Gala, Golden, Pink Lady, chaque année, près de 1,5 million de pommes sont récoltées en France, troisième producteur d'Europe. En culture conventionnelle, c'est l'un des fruits qui reçoit le plus de traitements phytosanitaires. Plus de 30 insecticides, fongicides ou herbicides sont pulvérisés sur les fruits en moyenne avant d'être mangés. Face au risque de pollution de l'environnement et aux risques pour la santé, l'objectif européen et français est de réduire de moitié l'usage des pesticides d'ici à 2030. Mais il existe peu de méthodes efficaces et naturelles pour s'en passer. Pour se passer des pesticides, des chercheurs de l'Inrae (l'Institut national de recherche pour l'agriculture, l'alimentation et l'environnement) tentent de développer de nouvelles méthodes. C'est le programme Cap zéro phyto. Bien rouge et sucrée, mais aussi résistante à la tavelure, l'une des principales maladies du pommier, la pomme Story est le fruit d'une belle histoire. Déjà plantée en Europe, elle commence à s'exporter aux États-Unis, en Afrique du Sud et au Chili. C'est dans les vergers de l'Inrae, à Beaucouzé, dans l'ouest de la France, qu'elle est née, dans le programme de sélection génétique du chercheur François Laurens. « On essaie de contribuer à la création de nouvelles variétés qui vont être moins traitées. On fait des croisements et puis on va sélectionner petit à petit les combinaisons qui rendent la variété plus résistante, explique le chercheur. Et ensuite, elle va être plantée dans des vergers comme ici. Il faut plusieurs années de croisements avant d'obtenir une variété. »À lire aussi Pesticides, produits phytopharmaceutiques : que disent ces termes de ceux qui les emploient ?L'utilisation des UVIl a fallu planter des milliers de pépins de pommes et plus de 20 ans pour trouver Story. Sa résistance à la tavelure n'est que partielle, mais elle permet déjà de réduire de 30 à 40 % les traitements contre le champignon qui attaque les fruits et les feuilles. C'est un des leviers pour remplacer définitivement les pesticides. « On n'y arrivera pas avec un produit miracle qui va remplacer un phyto, estime Claude Coureau, ingénieure, qui participe au projet Cap zéro phyto. Il va falloir additionner tout un tas de différentes pratiques, la génétique, des nouvelles variétés plus résistantes, les UV. Ça, c'est tout nouveau. Donc, on va cumuler tout un tas de techniques pour arriver à une solution qui va remplacer le phyto. »Les chercheurs ont en effet découvert que s'ils éclairaient les pommiers avec des rayons UV, les plantes activaient leurs défenses naturelles pour se protéger des coups de soleil. Elles seront un peu mieux préparées en cas d'agression. « L'idée, ça va être d'activer l'immunité de la plante avant que la maladie arrive, explique Matthieu Gaucher, ingénieur à l'Inrae, pour qu'elle se protège elle-même contre les maladies. »Une combinaison de leviers pour remplacer les pesticidesPour cela, en plus des rayons UV, il teste aussi divers produits stimulateurs des défenses des plantes dans les immenses serres du centre de recherche ou directement dans des vergers. « Donc, il y a par exemple le phosphonate de potassium qui est un minéral, poursuit le chercheur, du limocide, une huile essentielle d'orange douce, des extraits de plantes comme des parois de tomate, qui vont, lorsque appliqués sur d'autres plantes, activer les défenses de la plante. »Toutes ces pistes de recherches semblent prometteuses, mais il faudra encore plusieurs années de tests pour déterminer quelle combinaison de leviers sera suffisamment efficace pour remplacer les pesticides chimiques délétères pour la santé et l'environnement. She was head of pastry there under Chef Rudi Liebenberg and now runs the kitchen under the steady hand of Executive Chef Luke Barry. Together they've driven innovation in the iconic 'Nellie' Hight Team Tea and have launched a Saturday Braai experience for guests, as well as an extension of the Planet Bar serving a Mediterranean-inspired menu driven by local produce. We chatted about the revered hotel's commitment to working with sustainable local supplier and the importance of this 125-year-old institution's footprint on the culinary landscape of cape Town. Small wonder the 'Pink Lady' was recently named the best hotel in Africa and currently sits at number 28 on the World's Best Hotels list. Our discussion hits everything from his love of audio and video technology to just how much of the Jerry Lewis archive was delivered to the Library of Congress. There were lots of concerts this weekend. Doja Cat, the first female rapper ever to headline Coachella in its 25 year history, closed out the two weekend festival in a bodysuit covered with blonde hair. Yep, she rocked it. Nicki Minaj was in Detroit with her current Pink Lady tour and everything was going really well until this unwelcome guest made their way to the stage at the end of the night. Minaj was performing "Starships" when an unknown object was thrown toward her at the stage by somebody close to the end of the catwalk where she was standing. It was a small item, but it just narrowly missed Nicki's face and landed on the stage. So what did she do? Picked it up and threw it back at the person. I don't blame her. In other news, David Beckham has filed a lawsuit against Mark Wahlberg over a deal that fell apart regarding their partnership in that F45 Training deal. Well, per TMZ, the legendary soccer star's company is claiming that Wahlberg's investment group duped him into doing business with the fitness company in which the actor has a 36 percent interest and is on the board of directors. You know, they became friends once the Beckhams moved to Los Angeles. But according to the lawsuit, Beckham lost $10 million when the stock he owned in the deal wasn't given to him until after the stock prices had fallen. Wahlberg and his co-defendants asked the judge to dismiss the lawsuit. They describe it as fraudulent conduct, but a judge has ruled against them. Well, it turns out Beckham isn't the only athlete who has sued F45 Training. Former NFL wide receiver Terrell Owens sued them back in 2017, claiming the company never paid him the $700,000 he was promised in a promotional video deal. Things that make you go hmm... For Valentines Day we are bringing you a cocktail from the golden era of cocktails, the Pink Lady. A once popular drink among men and women, but then pink became uncool for men. Foolishness! Brad takes us through the history of the Pink Lady, bathtub gin, and why pink became uncool. Of course, we get a fantastic Pink Lady cocktail recipe, taken from Death & Co.'s cocktail book. Jules brings us The Pink Fizz.  The Pink Lady In your Boston Shaker add:  Egg white ½ oz Laird's Apple Brandy  1.5 oz Plymouth Gin ¾ oz Lemon Juice ¾ oz Acacia Honey Syrup (any light honey syrup will do) ¼ oz Grenadine Dry shake… hard (30 seconds later) Add ice and shake again (20 seconds) Pour over ice in your double rocks glass Garnish with 3 cherries on a pick (I used brandied)  How to make Acacia Honey Syrup 2 parts honey, 1 part warm water - in a jar, shake until incorporated The Pink Fizz: In your Boston Shaker add: 1 egg white 1.5 oz gin, or gin alternative ½ oz Apple brandy, or n/a apple cider* ¾ oz lemon juice ¾ oz hibiscus syrup ½ oz grenadine Dry shake… really hard (30 seconds) Add Ice… shake hard again (20 seconds) In a tall Collins glass, pour approx. 1 oz club soda on the bottom, strain cocktail over the club soda and top with approx. 2oz club soda on top. Can garnish with cherries on a cocktail pick!
