys, whose mission is to create a beer company that's in touch with the people drinking the beer, showcasing Australian hops and malts without all the bells and whistles. The business was started in 2012 by founders who shared a love of beer and music, and the view that the Australian beer scene should be more innovative and adventurous. With their combined experience in brewing and hospitality, they started Young Henry's in a warehouse in Sydney's Newtown, with 8 employees producing a few dozen kegs each week. They now have more than 60 staff and distribute 1500 kegs of beer a week to over 2000 bars, pubs and bottle shops around Australia, and they're on track to sell 9 million litres of beer this financial year. Part 3 and the final episode of the Brewery Licensing & Government Compliance segment. In this episode I managed to line up a chat with Mayor Darcy Bryne from the Inner West Council. Darcy, a craft beer enthusiast, has been a big advocate for the craft beer scene that has sprung up in Sydney's Inner West for the past 10 years. He and other contributors have played a very big role in lobbying for better regulations across all levels of government to try making it easier for new breweries to open and operate. He also helped launch the Inner West Brewers Association that includes original members such as Wayward Brewing, Grifter, Young Henrys, Willie The Boatman and more. Best known for craft beers including Newtowner Australian Pale Ale, Young Henrys has been operating a distillery in parallel since 2015.However, likely because of the scale of Young Henrys brewing operation, its flagship Noble Cut Gin has flown somewhat under the radar.The company hopes that will change with an improved recipe for Noble Cut that was awarded a Gold Medal at the prestigious San Francisco World Spirits Competition earlier this year.Also in 2020, Young Henrys launched the second iteration of its Barrel-Aged Gin along with another expression that looks set to become a permanent fixture in the range, Newtown Strength Gin.The company's new head distiller is Carla Daunton, who started at Young Henrys after previously learning distillation in her previous role at an ethanol facility.First up, you'll hear from Carla how she found her way into brewing and then distilling at Young Henrys.

Episode 46 - Meet the amazing founders of Young Henrys beer and how they always do things differently for the right reasons Like most good stories, Young Henrys started over a beer. Meeting on opposite sides of the bar, Richard Adamson and Oscar McMahon got talking over their love of beer and music, and discovered they also shared the view that the Australian beer scene felt a little stagnant – that it should be more adventurous, innovative and fun. With Richard’s experience in brewing, and Oscar’s hospitality know-how, they decided they should do more than just talk. Overcoming a tangle of red tape, Young Henrys eventually found a home in a modest warehouse in the backstreets of Newtown. With a few friends, a small brew kit and the maxim to ‘serve the people’, the first Young Henrys beers were brewed in March 2012. The idea was pretty simple: brew beer our local community would enjoy and be proud to call their own. As much as they've grown, that’s remained fundamentally the same. If you live in Sydney‘s Inner West and ask someone what Young Henry’s is, you’ll get a slap on the wrist pretty quick smart. The local brewery has celeb / cult status in its home turf of Newtown, and is quickly making its mark throughout the rest of Australia as well. You know what – screw it – they’ve also got recognition globally. Don’t believe me? Bloody 90s brothers Hanson dropped in during their world tour last year.Look! Here they are! Being all grown up and hot! I can totally sleep at night knowing they were just a few doors down from me on this day!Anyway, back to the point. On top of this blast from the past, the beer company has also become big on collabs as of late – including but not limited to tinnies with The Dunies, Foo Fighters and more. It’s a nod to the huge influence music has had on the company.During our Founders University Podcast, Young Henry’s Co-Founder Oscar McMahon explained to P.TV‘s Chris Wirasinha that music has played a massive part in his life path. You see, the reason Oscar started working in bars was because he was in a band, and the hours just made sense. From there, his interest in frothies grew.“I really enjoy being there when people are either having that drink that wipes away their day, or they’re commiserating or they’re celebrating. You know, when you’re working at a bar you get to see people at their best or at their lowest – it’s a really interesting set of human interactions which I really, really love.”“And funnily enough, through bartending I actually ended up falling in love with beer and booze, and met Richard Adamson who ended up becoming co-founder of Young Henry’s. I met him over a bar [Glebe‘s Roxbury Hotel around 8 years ago], so, I guess in a weird way, music has defined me as a person.”From there they used to gather in the back room as part of a beer club, with about 120 people having genuine interactions around the wonderful thing that is beer. Over a few too many one night, Oscar explained, “Rich said something to the effect of, ‘How good would it be to create a beer company that was in touch with the people as beer club is?'”They followed up on it the next day; the concept of a local brewery that reflected peoples tastes, and two years later they were in business. I moved to Bondi Beach late last year after falling in love with the Sydney Eastern Suburbs beach lifestyle and I made a decision to stay. Min Chai was an “unhappy accountant” before a tragedy inspired him to change the course of his life and open N2 Extreme Gelato. He had zero experience and friends even warned him against going ahead, but his one-of-a-kind way of making flavours soon led to four-hour queues at his first store. Min's flavours can be wonderfully attention-seeking (such as Ferrero Reveal or Chinese Couch Syrup), cheeky and controversial (think 2 Girls, 1 Cup) and straight-up great (Buttered Popcorn, Tease Ma Malt). He's even collaborated with everyone from Christina Tosi to Young Henrys.
