Milam and Greene's Heather Greene joins us to explain her team's decision to age otherwise identical whiskey in Texas and Kentucky, while Jared Himstedt and Gabe Richarde of Balcones Distilling share the findings of their experiment maturing the same single malt whiskey in four different locations. We'll also taste the Milam and Greene whiskies, which are being released this week in a two-bottle set. In the news, new U.S. trade tariffs on the European Union are being delayed until July 9 to allow more time for negotiations, while Diageo says tariffs could cost the company $150 million this year.

We spent the weekend in Waco for the celebration, and sat down with longtime head distiller Jared Himstedt to get answers to some of your questions. The 1st Straight Rosen Rye Whiskey made in the United States in over 50 years has officially been bottled by Stoll & Wolfe Distillery. Woodford Reserve announces the release of its annual holiday bottle. ZZ Top and Texas-based Balcones Distilling are collaborating on a new whiskey titled Tres Hombres. New Belgium Brewing and Four Roses Bourbon announced the 2021 release of Oakspire Bourbon Barrel Ale. Texas Whiskey is a growing category looking to make its mark in the world of American Whiskey and Kentucky Bourbon. We're joined by Nico Martini, who just published his book Texas Whiskey, an ever-evolving chronicle and guidebook of the “history” and people of Texas Whiskey. Nico is also co-founder of Grayson Whiskey, author of Texas Cocktails, and a lover of all things Texas. Grayson Whiskey is a blend of Texas bourbon and wheat whiskies and just hit the shelves only a few months ago after a successful launch. In this episode, we taste Grayson Texas Blended Bourbon Batch 1, which is coming in at 3 years old and 119.4 proof. Batch 1 contains whiskey from Ironroot Republic Distilling, Balcones Distilling, and Five Points Distilling, the makers of Lone Elm Whiskey.  As you'll hear in the episode, after selling out Batch 1, Grayson will release Batch 1B in October 2020.  Batch 1B will contain the same distilleries and same percentage blend as the original batch, but some variation is expected.  On March 2, 2022, Grayson will release Batch 2, featuring 4 distilleries; with the addition of Still Austin. Our goal was to create a bourbon that blended some of the best whiskeys in our state, in a way that had never been done before. Cheers, y'all.  Our goal from the beginning was to highlight the work of some of the best distillers in the great state of Texas in a collaboration that truly represents our home. The first step was to reach out to The Likirish Brothers, Robert and Jonathan, at Ironroot Republic Distilling, because we knew they were blending some of the best whiskey in Texas. After long discussions about what was important to us about whiskey, which flavors profiles we were most interested in, and a discussion of the myriad of ways to achieve the flavor we were looking for, Jonathan then took our ideas and he started developing different paths to our version of Texas in a bottle. About the Whiskey: Grayson is a blend of straight Texas whiskeys. When we began to search for the distilleries we, both, wanted to work with and believed could add the layers of complexity we were hoping for. Batch one of Grayson contains some of our favorite Texas distilleries, including Ironroot Republic Distilling, Balcones Distilling, and Five Points Distilling, the makers of Lone Elm Whiskey. Grayson is a blend of 100% straight whiskies that are 100% Texan. Jonathan began creating a series of sample blends of carefully selected single barrels that accentuated specific flavors in each distillery's whiskey. We worked with our distillery partners to hand select every barrel that has gone into this batch. There were barrels selected that were up to 7 years old but everything in Grayson is at least 3 years. We then sought to integrate and balance the overall blend while maintaining the flavors we curated initially. Then, the whiskey was vatted and allowed to marry for a few months prior to bottling.  With the help of some incredible friends, we hand labeled and hand bottled Grayson in late March. It's a labor of love, for sure, but it's also worth every bit of effort.  Tasting Notes from Grayson: Nose: Raisins, barrel aged maple syrup, Beignet flavored coffee grounds, jalapeño jelly, and a hint of the inside of new cowboy boots. There's a long tradition of fathers and sons in whisky distilling, but Kentucky's Jeptha Creed Distillery is one of the few distilleries where mother and daughter run the show. Joyce Nethery is the head distiller at the family-owned distillery east of Louisville, while Autumn Nethery is both co-owner and in charge of marketing. Joyce's husband Bruce grows all of the grain for their whiskies and other spirits on the family's 1,000 acres of farmland, including the heirloom Bloody Butcher corn that plays a key role in their soon-to-be-released straight Bourbon. Last year, Balcones Distilling left behind its original distillery - hand-built in an old welding shop underneath the 17th Street bridge in Waco, Texas - and moved into a state-of-the art distillery a few blocks away. In fact, the new distillery's boiler shed is about as big as the entire original distillery, and to replicate the original spirit stills on a much larger scale, Forsyth's had to come up with a coiled lyne arm unlike anything ever used before. Jared Himstedt has been at Balcones since the beginning in 2008, and became head distiller after the controversial divorce between founder Chip Tate and his investors in 2014. We'll sit down with Jared on this week's WhiskyCast In-Depth. There's been a lot of attention paid recently to women working in the whisky industry, but when Allisa Henley was promoted to Head Distiller at Tennessee's George Dickel Distillery last March, she just took over for John Lunn without even so much as a news release. While most people thought of her as being in charge of the distillery's visitor center, she had quietly been Lunn's understudy for a decade and stepped right into the role she had been training for - at the distillery just a few miles from where she grew up. We'll talk with Allisa on WhiskyCast In-Depth about the transition and the challenges of being a whiskey maker in the heart of the Bible Belt, especially since the Dickel distillery is located in a dry county. In the news, a new report projects American whiskey could outsell single malt Scotch worldwide as soon as 2020, with much of that demand for Bourbon and Tennessee whiskies. Whisky Magazine has announced the North American winners in the 2016 World Whisky Awards, and there's a surprise winner in the battle for "World's Best Bourbon" honors. Chip Tate is about to get back into the whisky business, about 15 months after his acrimonious departure from Balcones Distilling, the Texas distillery he built from the ground up only to be forced out following a dispute with his business partners that led to restraining orders, lawsuits, and ultimately a settlement with a non-compete clause banning him from making whisky until March 5, 2016. Tate took the money from his Balcones buyout and is about to open his new Tate & Co. distillery in Waco, and is also building custom stills for other craft distillers. We'll talk with Chip Tate about his enforced hiatus from whisky-making, what he learned from the experience, and what he plans to do as soon as he can start firing up his new hand-made stills on this week's WhiskyCast In-Depth. In the news, Compass Box has launched an online petition drive to persuade European Union regulators to allow more transparency in whisky labeling, and John Glaser is getting support from another Scotch whisky maverick distiller as Bruichladdich plans to test the limits of what it can disclose about one of its whiskies. Bushmills is releasing its first new whisky in eight years...a year after new owners acquired the Irish distillery, and we'll taste four new Irish whiskies in this week's tasting notes.

Finland has a love-hate relationship with whisky. Finns love it, and the Finnish government hates it. Distilled spirits advertising is banned, and regulators went so far as to force the organizers of a Helsinki beer and whisky festival this coming weekend to drop "whisky" from the event's name or risk losing their permits. It's still legal to make whisky in Finland, though...and we'll find out more about Teerenpeli Distillery & Brewery and the Kyrö Distilling Company on this week's WhiskyCast In-Depth. In the news, Chivas Brothers gives its new Speyside distillery a name, both sides in the Balcones Distilling dispute head back to court this week, and we'll find out about some wearable whisky fashion, along with tasting notes for one Bourbon, one Scotch...and one Joker.

It's Kentucky Bourbon Festival week, and there's a lot of news coming out of Bourbon Country these days. Thousands of Bourbon lovers descended on Bardstown and the Louisville area for the annual festival, which comes as Diageo opened the new Bulleit Frontier Whiskey Experience at Louisville's historic Stitzel-Weller Distillery to the public for the first time, the Kentucky Bourbon Hall of Fame welcomed a new member, and much more. In the news, Diageo and The Explorers Club have settled their legal differences, while the next hearing in the Balcones Distilling dispute has been delayed until October 7. We'll also get reaction to this week's decision by Scottish voters to stick with the United Kingdom...for now.
