Sean Carroll's Mindscape: Science, Society, Philosophy, Culture, Arts, and Ideas

A lot of science goes into crafting the perfect cocktail. Balancing sweet and bitter notes, providing the right amount of aeration and dilution, getting it to just the right temperature and keeping it that way. And even if you have no interest in cocktails as such, the general principles extend to other activities in art and in life. Discover Red Island Cider on Prince Edward Island Guest podcaster Al Saxs interviews Red Island Cider owner and maker Robert van Waarden in this episode 426 of Cider Chat.   Red Island Cider is located on Canada's reknown “Prince Edward Island” capital “Charlottetown” this cidery has helped revive the island's apple heritage while creating unique, story-driven ciders that reflect the culture, history and spirit of the region. Whether you're an orchardist, a cider maker, or simply a cider traveler, visiting Red Island Cider is an experience that goes beyond the glass. The Art of Crafting Ciders with Local Stories At Red Island Cider, every cider has a story. The flagship cider, Father Walker, is named after a local priest who inadvertently created a legendary batch of cider that fueled an unforgettable community gathering in at The Picnic at Groshaut 1897. The story goes that between having the apples pressed for the Groshaut picnic and the actual picnic the cider had begun to ferment. The song details the events that day as the now fermented cider was being drunk. To listen to the full song sung by Art Cahill, https://digitalcommons.library.umaine.edu/songstorysamplercollection/19/ Father Walker's is a dry cider, made with Northern Spy, McIntosh, and Cortland apples and recently won a gold medal at the Great Lakes International Cider and Perry Competition (GLINTCAP), cementing its place as a top-tier craft cider. Another standout is Devonport, a hop cider named after a historic bar in Charlottetown known for growing its own hops in the 1830s. This cider offers a citrusy, grapefruit-forward profile that appeals to both beer drinkers and cider enthusiasts alike. Red Island's Ghost Series is a collection of limited-edition ciders, each named after historic shipwrecks off the coast of Prince Edward Island. These ciders, draw inspiration from the tales of ships like the Conqueror and Castalia, which met their fates in the island's treacherous waters. The Rose made with locally sourced haskap berries has a vibrant rosé hue and notes of raspberry, blueberry, and cranberry notes, is a true taste of PEI's agricultural bounty. Loyalist Road Cider is a complex blend made from 27 different apple varieties sourced from a small orchard near Charlottetown.

We start the journey to a better cocktail. As it's the opening episode of the series, we set some ground rules, introduce some of the ideas and why Kevin left his engineering job to start a special kind of bar.  Why is an Old Fashioned "fragile," and a Negroni "robust?" Castalia at Sfumato is located in Detroit, Michigan. More: https://www.castaliacocktails.com/ Pre-order Kevin's book: https://www.kickstarter.com/projects/drkevinpeterson/book-cocktail-theory On Kevin: Dr. Peterson has formerly worked as a line cook, a combustion engineer, an auto mechanic, and on the production line at a butter factory. At various points he's been in school for physics, philosophy, culinary, and my highest degree is a Ph.D in mechanical engineering.  His current roles are the Nose at a niche scent company, Sfumato, that I founded with my wife, and Chief Cocktail Scientist at Castalia, a cocktail bar in Detroit we also co-founded. We work with our staff of six at Castalia to create experiences pairing fragrances and cocktails. To do these pairings effectively, Kevin has had to dig deep into his background in physics and engineering, culinary and perfumery, and experience srunning Castalia for the last five years, and examine how our senses work, what our senses find intriguing, and how to optimize cocktails to fit perfectly into an overall experience.

The research done by Castalia was commissioned by a group of concerned Wellingtonians. The analysis done off public records shows there's at least one billion dollars worth of expenditure not included in the council's long term plan and unbudgeted spending on projects. Group member and Wellington Lawyer, John Swan says its evidence of reckless fiscal policy. He says it reflects the council lurching from one issue to another -- and the expectation they'll be able to pay for projects with out being able to support it. This week on the Raw Politics podcast: Tax, fiscal holes, and disinformation. Plus: With just 43 days until the election, how is the campaign shaping up?Raw Politics ponders how National's $14.6 billion tax plan landed both politically and in real terms for those who will benefit from the proposed tax relief. Then we cast forward to the campaign launches this weekend in Auckland where Labour and National will lay out their visions for the country if in government after October 14.Newsroom Pro editor Jonathan Milne was one of two journalists to get his hands on the Castalia report that National commissioned to get its t's crossed, i's dotted, and maths analysed ahead of its announcement on Wednesday.Milne notes National was transparent in saying where its numbers differed from Castalia's and says it's worth remembering the analysis was commissioned by the leader's office and on Christopher Luxon's terms.Political editor Jo Moir and senior political reporter Marc Daalder then explain the manic vibe in Parliament in the final week with press conferences and counter press conferences, potshots followed by allegations of disinformation, and some MPs no doubt contemplating whether they'll ever be back in the building. Then there's the rush of legislation being rammed through the House in the final days before everyone packs up their lockers, throws on their backpacks, and heads out into the campaign field. Some of us are exhausted and the campaign hasn't even begun, while others seem exhilarated. Moir and Newsroom co-editor Tim Murphy will be at the major parties' campaign launches on Saturday and Sunday to provide our readers with the latest political news and analysis. This week's recommendations include Act Party's number 16 on the list being so confident he'll be in Parliament he told Newsroom's Emma Hatton he's put his business up for sale (with a caveat), an international look at tax cuts, and a colourful Herald piece from press gallery legend, Audrey Young.Every Friday, Newsroom editors and political journalists talk through the big issues and scrutinise politicians' performances in a lively 25-minute show aiming to take viewers and listeners inside the actions and motivations of our elected leaders.

What's that old line? If something sounds too good to be true, it probably is too good to be true.  And that's how I'm feeling about the National Party's new tax plan, now that I've had a day to think about it.  Even more so, after listening to Finance spokesperson Nicola Willis on Newstalk ZB this morning.  I'll come back to that. But first, in terms of how much better-off National reckons we would be if it's running the shop after next month's election, this is it: a family with two kids on the average income - $250 better-off per fortnight; an average-income household with no kids - $100 better-off per fortnight; someone on the minimum wage - $20 better-off; and a retired couple - $26 better-off each fortnight  Sounds good. I'd like to believe it. But do I believe it? Well, let's consider how National reckons it can pay for it. And this is where the likes of the Labour Party starts to get all “voodoo” on it. That's a word Grant Robertson has been using to describe the policy.  And there's one part of National's tax plan where I think Grant Robertson is bang on with the “voodoo” thing. And it's the extra money it reckons it can get from foreigners who, under Labour, aren't allowed to move here and buy houses.  The ban was brought in by Labour in 2018 because it thought international buyers were sweeping-in and snapping-up homes, leaving locals out of the market.  So National wants to change that - to fund its tax cuts - and would open the doors to foreign buyers wanting to buy places worth more than $2 million. And it would sting them with a 15 percent tax.  It thinks that, on average, that would increase government revenue by $740 million a year.  And how does it know that? Well, it doesn't. It's done some estimates. And it got a consultancy called Castalia to run the numbers and they came back and said National's plan was “possible and plausible".  And, on the back of that, Nicola Willis made the big statement this morning that, come hell or high water, the tax cuts are a guaranteed thing.  Even when her costings are dependent on things like enough foreigners wanting to move here, buy a house and being prepared to pay an extra tax for the privilege.  Nicola Willis said this morning that, even if that doesn't eventuate and the government's financial position is worse than expected, the tax cuts will still happen. She said she guaranteed it.  But I don't believe it for a minute.  Because back when Christopher Luxon was running Air New Zealand, do you think he would've slashed the price of his airfares because he had his fingers crossed that fuel prices might go down?  Of course not. So how does he think he can deliver all this tax relief when he doesn't know for sure how he's going to pay for it?  More to the point, how-on-earth can his Finance spokesperson take it next level and guarantee that it's going to happen?  It is head-in-the-clouds stuff. See omnystudio.com/listener for privacy information.

Performer Christina Castalia is this week's guest on Adult Site Broker Talk. A cam girl and content creator based in Amsterdam, Christina enjoys making videos and taking photos. She has dual citizenship in the Netherlands and Greece and is fluent in Dutch, English, and even some Greek and German. She calls herself both a "Big Belly Bitch" and a "Hairy Greek Goddess." Her last name, Castalia, comes from a story in Greek mythology about a nymph who was turned into a fountain from which the muses drank, which is a great pun on one of her main characteristics in cam shows (spoiler alert: she squirts). In the industry, she has worked for about 12 years. She began working at age 19 to help fund her education at law school. She started off small, on a Dutch platform, and is now well-established internationally. She was featured in XBIZ World and Hustler Online Magazine, and in September of 2021, she was crowned XBIZ's CAM Star of the Month and XBIZ's Best BBW Cam Model of the Year. She has an eye for design and likes listening to podcasts as she creates costumes and sets. She is passionate with Greek mythology, history, anthropology, and psychology. When she's not camming or producing, she's probably out exploring the great outdoors, singing and composing music, playing Pokémon Go on her balcony, striking up conversations with complete strangers, shaking her massive booty in the club, or trying to set a new world record for the most orgasms. @TinaCastalia is Christina's Twitter account. Bruce, the host of the program and CEO of Adult Site Broker, said, "I absolutely loved my chat with Christina. There is nobody like her. A lovely, bright, and funny young lady."
