Josh Trujillo didn't set out to become a brewer, but after 16 years at Marble (https://marblebrewery.com)—the last eight of which he's served in the top brewing role—he's found it to be a perfect vocation given his mix of technical and tasting aptitude. Over the years, Marble has pursued ways other integrating hops into both traditional and modern lagers, and their judiciously dry-hopped Pilsner even won 2014 World Beer Cup gold employing a quarter-pound-per-barrel dry hop at the time. Now, Marble is stretching out in the hoppy lager space with West Coast pils, and mirroring that smaller beer with their approach to cold IPA, while their MavLab R&D brewery continues to rack up medals for both traditional ales and lagers as well as more progressive styles. In this episode, Trujillo shares their approach to brewing lager, including: Brewing rice and corn lagers with two row pale malt and a single infusion mash Managing runoff to avoid astringency Extending boils to manage DMS production Designing subtle yet characterful hop blends for dry-hopped Pilsner Moving hot side hops to the whirpool for more hop expression Marrying the classic with the contemporary in West Coast pils Brewing hoppy beers with new twists on classic hops And more. Aside from the fact that cryptocurrency has lost its luster in recent years, it also has a host of other problems. First of all there's the climate issue since crypto requires a ton of energy. Then there's the trust issue because without trust you don't have widespread adoption and what good is crypto if there isn't a critical mass of users? And then on top of that you add the recent developments of Sam Bankman-Fried's conviction of stealing billions of dollars from customers at FTX. Ep42 — Marble Brewery and the (Recent) History of Beer in Manchester

The Pellicle Podcast

Manchester has a fascinating beer history, stretching back well over two centuries, and into the industrial revolution. What's remarkable is how that history still influences the northwestern city's beer culture today, whether via one of its four, storied family brewers like Robinson's or JW Lees, or one of its modern trailblazers such as Track or Cloudwater. One of the city's most unquestionably influential breweries is Marble, which was originally established in the Marble arch pub in 1997. The brewery has since gone through two expansions, its most recent in 2019 when it relocated from Manchester to Salford (the difference of which is very important to locals). The latest episode of our podcast takes place here at the brewery, where we hosted a panel discussion in front of a live audience, and delved into the recent history of the Manchester beer scene, as we joined in Marble's 25th anniversary celebrations, which took place towards the end of 2022. Hosted by our very own Matthew Curtis, the panel features a host of luminaries from within the Manchester beer scene, including Jason Menzies, Marble's events manager. We're also joined by Stephanie Shuttleworth, a former Marble employee who has worked in and around the Manchester beer scene for over a decade, and is currently working on a PhD centered around pubs and brewing. Last but not least we're joined by John Clarke, chair of Stockport and South Manchester CAMRA, who has been living and breathing beer in Greater Manchester for over three decades. It's a fantastic discussion, and one of our lengthiest to date, as there was so much interesting history to talk about. Thanks again to Marble for inviting us to host this talk, and to our guests for providing such great insight.Don't forget that if you enjoy this, and other content that Pellicle creates, please consider subscribing via Patreon, and support our independent magazine and podcast.

On this week's episode of the Hop Forward Podcast we talk to Master Brewer, Paddy Johnson, from WeBrew - home to the Windsor & Eton and Uprising brands - all about brewing and some of the challenges the industry faces in 2020. Having been in the brewing industry for over 40 years, my guest today has worked at 9 breweries in the UK, Australia and Canada. He was Area Production Director at the large Royal Brewery, Moss Side for 5 years producing over 3 million Hls of beer per annum at that site as well as also operating Newcastle brewery and Theakstons in Masham at the same time within what was then Scottish Courage. Prior to this he also held jobs such as General Manager at the Courage brewery in Bristol and Head Brewer at the Berkshire Brewery for Courage - Europe’s largest brewery at that time; and also spent time as a brewer with Bass at several breweries. But Master Brewer - Paddy Johnson’s impressive resume doesn’t stop there! The first view he ever saw being made whilst at Courage Brewery was the infamous ‘Imperial Russian Stout’; he helped to set up Innserve - an independent Trade dispense technical services, which services around 100,000 pub/bar accounts in the UK. Amongst other things, including being a seasoned beer judge and father to Kieran Johnson of Blackjack Brewing in Manchester, he is one of the Director of WEBREW which, as well as operating an 8,500Hl/annum brewery that was designed and built by the Board team, has two brand - the more traditionally positioned Windsor & Eton brand, producing an array of cask and bottled beers; and Uprising - a more craft, focused brand creating Imperial Stouts, Double IPAs and the kinds of beer styles we all know and love to see on keg lines. To say Paddy is knowledgeable is an understatement - he’s a well seasoned veteran of the brewing industry and has been around the block. So, where do you start when interviewing such a well seasoned brewer? When we met at Manchester’s Marble Brewery, who were kind enough to allow us use of the facilities for hosting and recording this week’s show, I wanted to ask about brewing beer from a master brewer’s perspective. And, although you might expect some deep cuts from a conversation like this - such as the complex chemistry that occurs when infusing hops with boiling worts at certain temperatures, or the effects of yeast fermentation under different pressures - it’s having knowledge-based firmly rooted in fundamentals and nailing it time and again which sets a Master Brewer apart… plus demonstrating their skills building and commissioning a brewery and being able to explain why you did it that way…! --- TODAY'S SHOW IS SPONSORED BY SSV LIMITED. The heart and soul behind every brewery are its people. Whether that’s the Head Brewer, shift brewers, the sales force, marketing departments, accountants, cellarmen, the dray runners, tap room staff, administrators, and all the other weird and wonderful characters that make up a brewery operation - they all contribute to that tingling taste that tantalize the taste buds at the end of the working day. It was these people that owner of Marble Beers, Jan Rogers, wanted to celebrate when inviting Hop Forward to the recently rehoused Manchester brewery on a cold January morning. Brewing up a storm since 1997, Marble Brewery was originally housed in the rear of the flagship pub, The Marble Arch Inn. Moving to a railway arch in Williamson Street - or should that be literally squeezed in - the brewery has spawned many of the UK’s brewing alumni, such as James Campell - formerly of Cloudwater; Dominic Driscoll of Thornbridge Brewery; and Colin Stronge at Salt Beer Factory amongst others. It’s easy to focus on the names in the world of brewing - and we should celebrate these individuals that have spearheaded contemporary British beer in the 21st century. But there are many more people who contribute towards the creation, distribution and dispense of the beers we know and love today from our favourite breweries. Sharing their stories and experiences from working within a close-knit team, Joe, Carl, Paul and Plougers share the highs and lows of working in a small production brewery with a big reputation. This episode may be about Marble Beers but it's dedicated to all the unsung heroes working tirelessly in the beer industry to brew and deliver fantastic beers. --- TODAY'S SHOW IS SPONSORED BY SSV LIMITED. It's that time of the year when everyone thrusts their favourite games down your throat. We're no different except it's accompanied by several beers to ease it down. Lucy, Ben and Aadil start off with a few honourable mentions then launch into their top ten games. We've no rules here as you know, so these are games we've enjoyed this year even if they didn't release in 2018. For those all important beverages Ben and Lucy are drinking The Trilogy MMXVIII from Northern Monk and friends. These beers are brewed to showcase Malts, Yeast and Hops and are Malt - A Brut IPA with Whiplash, Yeast - A Sour IPA with Verdant and Hops - A Triple IPA with Garage. Aadil has three beers that he's tried to match alongside Ben and Lucy. He has to start 'Side Control' IPL from Marble. Follows with a sour pilsner from Cloudwater and Stillwater Artisanal called 'Tangible Object' and finishes on 'Zenne-Like' a Belgian IPA from Magic Rock and Brasserie De La Senne. After today's epic we're having next week off but will be back in the first week of the new year. Have an awesome few weeks.

Today’s guest is Jan Rogers, owner and director of Marble Brewery in Manchester. In 1990, Jan turned up for a drink at the Marble Arch pub and – in her words – didn’t go home. She began working at the pub and, when it was facing uncertainty in the late ‘90s, Jan was adamant that karaoke wasn’t the fix. Instead, the decision was made to install a small brew kit in the pub and that’s how Marble Brewery began back in 1997. From Marble’s early days, I ask Jan to reflect on how both the business and the beer industry have changed over the last twenty years. (Yes, it was a big ask, but Jan’s got some great stories and incredible insight to share.) We talk about why she sees the brewery’s small size as an asset and how it’s allowed her to create a sense of community not only within the business, but across the Manchester and broader UK beer scene, too. Jan tells me what aspects of her job she enjoys best, what she’s most proud of, and what her vision is for Marble’s future. Before I turn it over to our conversation, I just wanted to add in a mention of how Jan and I met: Back in November, I headed up to Manchester to record my first ever live episode of Beer with Nat at the Ladies’ Big Beery Meet-up – a meet up of beer-loving ladies from across the country hosted by Ladies that Beer and Crafty Beer Girls – which you’ll hear on my next episode. Jan not only hosted us at one of Marble Brewery’s venues, 57 Thomas Street, she also agreed to get there early to meet me for a beer and a chat before the event kicked off so I could squeeze in another recording while in town. Thanks again, Jan! Although we’d not met before, I heard Jan’s Northern Irish accent and instantly felt right at home. Yes, I sound very American by now, but both of my parents are Northern Irish and I actually lived there for a few years as a child. It felt like Jan and I had an immediate connection and I couldn’t wait to sit down, chat and get to know her better. Here she is…
