Outside Lands 2025 lineup Dave MacLean is back on Brew Ha Ha with Steve Jaxon and Herlinda Heras, to talk about Hidden Splendor Beer and Outside Lands 2025. He has been on the show before, the last time was this episode a couple of years ago. Hidden Splendor Beer is Dave's new brewery that will be opening soon. Dave likes to create good beer and then places to enjoy it in. That is what he did in his previous endeavor, Magnolia Brewing. He will be brewing a lot of traditional beers, bitter, mild, light mild, porter, stout, pilsners and lagers. It is part of Outside Lands 2025, in Golden Gate Park, on August 8, 9 & 10th. He has been on BHH before, the last time was this episode a couple of years ago. Dave is also a co-founder of Admiral Maltings and is the former owner of Magnolia Brewing. Dave is also here to tell us about opening a new brewery called Hidden Splendor Beer. It will get a different look and feel this year. Dave describes this year's Beer Lands setup from having seen the plans, but it is yet to be built in the new way. It will still be on the Polo field but closer to the main stage. They have 22 breweries including a couple of Cider houses. Each brewery will feature two beers. Dave's job is to curate a well-rounded menu of all the different beer styles. It should show the variety of beer being produced in the San Francisco area and not be not just an IPA fest or a lager fest. Marcus MonroeTake a walk with me down Fascination Street as I get to know Marcus Monroe. Marcus is a comedian now, but was a juggler for many, many years. I guess he is still both. In this episode, we chat about why Marcus decided to learn magic as a child, and then not long after, decided to be a juggler. He tells me a few stories from his juggling days; including some of his time juggling on various cruise ships. From Celebrity Cruises, to Disney Cruise, Marcus has performed on them all. He even tells a crazy story about how he got to juggle on Late Night With David Letterman, and an even more insane story about the time he was the opening act for the band Cake. Dave Hill is a comedian, writer, musician, actor, radio host, and man-about-town originally from Cleveland, Ohio but now living in New York City in a totally sweet apartment with a party deck and everything. This large population of men on the move made the new and booming city a hub of what "respectable" easterners considered vice: drinking, gambling, and sex work, among other activities. In City of Vice: Transience and San Francisco's Urban History, 1848-1917 (U Nebraska Press, 2024), historical architect James Mallery describes how and why San Francisco became the titular "city of vice" by tracking the people and activities that local elites would rather have stayed hidden. In doing so, he paints a remarkable picture of a city undertaking remarkable growth and the limits of elite power to control the habits of a large, mobile, urban population. Part 2 picks up right where we left off in Part 1, with Reem describing finding the anti-imperialist women's soccer team. Through that, she met her partner, who's now her co-parent. Reem worked in the nonprofit sector until around 2010, when she burned out. She'd moved to Oakland upon her return to the Bay Area, though she was still connected to The City through her work with AROC. She found herself wanting to take care of her community in other ways than what nonprofits were offering. She and her father had been estranged, but after leaving work, she joined him on a trip to the Middle East. The two were joined by Reem's youngest sister on a visit she calls "transformative." Besides gaining insight into who her dad was as a person, she truly discovered and fell in love with the food of her people. She knew right away that she wanted to create that feeling for others. Her Syrian family took note of her interest, and took her to bakeries in that country to get a glimpse of the kitchens after-hours. She returned to the Bay Area wanting to do two things: To combat tropes and negative stereotypes about Arab culture and people, and to do that by creating a sense of hospitality. Those two ideas would eventually form the foundation of what Reem's California does today. But she had to begin somewhere, and so she enrolled in a baking class at Laney College. Out of that class, she got a job with Arizmendi in Emeryville, where she got experience in a co-op and a kitchen. She started forming the idea of what her place would be, and while that came together, she settled on basing it around man'oushe, the street food of her people. Over a number of years and various kitchen and bartending jobs, Reem took as many entrepreneur classes as she could. The last of these was with La Cocina. The program helped steer her toward more practical, lower-cost methods of doing business. And that's where the saj comes into play. It's what Reem uses to make her man'oushe. "It's like an inverted tandoor," she says. An uncle in Lebanon was able to have two custom-made sajes for Reem. They arrived and that's what set it all in motion. They were approved for the 22nd and Bartlett market and the farmer's market at the Ferry Building around the same time. At both locations, they served Arabic tea and played Arabic music, creating that vibe Reem had been seeking. Within 16 months, they had grown from one market to five. Then La Cocina told Reem that it was time to take the operation brick-and-mortar. The first location was in Fruitvale in Oakland in 2017 and lasted a couple of years. Then, after a brief foray into fine-dining, the women owners of Mission Pie asked Reem if she wanted to take over their spot at Mission and 25th. She said yes and started doing the work to get open. And then the pandemic hit. Once the Mission location was able to open, Reem's California did better than a lot of nearby restaurants, partly because the food lends itself to take-out so easily. But for Reem, not being able to share space and that hospitality that was at least as important as the food itself was hard. Still, they found ways to connect with the community. In 2023, they opened a second location in the Ferry Building. They started appearing at Outside Lands a few years ago (and will be there again this year). Reem decided to start transitioning the business to a worker-owned model. The Admirals, on the sea of malt. Dave McLean from Admiral Maltings in Alameda is our guest on Brew Ha Ha with Steve Jaxon and Herlinda Heras. Admiral Dave has been on Brew Ha Ha before, including this interview recorded on June 28, 2018. Dave is also the Beer Lands coordinator for the Outside Lands music festival. On Saturday June 29 they are putting on It's The Malt, which they hope will become an annual event. Admiral Maltings' three partners all have backgrounds perfect for their roles in the company, in beer and agriculture. They wanted to have locally grown organic malt to use as brewers and now the company supplies many other brewers too. Dave explains the role of malt starting with the fact that beer is made mostly from barley but as it grows in the field it is not ready to use in brewing. The malting process involves steeping the grain in water, germinating it and then stopping that process. Then the brewer takes it and does all the other steps in the brewing process. Admiral Maltings is the first floor malting facility in California since Prohibition. They do different types of malt, to follow specifications that their customers, the brewers. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more. Admiral Maltings also operates The Rake pub, on the same site as the malting facility in Alameda. They only serve beers and distilled spirits that use their malts. The Rake has windows that overlook the malting floor, which is a unique feature. "Watching malt germinate has never been this much fun!" - Admiral Maltings Herlinda is just back from judging at the Aro Rojo 2024 competition in Monterrey, Mexico and she has brought some beers back from there, for tasting.
