Welcome to January 24th, 2022 on the National Day Calendar. Today we celebrate honeyed words and spreadable gold. Mark Twain once said, “I can live for two months on a good compliment.” Studies now show that our brains process positive affirmations the way we process financial rewards. For inspiration on making someone's day, check out Shea Glover's short film produced in a Chicago high school. She told fellow students that she was taking pictures of things she finds beautiful and asked them to pose for her. I challenge you to not react as you watch these faces bloom into smiles with this surprise compliment. With over 25 million views on YouTube, it's obvious that people love the good vibes of watching a compliment take effect. The video is called People React To Being Called Beautiful and it will inspire you to pay it forward on National Compliment Day. In 2014, a group of scientists in Germany ran some experiments to help them better understand the Earth's mantle, or the layer between the crust and the core. They discovered that intense pressure on a substance will pull oxygen out of carbon dioxide, which can create diamonds. You're probably wondering what this has to do with today's celebration. It turns out that of all the ordinary objects they tested the theory on, only one created a diamond. Peanut butter. Now don't get too excited. It's not as if you're going to find gemstones in your next PB and J. On National Peanut Butter Day enjoy this diamond in the rough trivia that's also delicious on toast. Welcome to January 24th, 2022 on the National Day Calendar. Today we celebrate honeyed words and spreadable gold. When comic book legend Stan Lee opened his mail one day in 1963 he got what can be called an enthusiastic letter from a fan. It read: “Fantastic Four #17 was greater than great. Even now I sit in awe of it. It was stupendous! It will live forever as one of the greatest of ALL comics.” The compliment most certainly made him smile, but so did many other fan letters. So what made this one so special? Well, it was written by a boy named George R. R. Martin, who later created Game of Thrones. So what was Stan's reply to this glowing compliment? “We might want to quit while we're ahead. Thanks for your kind words, George.” On National Compliment Day, take a moment to send kind words to someone who deserves them. And by all means, be gracious if one gets sent your way. Peanut butter lovers will eat the spread straight from the jar, but it wasn't quite as yummy at first. In the early 20th century, inventors saw the paste as a protein solution for patients who couldn't chew meat. The noble efforts of Marcus Edson, Dr. Kellogg and Dr. Straub advanced the cause, but it was Joseph Rosefield who brought peanut butter to the masses. This food chemist from California struck gold when he developed the process for stabilizing peanut butter into a smooth, creamy concoction. He licensed the technology to a company that made Peter Pan peanut butter, but grabbed up his own share of the market with Skippy brand in 1932. Today, we take it for granted on how easy it is to go from the thought of… ”I feel like eating some peanut butter” ……… to either walking into the kitchen and opening up a jar or having it delivered to your door within 2 hrs. by ordering a jar on Amazon Pantry. Peanut Butter is a healthy food and we have Four Men to thank for bringing us this delicious food we enjoy today The four men are: Marcus Gilmore Edson of Canada, John Harvey Kellogg, Ambrose Straub of St. Louis, Missouri and chemist Joseph Rosefield. In 1884, Marcus Edson developed a process to make peanut paste by “milling” roasted peanuts between two heated plates. A year later, The famous cereal maker, Kellogg, received a patent for a technique he developed for making peanut butter with raw peanuts in 1895. Dr. Straub is responsible for patenting a peanut butter making machine in 1903. Peanut butter was introduced to audiences at the 1904 Universal Exposition in St. Louis at C.H. Sumner’s concession stand. Now….96 years later… the man responsible for bringing us peanut butter the way we know and love today… was Joseph Rosefield. In 1922, through homogenization, Rosefield was able to keep peanut oil from separating from the peanut solids. The rest they say……..is history! Have you ever heard someone say……”They get along like oil and vinegar! What that means….is that oil and vinegar generally don’t mix well together. That’s why most Milk is HOMOGENIZED. The physical process breaks down the fat molecules in cream into smaller ones, so that the smaller fat molecules can spread evenly throughout the milk. This allows the cream and milk to stay together. The same thing is done with Peanut Butter. HOMOGENIZATION allows the oil in peanut butter to mix with the crushed peanuts. Rosefield later sold the patent to a company that began making Peter Pan peanut butter. Rosefield decided to go into the Peanut Butter business for himself …..selling the Skippy peanut butter brand through his Rosefield Packing Company. He also supplied peanut butter for military rations during World War II NOW……let’s take a look at different kinds of Peanut Butter. I grew up on Skippy Peanut Butter or Jif Peanut Butter. Whichever my mom had a coupon for. Now that I’m living a healthy lifestyle…..regular Skippy or Jif Peanut Butter wouldn’t be one of the healthiest choices to make. Let’s take a look at a jar of Jiff creamy peanut butter…… Here are the ingredients…… Roasted Peanuts and Sugar. Contains 2% or less of……Molasses,.,,Fully Hydrogenated Vegetable Oil …..which means hydrogen is added to break down the fat molecules to produce a more solid saturated fat. The process of Fully hydrogenated produces NO TRANS FATTY ACIDS, which is less harmful to your body than Partially hydrogenated fats. The serving size is 2 Tablespoons. There are 190 calories per serving. Total Fat is 16gms Contains 2.5 gms of saturated fat & there are NO Trans Fat. Saturated fats are simply fats that stay solid at room temperature. We see mostly saturated fats in animal fat. The marbled fat you see in a steak or the fat on a piece of chicken. Trans fat which are also known as Trans Fatty Acids….. when Hydrogen is added to the oil to help make it a solid. You see Trans Fats in Margarine or Crisco Oil. There is NO Cholesterol …..one serving has 105mg of Sodium. There are 8gms of Total Carbs…….there are 2gms of Fiber ……and……3gms of Sugar, which is ADDED. There is 7 gms of Protein in a serving Each serving contains ….20% Niacin…..10% Vitamin E …..4% Iron….and…..2% Riboflavin. Since the Jiff Peanut Butter is Fully Hydrogenated…..you do not have to refrigerate it. You can store it in your pantry and the peanut butter will stay a solid. Now……let’s look at my favorite peanut butter. I LOVE the brand “Once Again” The Once Again Company began in 1976 in rural Nunda, NY. The company is “Employee-Owned” I LOVE THAT! I happen to love…. the Once Again Creamy Peanut Butter Here are the ingredients: Dry Roasted Blanched Organic Peanuts, Salts. That’s it. That’s the ingredients Peanut Butter should have ……Period! No Fully Hydrogenated Vegetable Oil…….so that means the Oil and Peanut butter IS separated. You will need to “Stir” the Peanut Butter to mix the oil and peanut butter. I refrigerate the peanut butter after stirring and that helps keep the peanut butter a solid. Now for the nutritional value ……. Serving Size is the same = 2 Tablespoons There are 201 Calories per serving. Total Fat is 16 gms Saturated Fat is 3 gms and there is NO TRANS FATS There is NO Cholesterol and each serving has 50mg of salt. There are a total of 7gms of carbs…….2 gms of Fiber ….and…..2 gms of sugar. There is 9 gms of Protein! Each serving has … 10% Folate……4% Potassium…..4% Iron…. PER 2 TBSP: 200 calories, 16 g fat (2.5 g saturated), 90 mg sodium, 6 g carbs, 2 g fiber, 1 g sugar, 8 g protein Ingredients: Peanuts, contains 1% or less of salt Made with no hydrogenated oils, this is the best mainstream brand of peanut butter on the market. You can find it any supermarket. Eat Peanut Butter every day if you want. ONE Tablespoon right out of the jar always satisfies me …….. or you can put ½ to 1 Tablespoon into a smoothie. On this date in 1972, Shoichi Yokoi, one of the last Japanese holdouts from World War II was discovered hiding in Guam. Here are some things you may not have known about Japanese holdouts, including Yokoi. Corporal Shoichi Yokoi served in the 38th Regiment and arrived on Guam in February 1943. After the Americans captured Guam in 1944, Yokoi and nine other soldiers went into hiding. Seven of the 10 eventually left on their own, but three remained behind. The three lived on their own near each other until two of them died in a flood in 1964 after 20 years of hiding. Yokoi lived eight years by himself, hunting for food at night, and making clothing and other essentials from native plants. In 1972, Yokoi was discovered by two local men checking their shrimp traps. Yokoi attacked them, apparently thinking his life was in danger, but was subdued and hauled out of the jungle. When he returned to Japan he said, “It is with much embarrassment, but I have returned.” The phrase became a popular saying in Japan. Yokoi had known since 1952 that the war was over, but preferred to remain in hiding rather than be embarrassed by surrendering. He became a minor celebrity in Japan, and received $300 in back pay and a small pension. He died in 1997 of a heart attack at the age of 82. He was buried under a headstone that his mother had originally bought in 1955 when he was first declared dead. Three more confirmed Japanese holdouts were discovered in the following two years. One was killed in a shootout with Philippine police in October 1972. Hiro Onoda, who was also hiding in the Philippines would only surrender if ordered to by a superior officer. In March 1974, his commanding officer during the war, now working as a bookseller, was flown to the Philippines to personally deliver the orders. Onoda died in 2014 at the age of 91. The final documented Japanese holdout to be discovered was Teruo Nakamura, who was arrested in December 1974 in Indonesia. He died of lung cancer five years later at the age of 59.
