Episode 170 Details NEWS SNOW ICE CREAM Americans used the polar vortex to make snow ice cream. The trend started on Tik Tok and such stars as Reese Witherspoon have all joined in the fun. The ice cream is made with snow, milk, sugar, and vanilla. People then have been topping their ice cream with nuts, cherries and chocolate syrup making Snow Sundaes. PICKLE JUICE TO FIGHT COLD & FLU What remedies work for cold and flu? Cleveland Clinic suggests that people battling cold and flu season drink pickle juice to feel better. The pickle juice is good for soothing sore throats, fights infections, balancing gut bacteria and prevents blood sugar spikes. The salt and vinegar in pickle juice calms inflammation and targets bacteria.   PICKLE JUICE TO FIGHT COLD & FLU A letter mailed in 1943 to DeKalb, Illinois residents Louis and Lavena George was recently delivered to a family member after resurfacing at the local Illinois Post Office. The letter expressed condolences to the recipients on the loss of their daughter. A post office worker tracked down a relative who was then able to share the letter with the daughter of original addressees: Louis and Lavena, George.   FEATURE STATE HUNTING REGULATIONS If you are planning to hunt big game this year, you best hurry to start the planning. Every state has its own regulations on hunting big game which includes elk, moose, bighorn sheep, mule deer, bear, mountain lions, etc. These regulations may change from year to year including what is involved for Non-Resident applications. Learn the rules of the states where your focus is on, then plan accordingly to be sure to meet the time constraints for applying, can save for the cost of the tags and begin planning on if this is a guided or self guided adventure.   FUNDAMENTALS FOR THE OUTDOORS, SPORTS & HOBBIES Often those of us that are skilled in hunting, skiing or many other hobbies become overzealous in wanting to share our knowledge with hopeful new individuals to the activities. This especially holds true if for example you are a father wanting to show your son for the first time how to use a bow. Another great example, assisting in teaching a spouse. Frustrations can come quickly as often expectations are that another will learn quickly your often decades learned skill in the sport. What also comes into play is the accidental missing of not teaching the safety of each skill or activity too. It is highly recommended that for the very first lesson, consider hiring an outside professional or other known individual to walk through the basic fundamentals.  Let that individual be set up for success where they can feel free to ask questions as basic as they might be and the intimidation will quickly ease. It's important to remember, your knowledge, though vast and experienced, did not happen overnight. hello. Hello, vitality seekers.  This is your host Caroline Schafer. Today. I'm doing a very special episode and I am not having a guest and we are going to talk about the naughty and nice lists. I know lists of very prevalent this time of year with the holidays. And I thought it would be very appropriate to discuss that today. I'm hoping it's helpful for your holidays and we'll add a little peace throughout them.   We all have these lists. I probably have more than most. I have lists upon lists everywhere I go and I even joke that my lists have lists, but seriously, this time of year, we all have holiday gift lists.  Christmas lists, party to do lists, Christmas card lists, maybe a list of things that you're trying to accomplish before the holidays. But nonetheless, these lists that we're going to talk about today are naughty and nice list, they can help you feel better and manage the holiday season with a little hopefully kinder mindset. So let's talk about the nice list. The nice list is maybe six or eight things that you can put on it, for the holidays to bring you some peace and happiness, some small items that would benefit you personally. This holiday season is so stressful for so many and I think that most of us forget that it should be based around joy and we get caught up and all the craziness that gets put upon us commercially. So I have 12 items, like the 12 days of Christmas. some ideas you can put on your nice list, the be kinder to you list.  Maybe there's a restaurant in your area that you've always wanted to try and you never took the time. That's a good one. Number two, buy yourself a favorite cup of coffee or tea or a brand of specific tea that you always enjoy. Three- call a best friend, or maybe someone that you've lost touch with that you've been meaning to contact. Number four, get a massage, a Mani and peti, and those feel good things. Get your hair done.  That's always something kind for yourself. Number five buy your favorite meal. And this could either be going out or it could be even better. I liked the idea of buying the ingredients, maybe things that are not normally on your weekly grocery shopping lists and making something special, either with a loved one or a family member or you can do with friends, but take the time to enjoy without rushing a meal that you really, really like.Number six, 10, extra minutes, taking maybe a shower or a sauna or 10 minutes extra working out, or if it's something you really enjoy, but just put 10 extra minutes buffer somewhere on your schedule to add in some goodness for your health. Number seven a bath. Baths are very relaxing, especially at night.  They do help and promote good sleep. It is not as much for the relaxation as you think it is more because when you get out  your body core temperature reduces, and that is beneficial for REM sleep. But nonetheless, a nice bath with maybe a favorite playlist or a favorite audio book, add a candle. that hopefully will add some peace to this crazy time.Number eight, go for a walk at maybe a beach or a park or in the woods. There, a science behind that, that backs up the concept of walking in nature is better for you than just walking in a street. So maybe you could take advantage of. Number nine, meditate start if you have never done so or maybe add five minutes or 10 minutes to your normal regimen, meditation has so many wonderful benefits.  If you haven't enjoyed the  tranquility of that, then I hope that this will give you the incentive to do so. How about number 10, a date night?  It can be with a girlfriend, a partner, husband, parent whatnot, it doesn't have to be complicated. It can be as something as doing Netflix and a pizza, but as long as you put it on the calendar, because when you do so you actually look forward to the event and that also releases endorphins as much as being in the actual event itself. Same situation as vacations.  They have done studies and it's not just the vacation, but the planning, and the activities of looking into it actually is beneficial for your health as well. Number 11, hire someone for a task that you normally do yourself. Maybe one night, you could have a personal chef or at your house clean. Maybe you can get somebody to do your lighting outside and it doesn't necessarily have to be a company. Maybe some teenagers in the neighborhood. Then there is wrapping the gifts, I know a lot of people don't like that, that happens to be one of my favorite things, but, maybe you can hire your babysitter that normally watches your children to wrap your gifts and you can make cookies with your kids instead, that would kind of be fun or a home delivery for your groceries. If you don't normally do that, maybe this is a good idea this time of year to do something like that and try it and save yourself a little bit of time. These are all things that I hope add value or make deposits in your life.  This time of year, there's so many withdrawals on our time, on our finances, on our emotion, mindset... we get so caught up with the negativity that we forget that it is supposed to be a time for peace and good things.  I'd like you to schedule them, specifically with a day in a time.  For instance, Monday morning at 9:00 AM, I will go to the farmer's market. So that is the nice list. All right. Then we have the, not to do lists the naughty list, I'd love for you to think of this as a peace protector. This is a list of things that don't add value to your life. It is not something that means you're bad, but it means that the act of doing this is negatively affecting you. So things that waste your time or distractions like social media or a long-winded person that you know. Or things that stress you out, maybe, you can limit time with those kinds of people that stress you out.  I like to categorize people as either energy givers or energy takers and you really need to hang out with the energy givers, especially this time of year. So limit if you know, people that are drainers limit your time with them and have protect yourself. The next one,  things that are not imperative, you want to get them done, but maybe just take a second and think this is really have to have to have to be done before the holiday. Can it wait until after the holiday and pull this burden off of me and make my life a little bit easier would that joy of not having that on my list outweigh the benefit of having it done. Think about that a little. And then things that you feel obligated to do. Learn to say, no, thank you.  Learn to ask for help,  lower your bar for expectations, don't try to be the Superman or the superwoman. Less can be more simplify things as much as possible and reduce that self pressure. And lastly, think about what is in your control. This is huge. Most things fall into this category. You really only can control yourself. You really can't control your kids, your partner, your employer, or any of those things. Examples of things that should be put on the, not to do list. I have 12 again; don't look at your phone may be for the first hour of the day. A lot of times that causes people undo stress. I meditate with my phone, so I use it right away, but a lot of times people, look at email and negative social media and they get a lot of angst right up and out of the get, go in the morning. That is not a good thing. Don't read those specific emails from specific people that you know, that are going to cause you aggravation, try to at least give yourself an hour to get up and get awake before you tried to ingest that. Number two, don't multitask, most things go faster with focus. I know everyone tries to multitask a million things. I am guilty as well, if it doesn't relate to other people, I will sometimes multitask. If other people involved, I try harder to keep focused with that individual. Number three, don't sit at your desk for more than an hour.  It is proven that if you take breaks, it is much better for productivity. Then there's, if you have your head Hanker down and just keep at it. So, look up, make your eyes stared to something in the distance. That's good for your vision.  Get up, shake those legs around. Tony Robbins says,  Move your ass and you get happier, even 30 seconds. Um, they had surrounded. It definitely makes you feel better. Number four, don't stay up too late. It is best to get to bed by 10. The first two hours of sleep from 10 to 12 are equivalent to four hours of sleep after that time, because they help restore and regenerate all the healing in your body. So you're doubling up on your restorative benefits from getting to bed by 10.  If you can keep a consistent schedule through the holidays, that will also help you keep focus and have more energy during your day and get more things done rather than stay up and keep pushing. Number five, don't go over your holiday budget. I know finances are a huge thing for people. I'll just say that something that I've been doing for years, and it's funny, cause it involves a list, but  I keep index cards with everybody's name on the top. I write,  ideas of gifts on one side, what I have bought and then I total it on the right side and keep a tally. It works great for kids and keeping things balanced. Um, but stick to it, track it. Number six, don't get caught up in the commercialism of the holiday. It's so easy to do the heck with the Jones is and make the cookies instead of buying the bigger gift, your kids will appreciate the time spent with them, then that gift that's going to end up getting dusty, and thrown in the corner. So time is the most important thing, not the object. Number seven, don't go off your routine. As we talked about with the sleeping same thing, and especially with exercise and diet, a lot of you hear people say you deserve it. It's a treat Baba. Um, treating yourself to depression. I never see a benefit in that. One of the ways that people do that is going off their diet, especially this time of year, a lot of sugar gets involved. That's a sure-fire way of having things go down a negative path. Number eight. Don't spend too much time with those energy drainers. We talked about that. Um, the negative Nellies the downers, the people who always al every story into something that makes you feel bad. Um, keep those assigned if their relatives keep those Conversations limited, excuse yourself, find something to do or when you get on the phone  specifically say upfront that you have something to do in five minutes or something so that it it's limited right out of the gate. Number 10, don't go to all the parties or all the invitations you get. Um, if it's an enormous amount, some people have a very long list of invites, um, and it gets to be a job in itself. So learn to say, no, thanks. And it'll be okay. It actually will make you a little saner through the positive, through the process. Number 11. Don't try to do it all alone. Ask a friend, ask a neighbor, ask for help. Asking for help is such a beautiful thing. People like to feel wanted. And a lot of people hesitate to ask, but asking is a gift on both ends.It helps you and the other person usually enjoys giving. So, try, try to do that. It's a little bit of an uncertainty muscle for most of us, but asking is a good number. 12th don't hold onto grudges or negative feelings. This is very important. It probably the best one. I forgive fast and move on. I used to think that forgiveness equated to condonement. But it doesn't, actually when you forgive somebody, it helps you more than the person that you forgive. It's like taking the burden of weight off of you and you no longer have to think about. So remember that forgive fast and move on and put it behind you that it's not worth carrying around that extra weight. That a lot of times grudges and negative feelings carry, it's the holidays. It's the best time of year to do that. hopefully you guys all got some great ideas, some holiday hacks, if you will, that will result in less than usual signs of mental and physical fatigue. Kenji López-Alt joins Billy Shore to talk about what drew him to explore the science behind cooking, finding his voice as a writer, and his two New York Times bestselling books. “Some people think cooking with science is the opposite of cooking with soul. I think it’s the opposite. The more you understand the science and technique behind it, the better your ability to get out what’s inside you,” he suggests. “To me, it’s like trying to hide the broccoli in the macaroni and cheese. I try to write stories that are engaging to people on a pure storytelling level, and then the science lessons are folded into that,” he explains. “I found it more difficult to write a children’s book [Every Night is Pizza Night] than to write Food Lab. One of the biggest challenges to keto dieting for parents, is having to make multiple meals and different dishes. It makes life much easier to make one meal at a time. If you think in terms of all or nothing, you may think there’s no way to bring your family along with you on your diet. But there’s a big in between zone. If you make the food right, you could be in a position to make your keto dishes, and feed them to the whole family. First, keep it light and positive.  If you start out the process with something like “We are going to eat Keto, and that’s final!”, you probably won’t get too far.  Try some education. Have a talk about it with the whole family present, and come prepared. Not with charts and graphs, but with BENEFITS. Kids especially will probably not be so interested in the science. Some might, and that’s great.  But mostly they just need a cliff notes version of what’s happening.  Put it in terms they are familiar with. Focus on the positives of eating keto. It’s not punishment. It will reward you with feeling better and looking great. The kids will look great for school, and very probably have increased levels of concentration. Something that will make their schoolwork easier? I don’t know about you, but that alone would have totally sold me on it as a kid. Help your family eat keto by showing them version of their favorite foods If you already have ‘Pizza Night’ on Thursday, then keep doing it. Get one of the many great keto pizza recipes and make it as a family. Make it into a fun event, where everyone has a part in it.  There are good keto crusts on the market that you can buy in the frozen section, including many Cauliflower crusts from different manufacturers. For traditional dinners, like Thanksgiving and Christmas, look for substitutes like Mashed Cauliflower for mashed potatoes. Put enough butter on it and you will not care if it tastes a little different. They Don’t Have To Be Full Time Keto Also, when dealing with your family, they may not all need to be full time keto. They may be able to eat their normal diet at school lunch for instance, but still be completely OK with keto at home. Your main goal is to have your household, kitchen, and fridge be keto. What goes on elsewhere is a distant second. If you can help your family eat keto at home, that is a massive win for you. Always, always, the more simple your life is around your diet, the more likely you will succeed.  Educate them, make it fun, give them foods they are used to in keto form. It’s that simple. Over 3000 schools utilize the fathers and father figures within their own community to enhance the environment and safety of their schools. Watch D.O.G.S. Let's discuss innovative ways to get positive male role models into your school. One of the most important elements of your Watch D.O.G.S. program is your launch events. A mid-year launch event such as Donuts With Dad will re-energizes your program for the second half of the school year. It also gives those guys that didn't sign up at your Pizza Night a chance of redemption. It's also a good chance to get those mid-year PTA memberships. Now is the time to be planning your DWD event. It is very simple and your Implementation Guide gives you step-by-step instructions. Fathers and Father Figures are there for your school. You just have to know how to make them feel welcome and excited about being there. All you have to ask is for one day a year. Over 200,000 fathers nation wide have participated in the Watch D.O.G.S. program in 2400 schools in 42 states and D.C. We have also recently launced a Watch D.O.G.S. program in Mexico and soon in Puerto Rico.  The National PTA and 11 State PTAs have seen Watch D.O.G.S. as an avenue to increase male participation and membership at the local school level. Schools find that this inexpensive and simple program is a great way to increase community networking and bring additional resources to the school. Episode 6 Show Notes Beer of the Week Jan 11-17, 2012: Spinnaker’s ‘Lions Head’ Cascadia Dark Ale Close your eyes for a moment and put yourself in the following position. It’s 1888 and you have been stationed in Bombay (Mumbai) India for the last 6 months. It’s 40C with the humidity of about 96% so it really feels like 48C. You have been standing in the direct Indian sun for over 2 hours and you are in your regimental dress uniform. The sweat is trickling down the back of your neck and your only thought turns to that cold brew in the mess that has just arrived from Jolly Old England. Your mind quickly retreats to the last beer shipment and you cringe as it had gone foul. 4 hours later you are pleasantly surprised that the beer is cold, it is tasty and fresh but there is something different about it. There is a definite bitterness to it for some serious hopping. What is this? This is your first taste of a new brew called October Beer from the Bow Brewery. That beer is what we today call IPA or India Pale Ale. The brew of the week does not have nearly as dramatic a start, but it is a harbinger of what will surely be a new breed or category of brews. This weeks Brew of the Week is a Cascadia Dark Ale that has evolved from Northwest India Pale Ale. The catalyst for this style is the unique flavour that hops grown in the Pacific Northwest have and how well the citrus grapefruit tone pair with dark malts. The body is heavier than traditional IPA but lighter than Porters and Stouts. The second thing you will notice is the carbonation. Designed to be served colder, there is greater carbonation. This weeks Brew of the Week is the Spinnaker’s ‘Lions Head’ Cascadia Dark Ale which gets its name from a pub located in Robson BC which just so happens to be run by Spinnaker’s proprietor Paul Hadfield’s, daughter Carly. The brew is richly textured with bright citrus tones that float on a body of roasted, smokey, chocolately malt flavours. The finish is clean which makes this an easy brew to pair with a number of dishes... I like that. I’m really tired of brews or wines that are only good for sipping on their own... that is not my world...my world is about a quality of life that is always better when shared with others over a meal and great glass of beer or wine. This beer is only available in the 650ml bottle format, which you just looks better on the table vs a 6 pack of cans or bottles. PRICE $5.99 +deposit PAIR WITH big beef burgers, pork tenderloin with a cumin rub, meat lovers pizza, rich, strong cheeses. Show Notes Wine of the Week Jan 10-16, 2012: La Chamiza Bonarda When you drive through the streets of Mendoza Argentina there is a clear Italian influence on the architecture and cutlture. Many of the street names are Italian names which makes perfect sense when you consider that the majority of the immigrants that built Mendoza came from Italy in the 1860’s. A whole bunch came from the Marche region which is located on Italy’s East Coast. With that pedigree it is not too hard to see how such a vibrant wine culture has developed in Mendoza and surrounding area. One of the many gifts bestowed upon the area were some grapes, namely Bonarda. What?  You say... Bonarda, what the heck is Bonarda. It is said that Bonarda has it’s home in the hills and valleys on the border between France and Italy and is known as Charbono in California. When speaking to those in the know in Argentina they can confirm that it is not Croatina which comes from Lombardy and is likely Bonarda Piedmontese. In any case Bonarda, until recently replaced by Malbec, was the most widely planted grape in Argentina although you wouldn’t know it as it was used mostly for bulk table wines of varying qualities. Today, however, the new generation of wine maker’s is crafting varietal wines out of Bonarda that are wonderfully flavourful and rich. In fact on the buying trip I did last May, I tasted over 700 wines in 10 days and although there were numerous to die for Malbec’s, what really showed through was Bonarda’s. By nature Bonarda lends itself to our palates. We tend to like the look of inky purple wines in the glass (downside is that it can leave a nasty stain and has a penchant for falling on white silk blouses, expensive white tailored shirts and of course, white carpet), it gives us a feeling of depth and mystery. Careful though as I find that there have been many times that I have spied a ‘black’ wine and laden it with great expectations only to be met with a thin, tannic, acidic purple stain on my teeth. Anyway when it is short cropped the colour can be quite intense. The nose is often cherry, plum and bright berry, almost grapey which is good as that is what it often tastes like to. The texture makes it perfect for pairing with lighter cuisine as Bonarda is naturally low in tannin but with moderate acidity (similar in many ways to Barbera). The mouthfeel is fresh and alive and the finish is juicy but not long. Your palate will never likely tire from too much alcohol or tannin on this wine. I would happily pair this with pork, pizza, pasta, ham, roasted poultry, and cheeses like Gouda and Cheddar. The only drawback to Bonarda in BC is that there really only a few available, so the full spectrum is not available to experiment with... allow I’m doing my part to change this. Now about the La Chamiza Bonarda. La Chamiza sources their grapes from the Tupungato and Argrelo districts which are the same areas that luminary wineries like Catena source their grapes from. Bonarda is naturally late ripening so the best quality will come from regions that are warm, dry and have a long growing season. This describes Tupungato to a ‘T’.... pun intended. You may remember La Chamiza from a few years back as they were in the BC market in a big, cheap way. La Chamiza is not a low end producer. They may low key, but they are not low end. So they pulled out of the market for a couple of years in the hopes of re-establishing themselves as a quality/value producer but not a cheap one. If the Bonarda is an indication we will start to see some of the best options from this winery and region. The nose is big cherry and bright berry, with hints of grape jelly. While the palate if full of rich juicy flavours and a hint of delicate purple flowers. The texture is bright and fresh due to the acidity, and the finish is nicely juicy thanks to the low tannins. In relation to other wines in the $15 range I have to say that this really delivers, the only problem is that this was a one time buy and once it is gone it won’t come back for several months. PRICE $15.99 PAIR WITH pizza, pastas like lasagne and meat sauces, roasted chicken, pork chops, pork tenderloin, Barbecue Ribs, Burgers. OCCASIONS this is a great wine for Pizza Night, Family Movie Night, Casual Get Togethers, Simple Dinner parties and evenings.
