Bruce Fife was somebody we have wanted to have on the show for quite some time. He's a really knowledgeable person with so much experience it's amazing. In our community we know about all the myths concerning fat but it's interesting because the average person out there (God love them) still things that fat causes weight gain and heart disease. They have no idea that eating fat (as long as it's the right kind) doesn't make you fat. If you look around all you'll see ingredient labels advertising their foods as "low fat". Personally I can't believe that people are still afraid of eating fat. The problem with removing fat from things is that you have to replace it with something. High quality protein is too expensive so what do they replace the fat with? You guessed it, the lowest quality carbohydrates and sugars you could imagine. From the research I've done, it's not the fat that damages the heart but sugars and carbohydrates in the improper form. These foods when in the bloodstream end up causing internal inflammation especially inside the tiny arteries near the heart. When blood sugars rise and there are tiny microscopic tears occurring inside the arteries, your body must create and raise cholesterol levels to be used like band aids in order to patch up the internal scarring happening. Just because cholesterol is present at the scene of the crime doesn't mean it, itself is the one who's culpable. It just so happens that the medical industry has figured out a way to artificially manipulate the cholesterol numbers. Shocking right? As a result of this, they'll keep lying to you in order to scare you enough to keep taking their toxic medications until something bad happens. Bruce Fife was one of our most favorite guests to have on. He's extremely knowledgeable, fun and super easy to talk to. After the show Kate and I kept talking about how much we enjoyed his presence and his kindness. Like I was saying at the end of the show I simply can't believe that he's been able to write so many books about a (seemingly) simple topic such as oils and in particular coconut oil. Coconut oil is just so incredible for so many purposes. We use it in so many ways around our house. We use it to cook with, we use it for enemas, Kate uses coconut oil as a hair conditioner, sunscreen, a makeup remover and it goes great in smoothies too. I highly suggest taking a spoonful of it each morning on an empty stomach for immediate energy. Forget the coffee (unless it's a cobalamin tonic or a bulletproof coffee) and get instant energy from taking some coconut oil. When ingested it doesn't seem to get into the bloodstream it goes directly to the liver for immediate processing. It's like eating instant energy. Give it a try! Coconut oil has been a part of the dietary fat battle for decades. Coconut oil is saturated fat. Therefore, it has been thought to be a problem, causing weight gain and heart disease.On June 18, 2017, the AHA (American Heart Association) published a "Presidential Advisory" on dietary fats and heart disease. In that study, the body stated unequivocally that it does not recommend coconut for heart disease.Bruce Fife wrote a book called, "The Coconut Oil Miracle." Is this really true? Probably not. Others would still call coconut a villain. That's probably not true, either.But coconut oil also is made up of MCTs (medium-chain triglycerides). Recent studies say that not only are MCTs not bad; they are actually good for you. There is some evidence to indicate this may be true.At this point, things about coconut oil remain inconclusive. Lots of people have vegetable oil and olive oil in their cupboard, and that’s it. But, those oils aren’t necessarily the healthiest for you.Lots of people have vegetable oil and olive oil in their cupboard, and that’s it. But, those oils aren’t necessarily the healthiest for you, nor are they best for the cooking techniques you are using, nor do they always have the best flavor for the dish you’re preparing. Dr. Bruce Fife joins host Lisa Davis to help break down the differences between olive oil, canola, coconut, palm oil and more. He also reveals what is the best oil choice for frying, sautéing, or baking. Myth: The reason vegetable oils are so plentiful is because they are more nutritious and versatile for cooking.Fact: Most vegetable oils are affordable and versatile, but they often have no flavor. These oils are so highly processed that there’s nothing that possibly remains in there that could possibly be useful to the human body except their fatty acids. They are mostly very high in omega-6 fatty acids, which aren’t necessarily bad by themselves, but when consumed in the amounts we consume them, especially with so little omega-3 in our diets, are extremely pro-inflammatory. Myth: Because palm oil contains saturated fat, it’s also not good for our bodies.Fact: Two major meta-analyses in the last few years, one published in the American Journal of Clinical Nutrition in 2010, the other in the Annals of Internal Medicine in 2014, have questioned the myth that saturated fat is in any way related to heart disease. Saturated fat was wrongly demonized. It has specific nutritional functions. It’s important for the brain, it stands up to heat and oxidation, and when it comes from sustainable plant foods like palm and coconut, you have absolutely nothing to fear from it. In fact, it has an overall beneficial effect on blood cholesterol, raising HDL and lowering the pro-inflammatory fractions of LDL like LDL pattern B particles. Myth: For health reasons, canola oil is best for frying.Fact: It drives Dr. Fife absolutely nuts that Americans made the switch from lard and some of the other saturated fats to canola oil, which actually does not stand up to high heat well. When it is processed with high heat, the way canola oil is with almost every single fast-food restaurant, it can polymerize and form carcinogenic compounds. It is not the best to use for frying. The best oils are the saturated fats: the lards, the coconut oils and the palm oils. They stand up beautifully to heat. And they don’t form any really negative compounds that are bad for our bodies. Myth: There’s not enough difference between healthier oils and the less expensive ones, to justify the cost.Fact: Yes these oils may be a little bit more money, but you use less of them. So technically, they wind up being the same cost. Plus, you get a better flavor profile, a richer mouth feel. You’ll get more nutrients. And you will have that important omega-3/omega-6 balance.
