In Edible-Alpha® podcast #108, Brad talks with Matt McCoy, founder and president of Field to Freezer, a Hartland, Wisconsin-based software as a service (SaaS) company that's streamlining wild game and domestic meat processing. Matt's story highlights the unsung importance of technology solutions to the food industry and serves as a guidepost for growing and scaling a viable tech-related food business.  A few years back, Matt, an avid deer hunter, recognized that small-scale meat processing was rife with inefficiencies for both processors and customers. Having founded software company Lanex 23 years ago, he'd helped all kinds of companies solve business challenges through custom solutions, so he wondered: Could he build something to help this industry? He envisioned an app that connected hunters to an extensive database of meat processors, with functionalities to make ordering, drop-off, and pickup smoother for all parties.  In 2018, Matt got to work on discovery. He visited meat processors nationwide to learn their pain points, show them sketches of his ideas, get feedback, and make tweaks. Though these #meatings, he learned that processors also needed solutions to help run their businesses, and that Field to Freezer really should expand to beef, pork and other domestic animal meat processing. The response to his proposals was overwhelmingly positive, so Matt filed a patent on the app. Then in fall 2019, Field to Freezer got accepted to gener8tor's gBETA investment accelerator, where Matt met Brad. His advisor challenged him to develop a minimum viable product, or MVP, by deer season. Having the whole system ready would be a stretch, but Matt felt he could at least launch the search tool. So he started with a website that linked to some 1,500 processors and supported it with a press blitz. Word spread fast, and Field to Freezer took off. So far, Matt has mostly bootstrapped the business, which is more common in tech than in consumer packaged goods. He says investors often have their own ideas about the company's direction, which can throw entrepreneurs off-target, making it crucial to dial in MVP and stay focused. Also, when bootstrapping, it's essential to track all the time and money spent building the business to know what it's worth down the line. Now that Field to Freezer is at a place to consider investors, Matt is looking for a partner who can help propel his vision, not just write a check. Digging deeper into domestic meat processing, Matt and Brad discuss how demand trumps supply and how Field to Freezer can help. Though this part is still in the design phase, ideally, the software will alleviate farmers' frustrations while also streamlining processors' work. Getting more domestic customers on board will also stabilize Field to Freezer's revenue model. Finally, they circle back to discovery and how integral it is for all types of food and farm businesses. Going boots-on-the-ground early on helps to spread the word, ensure the product suits the target audience, and position the company for growth.

In 10 business days, Thor Wood went from a hangover to a business plan for his current Indy-based company SNAPSHYFT. Thor was born in Utah and moved to Indianapolis at the age of 2. After attending college for eight years without graduating, Thor spent time as a private investigator before starting a career in recruiting. After the recession, he found a position in Naples, Florida, where he met his significant other, had a baby, and started his first business. Thor was beginning to lose his passion, partly because he wanted to spend time with his daughter rather than work. Therefore, when he woke up hungover lying on the bathroom floor with an idea to start what is now SNAPSHYFT, he leaped at the opportunity. The tech community and lifestyle brought Thor and Stephanie back to Indianapolis. Stella Safari is one of Detroit's busiest transplants. She moved to Detroit as a Venture for America fellow, working for Invest Detroit, an early stage funder of businesses. Her interest in startups led her to furniture maker Floyd, where she was director of operations, and to business center Ponyride, where she was executive director. Now she leads the gBETA accelerator, which provides six weeks of free training to fast-growing companies to prepare them for venture funding. It's completed two cohorts. Cohort companies have gone on to raise over $400,000 in capital and include The Lip Bar, Cellular EMT, Bogobrush and Detroit Ento. There are so many new, exciting initiatives and developments going on in Rochester and the greater Minnesota community right now. Today on the podcast we take a look at four powerful stories unfolding within the community. • First off, we talk about gener8tor and their launch of a brand new medtech specific accelerator, called gBETA Medtech, in Minneapolis. gBETA Medtech is a free, seven-week accelerator program for medtech startups that’s sponsored by Boston Scientific, Mayo Clinic, and the University of Minnesota. The first six companies are currently working through the program; applications for the summer 2018 cohort are now live. • Next, we talk about Minnesota Cup and the addition of a new education and training division to this startup competition. This division is focused on businesses developing technology or services related to education, training, and workforce or professional development. Applications for the 14th edition of Minnesota Cup opened on March 26th and will close on April 27th. ● Then we chat about Sonex Health, a Mayo Clinic Business Accelerator graduate making huge strides in the community. Sonex Health created the SX-One MicroKnife to enable minimally invasive, ultrasound guided carpal tunnel release surgery. Sonex now has grown to a team of five, has graduated out of the Accelerator, and was one of the first recipients of capital from the Southeast Minnesota Angel Fund. ● Lastly, we take a brief glimpse at Marblehead Medical, an emerging startup, founded by two Mayo Clinic radiologists, that’s treating ischemic stroke through a novel process called mechanical thrombectomy. The team behind Marblehead Medical has designed a balloon-guided medical device for ischemic stroke intervention and is close to locking in a $1M round of financing.
