Historically Thinking: Conversations about historical knowledge and how we achieve it

It is no longer the largest city in America, or the second largest, or even the fifth largest, but there are still those of us who love it. While modern American cities are all racially, ethnically, and religiously diverse, it has always been so, from before it was even a city. Modern American cities, simply because of size, are also stages for a variety of conflicts, and this city has from its beginning enjoyed a good conflict. Modern American cities boil with debates over planning and land use, and such debates have always been a part of its history; as has been a perennial American suspicion towards the very existence of cities. Modern American cities are also places where the past is paved over, and oddly enough, given the depth of its history, this city has also made a habit of forgetting its past. This city is Philadelphia. From before the founding of the city by William Penn, the region that would become Philadelphia was diverse, and also in conflict. Penn famously designed it to be a “green country town”, but that design has gone through many alterations and changes. And while Philadelphia hosts some of the most significant spots in American history, it has also been good at eliminating and forgetting its own history. With me to discuss the history of the city of Philadelphia, what makes it like other American cities, and what makes it different from them, is Paul Kahan. A historian and graduate of Temple University–the most Philadelphian of educational institutions–Paul Kahan is author most recently of Philadelphia: A Narrative History. It is his seventh book.

Bret was a bit of a homebody last week as he prepared for CREATE: The Event for Emerging Restaurateurs, a conference that Nation's Restaurant News is hosting in Nashville this week, but he did enjoy traditional Jewish brisket for Rosh Hashannah at a friend's home in Manhattan.  Pat attended two Broadway shows that were preceded by tasty and affordable meals, which can be hard to find in New York City's Theater District. She had a prix fixe pre-theater dinner of creamy parsnip soup, grilled swordfish with vegetables, and baklava at Kellari Taverna for $55, and before a Saturday matinee, she had a tasty and reasonably priced brunch at Boqueria, which was less than $20 per person (before tip) — an extreme rarity in Midtown Manhattan. The co-hosts also discussed the Chicken Big Mac, which McDonald's is launching on Oct. 10, replacing the two all-beef patties with breaded and fried chicken patties. Like the original sandwich, the new version has special sauce, lettuce, cheese, and pickles, but no onions. Bret wondered about that, which led to a discussion on the role of onions on a chicken sandwich and whether, in fact, they have a role to play at all.  Then he shared an interview he had done with Rob Levitt, head butcher and chef de cuisine of Publican Quality Meats in Chicago. Levitt shared his passion for butchery and his appreciation for One-Off Hospitality's leader and chef, Paul Kahan. He also discussed his appearance on the hit TV show "The Bear," streaming on Hulu, in which he played himself.

In July of 1892 Andrew Carnegie and Henry Clay Frick hired Pinkerton agents to occupy the Homestead steel mill near Pittsburgh, Pennsylvania, but striking workers rushed to prevent their arrival and a violent battle ensued. Paul Kahan: The Presidency of Ulysses S. Grant: Preserving the Civil War's Legacy In his most recent book, The Presidency of Ulysses S. Grant, Kahan tackles a presidency vilified as one of the all-time worst, and shows its circumstances, accomplishments, and failures equally and fairly. Unlike most (all?) political leaders, Grant was less than obsessed with becoming president, announcing to his wife the day after the election, he was afraid he'd won. He did it because of all the suffering of the Civil War. He did not want to let the wartime accomplishments slide away. The Grant Administration was buffeted by three storms: Reconstruction, Economic Depression, and internal corruption. Grant seemed not to be up to dealing with all three at once. For the time, President Grant was considered quite active in enforcing civil rights laws. Until recently, the thought was Reconstruction of the south was a mistake altogether, that America should have left things alone to evolve for themselves. Nowadays, the thinking is Grant didn't go far enough with strong laws and harsh enforcement that would have dealt racial discrimination a harder blow. Either way, Grant “failed.” President Grant seemed to have had no vision beyond saving his accomplishments in the Civil War. He personally was honest, straightforward, plain spoken and untainted. But the events of his era swept him into the dustbin of history, unjustifiably according to historian Paul Kahan. He says the critics were unfair, and the many accomplishments minimized. Dr. Kahan earned a Ph.D. in U.S. history from Temple University, an M.A. in Modern American History & Literature from Drew University and B.A.s in history and English (with minors in medieval/ Renaissance studies and music) from Alfred University. His 2016 book, Amiable Scoundrel: Simon Cameron, Lincoln's Scandalous Secretary of War, was praised as “Essential for any Civil War historian's library. Kahan talked to our Round Table in March 2017 on Cameron. His most recent book, on U.S. Grant's presidency, is the subject of this presentation.

Desde que empezó la pandemia en Estados Unidos y hasta el 10 de julio, los cierres permanentes de restaurantes alcanzaron a 72, 842 establecimientos en el país, según cifras del informe de impacto económico de Yelp para el segundo trimestre de 2020.   De acuerdo con el reporte, hasta el 15 de junio más de 57,000 restaurantes que figuran en el sitio habían cerrado permanentemente desde el inicio de la pandemia de coronavirus. En menos de un mes se sumaron cerca de 20, 000 locales más.   Los especialistasq aseguran que la crisis afectó a los restaurantes de forma diferente al comercio minorista, con cierres dispares y una rápida evolución implementada a nivel local para sobrevivir. From abject poverty to undisputed political boss of Pennsylvania, Lincoln’s secretary of war, senator, chair of the Senate Foreign Relations Committee, and a founder of the Republican Party, Simon Cameron (1799–1889) was one of the nineteenth century’s most prominent political figures. The political changes of the early nineteenth century enabled him not only to improve his status but also to exert real political authority. The changes caused by the Civil War, in turn, allowed Cameron to consolidate his political authority into a successful, well-oiled political machine. A key figure in designing and implementing the Union’s military strategy during the Civil War’s crucial first year, Cameron played an essential role in pushing Abraham Lincoln to permit the enlistment of African Americans into the U.S. Army, a stance that eventually led to his forced resignation. Yet his legacy has languished, nearly forgotten save for the fact that his name has become shorthand for corruption, even though no evidence has ever been presented to prove that Cameron was corrupt. Paul Kahan is a lecturer at Ohlone College in Fremont, California. He is the author of “The Bank War: Andrew Jackson, Nicholas Biddle, and the Fight for American Finance” and “The Homestead Strike: Labor, Violence, and American Industry.”

The fight against the Second Bank of the United States may have been the most frustrating fight of President Jackson's life, since -- for once -- he couldn't end things by simply shooting or threatening to shoot his opponent in the face. Dr. Kahan holds a Ph.D. in U.S. history from Temple University, an M.A. in Modern American History & Literature, and B.A.s in history and English. He's also the author of two books on Philadelphia's Eastern State Penitentiary, and another titled, The Homestead Strike: Labor, Violence, and American History Critical Moments in American Industry. On July 6, 1892, three hundred armed Pinkerton agents arrived in Homestead, Pennsylvania to retake the Carnegie Steelworks from the company's striking workers. As the agents tried to leave their boats, shots rang out and a violent skirmish began. The confrontation at Homestead was a turning point in the history of American unionism, beginning a rapid process of decline for America’s steel unions that lasted until the Great Depression. Paul Kahan teaches history at Ohlone College in Fremont, California.
