Both Llance and Lori share that Milly was a generous and wonderful person. "There was a real strength about her" continues Lori," and I didn't see her cry very often."Again, Milly had wonderful qualities about her even after major setbacks . Lori's mother and father had four children and raised them in the Seattle, WA area. Lori's youngest brother, is developmentally disabled which, Lori says, "it gave our family a different dynamic. All my mother wanted was the best for her kids. I think of how hard my mom worked to just give us a normal life, in spite of the challenges." It's amazing!)This recipe can be adapted to be made in the same-day by adding in an extra 1/2 teaspoon of instant yeast (so 1.5 tsp total) and skipping the overnight proofing in the fridge. Instead of putting it in the fridge, leave the dough to proof covered in the bowl at room temperature for 1-1.5 hours and then continue the recipe as normal from the step where you tip it into the tray (reduce the proofing time in the tray to 1.5 hours). Ingredients 390-420ml* (14oz/ 1 3/4cups) warm water 1 teaspoon (5g) honey, sugar or agave 1 Tablespoon (15ml) extra virgin olive oil 1 teaspoon (4g) instant yeast 500g (4 cups**) white bread flour (not plain or all-purpose) 2 teaspoons (10g) fine sea salt *start with 390ml and increase to 420ml gradually. Use the consistency of the dough in my video as a gauge! Different bread flours absorb different amounts of water. It's okay if your dough is a touch wetter than mine, but you don't want it soupy as that makes the stretch and folds problematic. **500g is roughly 4 cups of flour. The flour should be fluffed up, spooned into cup and levelled to ensure it's as accurately measured as possible. Scales are always best! Use the tutorial as a guide for consistency of dough and adjust water/flour slightly if needed. Oven temp: 220C/430F for 18-23 mins (bottom rack!)…this tray was a 9x13 aluminium quarter sheet pan but you can use a larger tray if you prefer it thinner/crispier. Ingredients 1 Medium Butternut Squash, peeled and cubed 1 medium onion, chopped 2 medium apples (cored and chopped coarsley) 1 medium carrot 1/2 tsp rosemary 1/2 tsp marjoram 4 oz olive oil 2 cloves garlic, minced 1 box (32 oz) Chicken or vegetable Broth 1 1/4 cups Fat Free Greek Yogurt pinch of kosher salt & pepper at the end as your finial seasoning Instructions 1. In a large pot, combine squash, apples, broth, onion, carrots, rosemary, marjoram, salt and pepper. 2. Bring to a boil over medium-high heat. 3. Then reduce heat to medium-low and simmer uncovered for about 45 minutes. 4. Use an emursion blender right in the pot or let cool, then put in blender and pulse until smooth. 5. Add 1 cup of yogurt and pulse to combine. 6. Return soup to large pot and reheat slowly being careful not to boil. 7. Add more salt and pepper to taste if needed 8. We're joined by Microbiologist, Dr Carol Hughes, and Rachel Down, the founder of Boil and Broth, to discuss the ground breaking research project called the Biome Broth study. As a world first, the aim is to put Bone Broth to the test to see if adding this age old remedy to dogs' diets will enhance their microbiome. With 29 dogs taking part, none of whom had had broth before, and on taking this powerful food for only four weeks, their biomes were tested again, and in all cases a remarkable improvement has been seen in this short time-frame. Notably the microbiomes as tested by Dr Carol at Aberystwyth University revealed the cases restoring to a natural balance with bad bacteria strains being reduced, and the good bacteria strains being enhance, along with an increase in the microbial diversity. The project aims to discover more about how Bone Broth interacts with the biome's bacteria, helping to restore its natural ecosystem, which is responsible for 80 per cent of the immune system. Funds are needed to delve deeper, focus on a project around cats, even discover what is the magic ingredient of Bone Broth or simply a combination of all its natural assets! 250g bite size pasta like macaroni, orzo 1 ham hock or 250g ham trimmings ( ask your butcher) 2 onions, coarsely chopped 1 stick celery, chopped 2 tablespoons oil 1 medium, leek, split washed and chopped 1 large courgette Bunch basil Bunch parsley 50g finely grated parmesanPour boiling water over the ham hock or ham trimmings and place in a pot. Add the onion and celery and cover with cold water. Bring to a simmer and cover. Cook for about 2 hours for the hock ( less for the trimmings) or until fork tender. Remove ham from liquor and allow to rest for 10 minutes then shred the meat. Blend the cooking liquor. Heat the oil in a pan and cook the leeks and courgettes for 5 minutes. Add half the stock ( freeze the rest) and bring to a simmer. Cook the pasta, drain and add to the pan with the herbs and ham meat. Check seasoning. Remove the stalks from the basil and set aside. Chop the basil leaves and parsley and add to pan with half the parmesan and mix well. Spoon into bowls and sprinkle over the remaining parmesan.Tomato toasts 8 slices sourdough 8 medium local tomatoes Basil stalks from above 2 tablespoons olive oil or good local rapeseed oilCut the tomatoes in quarters and place in a baking dish. Finely chop the basil and sprinkle over with the oil and season with salt. Bake in a 180oc oven for 15 minutes. Grill the bread and spread the tomato on top. Serve with the pasta.
