Jill's Cauliflower Soup Recipe: EASY CAULIFLOWER SOUP INGREDIENTS 1 head cauliflower, about 2 lbs. Salt Pepper Unsalted butter (optional, recommended) - you can sub olive oil or a high quality vegan butter like Earth Balance, if you like OPTIONAL TOPPING IDEAS: Drizzle of olive oil or sesame oil, crumbled blue cheese, parmesan, za'atar YOU WILL ALSO NEED: Medium saucepan, blender Total Time: 10 Minutes Servings: 4 servings Kosher Key: Pareve or Dairy Remove the leaves and tough core from the cauliflower. Chop into small florets and carefully clean them. In a medium saucepan, bring 1 quart (4 cups) of water to a boil. Stir in 2 tsp of salt till dissolved. Pour in the cauliflower florets. Bring the water back to a boil and cover. Let the cauliflower cook for about 5 minutes till very soft and tender. Remove the florets from their cooking water using a slotted spoon; reserve the salted cooking water. Place the cooked cauliflower into a blender, filling it halfway. Carefully pour in cooking water, adding till it reaches about halfway up the cooked cauliflower. Cover the blender carefully and blend, scraping the sides as needed, until the soup becomes a smooth puree. You may need to add more cooking water to achieve a soup-like texture. The longer you blend, the more silky and smooth the soup becomes. Add salt, pepper, and butter to taste. I use about 1 tbsp butter (or I've used up to 2 Tbsp) for a whole head of cauliflower (1/2 tbsp per batch). Salt is your friend here, if the soup is tasting bland don't be afraid to add more. You can also add some good quality olive oil or Earth Balance instead of butter if you'd like a richer flavor without dairy. Also add ground fennel. Repeat process with the remaining batch of cauliflower. Serve soup hot. Leftovers will keep for 1-2 days in a covered tupperware container; soup will need to be stirred after reheating. Cocoa Griot- I am bringing that "auntie" wisdom and energy on a weekly basis.
Food Secrets Can Be HarmfulAre you ingesting harmful substances that you really don't know about? Please check out this episode and learn about dirty little secrets that can harm your overall health! 0:02 Good evening and welcome to my humble podcast abode. I am Cocoa Griot just a 50 something who enjoys talking about life, love, and a host of other topics. Tonight, we are going to talk dirty. Specifically, dirty little secrets. I'm going to share some dirty little secrets with you that I believe can impact your life. So sit back, relax, and let's chat about those secrets. Oh, honey. Yes, I want to talk about honey for a moment. Ever wonder if you're getting the real thing, or just an imitation? Here's a little test to find out. Put some honey in a bowl with cold water, swirl it around a few times, and guess what should appear? If it is real, a honeycomb will show up. That's the natural genetic memory of honey. What happens if it just ripples in water. Well you have uncovered a dirty little secret. That is actually just honey, diluted with sugar syrup. 1:10 Let's talk dirty some more I'm enjoying this. We are really going there. This time you go to the grocery store in hopes of finding healthy fruits and vegetables, because you care about what you consume. Do you know that the price lookup numbers can tell you whether your product is conventionally grown with pesticides, or if it's organic? Who knew those four or five numbers held so much secret information? So let's say you have a taste for bananas. How do you know the difference between regular bananas and organic bananas? Okay, I know some of you are smarting off right now and saying the price, because those bananas that are organic would be $9,000, but there's really another way to look at this. The conventional bananas have, like, 4011, but if they're organic, there will be a nine placed in front of the 4011. Wow, exposing these secrets is really making me think about my food choices over the years. I thought the plu number was just telling me the price. Those numbers represent foods that can optimize or harm your health. So if a product starts with three or four. Please don't buy those anymore. If a product starts with a nine. Those are organic and just fine. You can look for the butterfly that signifies non GMO on products as well. 2:38 The next dirty little secret, involves a product I used to for years without question. This one really hit me hard because I thought I was doing something great for my health. Several campaigns warned us about artery clogging butter. Since my dad died of a stroke, and my mom died of a heart attack, I really have been on a mission to make sure I'm using heart healthy products. So why use this stealth killer, when you can have a convenient option in pam? Pam cooking spray is convenient. Not missing like butter. What drawbacks could there possibly be to this healthy kitchen staple? Well, imagine 3:27 PLEASE FAST FORWARD. the shock after the horror of the PAM can exploding and causing third degree burns, disfigurement, and even blindness? I don't know about you, but those documented incidents involving Pam, make me want to reach for a big old tub of butter. Okay. Many people don't realize the propellant that makes the oil sprayable is butane and propane. So even though these propellants are food grade, they are still dangerous when used near heat. Well, I used to buy Pam for cooking and so there was definitely heat involved. My guess is many people have done the same thing. This dirty little secret causes serious injury, and so I threw my can of Pam in the trash after I learned about the potential hazards of the spray. Now I get some better butter like Earth Balance. 5:03 So the next dirty little secret involves something that is so ridiculous. It has the potential to be funny, but it's actually not. This is the generally recognized as safe or gras designation of some foods. So it might be interesting to note there are about...

In this episode, we’re joined by Francesco Amodeo, the co-founder and president of Don Ciccio & Figli, an acclaimed distiller of handcrafted Italian herbal liqueurs and ready-to-drink cocktails based in Washington, D.C. Founded in 2012, Don Ciccio & Figli produces beverages in the tradition of Amodeo’s family whose roots in the spirits business began in the 1800’s along Italy’s Amalfi coast. Amodeo’s embrace of his heritage has given way to the development of a highly awarded portfolio of amari, apertivi and cordials and comes amid Americans’ growing interest and demand for Italian liqueurs and bitter drinks. As part of our conversation, Amodeo spoke about following in the footsteps of his family, incorporating a modern touch into old-world production methods, the company’s thoughtful innovation strategy and how it validates new products. He also spoke about the impact of trends on business planning and strategy and how the company has responded to the Covid-19 pandemic via an expansion of its portfolio. Show notes: 1:02: Congratulations Are In Order; Why “Lyte” Drinks Are Having A Moment; J.B. Anabel makes an egg sandwich with prosciutto and spinach while giving advice on how to make The Perfect Breakfast Sandwich. She is then joined by Abby to discuss 2014 films (and films from other years too, let's be honest), The Academy's elitist practices, and why Anabel loves J.K. Simmons so much. They end off the episode with entertainment recs! Perfect Breakfast Sandwich: bread (sandwich bread, bagel, english muffin, the choice is yours) 2-3 slices prosciutto 1 slice white cheddar cheese 2 eggs handful of spinach butter (I used Earth Balance vegan butter but your choice) hot sauce (I used TJ's jalapeno pepper hot sauce) salt + pep Heat pan to med high. Add in slices of prosciutto and crisp until slightly brown. Remove from pan and set aside on warm plate. Grease your pan before adding two scrambled eggs, topping with a handful of spinach. Cover pan with lid to steam. After a minute or so, flip the egg "omelette" and remove from pan. Season with salt + pep. Keep warm with prosciutto. Fold egg into desired patty shape (whatever will fit on the bread you're using) and put the cheese in between the egg fold for maximum meltage. Spread butter on each open side of your english muffin (or bread) and toast in pan until golden brown. Assemble your sandwich! Add the egg patty, cheese, and prosciutto to your bread of choice. Add hot sauce if desired and enjoy! Steve Hughes’ influence on the development of the natural food industry is impressive. As the founder and former CEO of Boulder Brands, he helped develop and nurture a range of next-generation natural food companies, including evol and Smart Balance as well as pioneering gluten-free brands Udi's and Glutino. Following the sale of Boulder Brands to Pinnacle Foods in 2015, Steve co-founded Sunrise Strategic Partners, an investment firm that has acquired stakes in several innovative and fast-growing brands such as Kodiak Cakes, Cali’flour, Coolhaus and Maple Hill Creamery. In an interview included in this episode, Hughes reflected upon his career and his role in shaping the current market for natural food. He also discussed Sunrise’s investment philosophy, why the funding environment for natural CPG companies is “capitalism at its absolute best,” and what he sees as the most exciting development for consumer brands. Show notes: 2:26: Interview: Steve Hughes, Founder, Boulder Brands/Sunrise Strategic Partners -- Hughes met with NOSH editor Carol Ortenberg in Denver, Colorado and spoke about how roles as an executive with ConAgra, Celestial Seasonings and WhiteWave Foods laid the foundation for Boulder Brands, which he founded in 2005. Later, he explained why brands that grow from $10 million to $100 million in sales will encounter “a lot of speed bumps and rakes to step on,” and discussed his admiration for the founders of Sunrise portfolio brands Cali’Flour and Kodiak Cakes. Hughes also discussed why e-commerce has been a game-changer in how brands market and sell to target consumers. Raising cattle for beef is the number one cause of the destruction of rainforests and global warming, but today we're going to talk about palm oil. Grown in tropical regions, palm plantations are displacing rainforests, destroying orangutan habitats and wreaking havoc on the ecosystem. With good intentions, some vegans have called for a boycott of Earth Balance, a vegan butter that uses palm oil as its primary fat, even though it doesn't source its palm from native orangutan habitats. Is it possible to source palm oil sustainably? For that matter, is it possible to source any historically unsustainable crop in a sustainable way? In today's episode, I weigh in on this issue and offer some food for thought. Not a supporter? Change that today: Patreon.com/ColleenPatrickGoudreau.
