This week on Cooking Issues, Dave Arnold welcomes Professor Douglas Goff, one of the world's leading ice cream scientists and Professor Emeritus at the University of Guelph. They discuss the science behind smooth texture, how to recreate Haagen-Dazs vanilla at home, and the hidden factors that determine how ice cream melts.Other key topics:• The Ice Cream Book That Defines the Industry – Goff discusses the upcoming 8th edition of the seminal Ice Cream textbook, a publication that's shaped the frozen dessert world since 1966.• Soft Serve Machines and Their Dirty Secret – Why cleaning is the Achilles' heel of soft serve, and what really happens inside fast-food soft serve machines.• Lactose and the Mystery of Sandiness – Quinn loves adding extra lactose to his gelatos, but why doesn't it crystallize? Goff explains why large manufacturers have to fight against sandy textures.• Low Overrun vs. High Overrun Soft Serve – Does less air make for better ice cream? Goff weighs in on why dense ice creams like Haagen-Dazs work—but soft serve benefits from a little extra air.• The Problem with Freezing Ice Cream Without Churning – Is there a way to create smooth, scoopable ice cream without a machine? Goff breaks down why static freezing results in unpleasant ice crystal growth and why nucleating agents are the missing piece.• Breyer's Old Formula vs. New Formula – Once known for its pure ingredients, Breyer's ice cream had a unique dryness when left in the freezer too long. Goff explains why, and what changed when they started stabilizing their mix.• Trends in Ice Cream for 2025 – From international flavors (think ube and kulfi) to local, small-batch innovations, Goff talks about where the frozen dessert industry is heading.Plus, Dave builds a DIY 220V countertop fryer, experiments with a homemade ducted ventilation hood, and unveils a wheat bran granola that might just be the next great ice cream topping. All that and more, this week on Cooking Issues! Diners are skipping restaurants and making more meals at home as inflation trend inverts

Eating in is in and eating out is out. That's the message that inflation-squeezed consumers have been sending to fast-food companies and other restaurants. Meanwhile, food producers are benefiting from more palatable prices in grocery store aisles. Inflation has been easing broadly for more than a year now, and it's been cooling faster for grocery items since the middle of the year. The current trend marks a reversal from previous years when grocery inflation outpaced restaurants as food producers raised prices, often fattening their profit margins. The shift has been weighing on McDonald's, Olive Garden owner Darden Restaurants, and similar chains. "You are seeing consumers being much more discretionary as they treat restaurants," said McDonald's CEO Christopher J. Kempczinski, in a call with analysts following the earnings report. "You're seeing that the consumer is eating at home more often. You're seeing more deal-seeking from the consumer." Both Darden and McDonald's are offering more bargains to entice cautious consumers. Olive Garden has brought back its "Never-Ending Pasta Bowl," while McDonald's introduced its $5 value meal deal. Consumers have been focusing more on groceries and eating at home, and that's driving sales volumes for companies like General Mills, which makes Cheerios cereal, Progresso soups and Haagen-Dazs ice cream. "We did anticipate that might be the case as we see consumers taking value," said General Mills CEO Jeffrey L. Harmening in a call with analysts. "Consumers are still economically stressed, so that played out the way we thought." General Mills and other food producers had raised prices to offset rising inflation, resulting in profit margin boosts for many of them. Now they are among food producers trimming some prices to ease the squeeze on consumers. Grocery stores have also reaped more of the benefits from consumers dining at home. Kroger reported a 1.2% rise in sales at stores open at least a year during its most recent quarter. "We are cautiously optimistic about our sales outlook for the second half of the year and expect customers to continue prioritizing food and essentials," said Kroger CEO Rodney McMullen. Dr. Berg’s Healthy Keto and Intermittent Fasting Podcast

Today, I'm going to tell you about the healthiest ice cream and the worst ice cream! The worst ice cream for your health is Ben & Jerry's! It contains cream, liquid sugar, skim milk, more sugar, brown sugar, soybean oil, and tapioca flour. There are 49 carbs per serving, with 3 servings in a single pint! That's around 35 teaspoons of sugar! Breyers ice cream contains 21 grams of carbs and 18 grams of sugar per serving. Breyers uses high fructose corn syrup instead of cane sugar. Breyers vanilla ice cream is a step up from the other flavors. It contains milk, cream, sugar, xanthan gum, and natural flavors. Breyers Carb Smart ice cream is their low-carb ice cream option. It contains maltitol syrup, which can cause gastrointestinal problems. It also contains soluble corn fiber and sucralose, a chlorine-based sweetener. Haagen-Dazs is a better option. It contains cream, skim milk, egg yolk, cane sugar, and natural flavoring with 14 teaspoons of sugar compared to 35. Keto ice cream contains cream, water, egg yolk, erythritol, strawberries, and soluble corn fiber. One pint contains 30 grams of sugar alcohol, which can create digestive issues. Rebel ice cream contains 0 grams of sugar per pint. It contains cream, erythritol, egg yolk, chicory root fiber, milk protein isolate, carob gum, and monk fruit. This is a good option! Simple Truth frozen dairy dessert doesn't contain 10% milkfat, so it cannot be called ice cream. It contains inulin, allulose, maltitol, erythritol, milk protein concentrate, coconut oil, guar gum, monk fruit, and stevia. Around 30% of this dessert is fiber, and it contains 39 grams of sugar alcohol! Don't choose an ice cream just because it says it's keto-friendly. Check the ingredients! The healthiest ice cream is homemade ice cream. To make a truly keto-friendly ice cream you'll use allulose as the sweetener. Honey is also a good option, but it won't be 100% keto-friendly. Homemade ice cream recipe: 1 cup organic grass-fed heavy cream 2 pasture-raised, organic egg yolks 3 tbsp powdered allulose or 1 tbsp honey 1 pinch of sea salt 1 tbsp pure vanilla extract ½ cup pecans or walnuts (optional) Directions: Blend the ingredients and freeze for 4 to 5 hours. Alternatively, you can add all ingredients to an ice cream maker and follow the manufacturer's instructions. Enjoy your healthy ice cream!

Packed with an eclectic mix of audacious pop bops, punchy rap cuts, and courageously vulnerable alternative tracks, BAD SON is visceral and compelling, an intimate glimpse into Curtis' journey as a young man of color navigating the highs and lows of fame. Through dual single release “HIMBO” and “GOD'S LONELY MAN” Curtis finds the ethos at the heart of BAD SON, creating the personas of The Himbo and The Jester to showcase the opposite ends of the spectrum of success. On the fourteen track LP, Curtis explores the duality of stardom and his duality of self: an immigrant and the son of Nepali immigrants maneuvering through the entertainment industry and its ideas of who gets to be on the top.More Info: After bursting onto the scene with viral hit “Stunnin'” in 2020, Curtis Waters has made a name for himself as an up and coming pop icon through his witty, topical lyricism and unflinching creative honesty. On his debut album Pity Party (which has amassed over a billion streams) Curtis explored themes of mental health, notions of grandiosity, and reconciling his complicated multicultural identity through a journey of self-exploration. His transparency and veracity have resonated with many, securing him a loyal fanbase. His 2022 single "MANIC MAN" has racked up over 5 million streams and ushered Curtis into a new era of creative expression as he collaborated with artists like TiaCorine, Shrimp, and greek to define his new sound. The 23-year old singer, songwriter, & producer has earned over 150K YouTube subscribers, 55K IG followers, and 5.6 million likes on Tik-Tok - earning him over 100M views across platforms. He has been covered by the likes of Rolling Stone, Billboard, and Pigeons & Planes, partnered as an ambassador with MCM, Mercedes, and Haagen Dazs, and has collaborated with iconic artists like Kim Petras, renforshort, and Brevin Kim. His BAD SON LP is a true immigrant story, a reflection on a young, brown creative being thrown into the mainstream overnight, while navigating deep issues of self-doubt and cultural identity along the way.We want to hear from you! “If you want a remarkable life, you have to commit to doing it.” – Debbie Millman The iconic Debbie Millman is on the show. I have been an admirer of her work for years. For 20 years, Debbie was the President of Sterling Brands, one of the world's leading branding consultancies. Under her leadership, Sterling grew to 150 employees in five offices. While there, she worked on the logo and brand identity for Burger King, Hershey's, Haagen Dazs, Tropicana, Star Wars, Gillette, and the No More movement. Debbie is currently working with Law & Order SVUactor and activist Mariska Hargitay's Joyful Heart Foundation to eradicate sexual assault, domestic violence, child abuse, and the rape-kit backlog. In 2009 Debbie co-founded the world's first graduate program in branding at the School of Visual Arts in New York City. Today we discuss branding as well as how to design our lives intentionally. All of the show notes can be found at https://thegoodlifecoach.com/224 WE DISCUSS: The difference between design vs. branding “Branding is about manufacturing meaning through symbols and objects, and design is the expression of that meaning.” What it takes to create a new brand or rebrand. You have to ask one crucial question when working on a brand: “Why does the world need this?” Her work for the Joyful Heart Foundation and how she got involved as the Chairman of the Board. Why she believes a person shouldn't aspire to be a brand. What drives her to impact others. Her 5 Year Life Plan that she took with Milton Glaser that transformed her life. Big dreams all manifested within 13 years, within ten years, 80%-90% of it was achieved. The importance of declaring your wants. Declaration of intention. Debbie teaches her students the 10 Year Life Plan at the School of Visuals Arts. How at the age of eight she created a picture that turned into her adult reality – like a vision board. Her advice on how to live a creative life. Her thoughts on advertising during COVID, and much more! DEBBIE'S 3 BEST TIPS FOR DESIGNING A GOOD LIFE: “Continually think if not now, when?” “If you want a remarkable life, you have to commit to doing it.” Don't edit your dreams before you try. We often determine what's impossible before you determine if it's possible. “Try before you decide you can't. You get over failure and rejection, but you don't ever really get over regret.” “Don't give up on love.” RESOURCES MENTIONED Debbiemillman.com – website Debbie on IG @debbiemillman on Twitter Brand Thinking and Other Noble Pursuits by Debbie Millman Brand Bible: The Complete Guide to Building, Designing, and Sustaining Brands by Debbie Millman Debbie talked about writing out an ideal day 10 years from now. Doug Bouton is the CEO of Gatsby Chocolate, a low on sugar, high on taste, chocolate brand (now that's Doug's claim – I haven't tasted it yet, and when I do, I'm sure it will be amazing, but if it's not high on taste, I'll be sure to lie about it. Nah, Doug has a good track record). He's also the CEO of Halo Top International, a low calorie, high quality ice cream brand. Doug went to the University of Virginia for Law School and aced their famous ice cream making class. I'm kidding. There's no freaking ice cream making class at the Virginia Law School, nor in any law school in the country. Now here's the scoop folks (get it, the scoop?!) – while Doug didn't take a course in law school on ice cream making, I actually did. And no I'm not kidding this time. When I was in law school, I audited an undergrad course at Harvard called the Science of Cooking. (And you can take actually take that course on edX.) It was an unbelievable class, each week one of the best chefs in the world would visit. Now one of the classes was dedicated to, you guessed it, the science of making ice cream.  Doug graduated law school in 2010 and did corporate work at Proskauer for two years before leaving to start Halo Top ice cream with fellow lawyer Justin Woolverton out of Justin's kitchen. The two of them grew the brand to more than $300 million in sales and turned it into the #1 selling ice cream in the United States, outselling the likes of Ben & Jerry's, Haagen-Dazs, and Breyers.  (And that's before Ben & Jerry's stupid boycotting Israel decision.) Halo Top's US operations were sold in 2019, and Doug now serves as the CEO of Halo Top's international operations. In 2021, Doug founded Gatsby Chocolate, the first-ever low-calorie chocolate brand with the goal of doing to chocolate what Halo Top did to ice cream.  If you have input, criticism, or guest suggestions (including yourself) for the podcast, shoot me an email at Joseph@excellentatlife.com. As the world's population now tops eight billion, the term minority as applied to human beings no longer makes any sense. Your chance of gaining financial freedom increases when you gain knowledge about the overall system and develop a disciplined approach to saving and investing. If you come across a moose on land, don't make it mad. The same holds true if you see the moose swimming near you in the water. Formation flying is a demanding task that challenges the best of pilots. Flying close to another airplane for any period of time requires concentration and awareness of other aircraft at all times to avoid disaster.
