Chef Steve Samson on Rosso Blu, Bologna, Gnocchi, and the Real Cost of Running a Restaurant  The Italian Food Secret LA Has Been Hiding This week on Drinking During Business Hours, Sarah Halstead and Rich Chassler sit down with Michelin-recognized chef and restaurateur Steve Samson for a rich, hilarious, and deeply personal conversation about Italian food, the restaurant life, and what it really takes to build something lasting in Los Angeles. Steve is the chef and co-owner of Rosso Blu in downtown LA, a Bolognese-inspired restaurant that Rich and Sarah recently visited and could not stop raving about. From the wood-burning oven to the legendary gnocchi to the iconic burro e oro tortelloni, this episode is a love letter to great Italian cooking and the people who dedicate their lives to it. Steve opens up about growing up spending summers in Bologna with his grandparents, how food was always the center of family life, and how those memories eventually led him to leave behind a stack of med school applications and enroll in culinary school in New York City. He talks about his early kitchens in Soho and Maine, his time working with Piero Selvaggio at Valentino in Las Vegas, and how the vision for Rosso Blu was born from a simple idea: cook the food his mother made. The conversation gets real when Steve talks about the economics of running a restaurant in California, the crushing costs post-pandemic, labor laws, tip credits, and why places that used to be neighborhood spots are now special occasion dinners. His wife and partner Dina gets a major shout-out as the operational backbone of everything they have built together. It is funny, warm, food-obsessed, and packed with the kind of honesty you only get when great wine is flowing. Do not miss it. Guest Info Steve Samson is a Los Angeles-based chef, restaurateur, and co-founder of Rosso Blu, a critically acclaimed Bolognese-inspired restaurant located in the Fashion District of downtown Los Angeles. Steve was born in Brooklyn, raised in Los Angeles, and spent formative summers in Bologna, Italy, where his mother's family shaped his deep love for traditional northern Italian cuisine. He trained at Peter Kump's Cooking School in New York City, cooked in celebrated New York kitchens, and worked with legendary restaurateur Piero Selvaggio at Valentino in Las Vegas before returning to LA. He co-founded Sotto on Pico Boulevard, a beloved Southern Italian restaurant, before opening Rosso Blu with his wife and business partner Dina Samson. Rosso Blu has received Michelin recognition and has been written up in virtually every major food publication. Steve is known for presenting dishes with photographs of his family in Italy and the stories behind each recipe, making every meal at Rosso Blu a deeply personal experience.

In Visible Presence: Soviet Afterlives in Family Photos (MIT Press, 2023) is an absorbing exploration of Soviet-era family photographs that demonstrates the singular power of the photographic image to command attention, resist closure, and complicate the meaning of the past. A faded image of a family gathered at a festively served dinner table, raising their glasses in unison. A group of small children, sitting in orderly rows, with stuffed toys at their feet and a portrait of Lenin looming over their heads. A pensive older woman against a snowy landscape, her gaze directed lovingly at a tombstone. These are a few of the evocative images in In Visible Presence by Dr. Oksana Sarkisova and Dr. Olga Shevchenko, an exquisitely researched book that brings together photographs from Soviet-era family photo archives and investigates their afterlives in Russia. In Visible Presence explores the photographic images' singular power to capture a fleeting moment by approaching them as points of contestation and possibility. Drawing on over a decade of fieldwork and interviews, as well as internet ethnography, media analysis, and case studies, In Visible Presence offers a rich account of the role of family photography in creating communities of affect, enabling nostalgic longings, and processing memories of suffering, violence, and hardship. Together these photos evoke youthful aspirations, dashed hopes, and moral compromises, as well as the long legacy of silence that was passed down from grandparents to parents to children. With more than 250 black and white photos, In Visible Presence is an astonishing journey into domestic photography, family memory, and the ongoing debate over the meaning of the Soviet past that is as timely and powerful today as it has ever been. Great photographs can arise from capturing everyday life moments and authentic interactions, not just grand, planned photo shoots. Using a smartphone camera can be an excellent way to start exploring photography without a major investment. Tweetable Quotes "Focus on celebrating those experiences and those magical moments you have with people that you love." - Matt Payne "Nature is an amazing place but it's also a dangerous place and you need to give it respect." - Matt Payne "Let nature be a good teacher and let people make mistakes. You're gonna learn a lot faster from them than just preventing the mistake." - Matt Payne "Nature is providing pretty much everywhere, even in your own backyard, with bugs and plants and weird things you find under nooks and crannies." - Matt Payne

Welcome to Research Like a Pro! In this episode, Diana and Nicole explore how artificial intelligence can help identify vehicles in old family photographs, adding depth to family stories. Diana shares her experience using a custom GPT called "Genealogy Eyes" through ChatGPT to analyze a photo of her mother, Anna Mae Kelsey, seated on a sheep in front of the family car. Listeners learn how AI can identify specific car models and features, providing insights into the family's economic status and the cultural context of the time. The AI analysis helped Diana identify the car as likely a 1930 Ford Model A Tudor or Fordor Sedan, a popular and affordable vehicle of that era. This discovery, combined with knowledge of her grandfather's successful livestock business, painted a richer picture of her grandparents' hard work and prosperity. The episode highlights how details like a family car can offer valuable clues to understanding an ancestor's life. This summary was generated by Google Gemini.
