Whether it started purely as a quest for efficiency, or as a way to achieve consistency in a blend, pre-blending green coffee is a pretty staple practice for coffee roasters. The alternative, and perhaps original way of blending is the classic post-roast blend whose adherents tout its ability to give them ulitmate control of each coffee and thus better quality.  Whether you do one or both of these methods of blending in your roastery, it always helps to explore the why behind them, and talk about the possible benefits and drawbacks of each.  To help us understand this more I am thrilled to bring on to the show roasting educator extraordinaire and founder of Relative Coffee Co., Bryant Banker-Scannell!  Bryant has helped launch the coffee careers of hundreds of new roasters through his work as lead roasting instructor and the heart of the in-house roastery at Mill City Roasters®. He also owns and operates Relative Coffee Co. which combines his passion of roasting, design, and photography to create a fun and tasty coffee brand.  Based in Minneapolis, Bryant has worked in cafe and roasting positions since 2011. With over a decade of roasting experience, he believes coffee should be approachable, fun, and unique to your experience in the industry. We discuss: Bryant's Beginning in Coffee  Education Based in Reality The Art and Science of Coffee Roasting The State of Blending Coffee Omni-Roasting vs. Individual Characteristics Pre-Blending vs. Post-Roast Blending The importance of Quality Balanced with Efficiency The Importance of Heat Management in Roasting Post-Roast Blending: Advantages and Considerations Links: www.relativecoffeeco.com Instagram: @relativecoffeeco Related episodes:  ROR #24 : Perspectives on Roasting for Espresso w/ Jaroslav Tuček of Doubleshot, Czech Republic   RoR #5: Time and Color in Roasting w/ Morten Munchow of Coffee Mind” ROR #8 How Post-Harvest Processing Impacts Flavor w/ Siva Subramanian and Byron Holcomb of Olam Food Ingredients RoR #4: Practical Thermal Dynamics w/ Candice Madison of Royal Coffee / The Crown Oak Our Sponsor for Rate of Rise! www.millcityroasters.com

Mike Scannell coached Grant Fisher to two bronze medals (5000 and 10,000 meters) in the Paris Olympics--a feat no American runner had achieved previously. Which brings up a good question: Who is Mike Scannell? Turns out he is a forever-friend of Grant Fisher's family, and coached Fisher to 2 Footlocker XC Championships victories back when Fisher was a Michigan high schooler. Then he sat back and watched Fisher run 4 years at Stanford, and 4 years with the Bowerman Track Club. A year ago, Fisher called Scannell to say he was ready for a change of location and coaching. He moved to Park City, UT, and Scannell wrote up a training plan for the long pre-Paris buildup. In this Pod, Scannell sketches his personal background in running (2:16 marathon!), and describes how he and Fisher designed their successful Olympic plan. Some major topics: # Scannell's 4 key workouts for every training week # How to build speed with a minimal amount of speedwork # What Scannell thinks of Fisher's marathon potential # Can Jakob Ingebrigtsen be beaten at 5000 meters? # The current state of American running And much more. On X.com, Scannell posts a daily motivational tip. Here's a great recent one: "We always save something for ‘another day.'  That's in part why I don't do, ‘last one, fast one.'  The other reason is that I don't want kids to ‘fail' in practice, and running all out means you run until your body fails. I like kids to walk away with success on the brain." WHERE TO FIND "RUNNING: STATE OF THE SPORT" Use your smartphone to download podcast apps from Apple, Spotify, Pandora, or YouTube Podcasts. Mike Scannell: The Mysterious Coaching Hero Of 2x Olympic Medalist Grant Fisher

Formerly anonymous Arizona high school running coach Mike Scannell has become a sensation in the American distance running community with the amazing success of his runner Grant Fisher, the undisputed king of American long distance running! Grant had a sensational Paris Olympic Games, winning bronze medals in the 5,000 and 10,000 meters. These are events where only a handful of Americans have ever won Olympic medals, ever! Mike is an old friend, a former elite collegiate runner, and a fellow competitor on the professional duathlon circuit, and it was amazing to catch up with him and detail the amazing Olympic journey! The backstory of Grant and Mike is pretty amazing. Mike coached Grant in high school in Michigan, where he became one of only eight high schoolers ever to break four minutes in the mile. Grant then headed off to a great NCAA career in Stanford and a pro career with the elite Bowerman Track Club team in Oregon. In a surprise mid-career shift, Grant decided to go about it his own way. He moved to Park City, UT for altitude training, and phoned up his old high school coach looking for guidance. This is less than a year before the Olympics as America's top distance runner! In this show, Mike will discuss the risks and pressures elite athletes face (and their coaches!) You'll be taken behind the scenes for the Paris Games and the extraordinary measures Grant and Mike took to ensure he could focus and succeed.  You'll love the story of how Grant and Mike were locked inside the Olympic stadium late at night after winning his 10,000 meter bronze. You'll learn about Mike's evolved approach where he is solely focused on serving the athlete and avoids getting the all-too-common coaching ego into the mix. You'll learn about today's popular scientific approach to endurance training centered upon measuring and controlling blood lactate levels during workouts, and why many runners "ruin their workouts" with a less disciplined approach. You'll learn the benefits of altitude training, and how Grant's mindset and extensive rehearsals helped him execute awesome strategy at both Olympic races.  At the end, Mike provides some profound insights for young runners and their parents about the importance of being motivated naturally and intrinsically. You'll also learn why, a couple decades ago, crime didn't pay in Tucson, AZ, where you might have gotten into a foot pursuit with someone who would most definitely outlast you...I've known and studied lots of coaches over the years, and I don't think you'll find a more healthy and evolved disposition than that embodied by Mike. No wonder Grant phoned him up out of the blue and asked for help going and getting some Olympic medals! Enjoy the show. Young runners can get a daily tip of inspiration by following Mike on X @realironmike   TIMESTAMPS: We take a behind-the-scenes look at what goes on with Olympic athletes and their coaches. [00:53] Coaching Grant Fisher in the Olympics, Mike is able to share his expertise. [06:06] What we commonly see these days are high profile teams with big sponsors. It's a different approach from what Mike and Grant have done. [07:54] How did Mike's own experiences with coaches help him to get this particular disposition? [13:43] With the scientific approach, the thing the runner can do is check blood lactate. [16:20] Besides checking blook lactate, Mike checks heart rate, hematocrit and hemoglobin and other things. [19:38] When training at altitude or in the heat of Arizona, you have to cut the tempos why back. [21:19] It is very easy to ruin a workout by using that competitive intensity to work really hard. [23:40] What kind of volume and load can you put on the runner so that he absorbs the training and is ready for the next session? [27:33] You can have all the tech toys in the world but you have to listen to it! [29:48] When you make a detailed plan for the athlete, how often to you deviate from that plan? [31:17] Grant takes good care of himself.  He takes care of sleep, massage, his food at home. [39:58] How do they manage the constant risk of overuse injuries? [41:05] In taking on the job to coach Grant Fisher, did you feel nervous about the whole USA expecting some medals? [45:36] What was his experience in Paris? What was the race strategy? [50:00] Living and training at altitude helps your body build additional red blood cells, but when you come down to sea level, you lose some of the benefits. [59:34] When running in the prelim, all you need is to be in the eight finalists. [01:04:13] Staying in the Olympic Village with the other athletes can be fine for social interactions, however, when you have big important events to still compete in, being around rowdy parties doesn't work. [01:05:53] You have to plan on when you need to go faster when you are in the big race.  [01:09:15] There is no reason for Grant Fisher to take the lead in the Olympics first 4,000 meters. [01:12:46] Mike's coaching method involves only when the athlete himself asks for coaching, not if the parent asks. [01:21:50] High school kids don't know what they can't do so please don't tell them. Ive heard his story and have seen some of his work but not until recently after playing several rounds did I convince him to come on the show. His journey is one of challenge and heartache. A seasoned hockey player at a young age and talent for hockey had him prepped for greatness and leaving his small community in South Boston. Through many trials his hockey career faded as his passion for drugs and alcohol became greater. He was no stranger to consequences and pain from his decisions and after years of trouble and strife he landed back in his hometown living in a halfway house with three other sober men fighting for his life.By staying the course and listening to other sober men, he dove back into work and with his connections found opportunities that took him all over the world. Now the group organizes twice-yearly missions to the area, providing medical care each spring and fall.“Anytime you're doing mission work, I think of going in and making sure that local surgeons and physicians are involved, making sure that there's good communication, making sure that there is good follow-up for those patients,” Dr. Scannell says. “So it's never something that you go in and you do these big surgeries, and then you're just gone.” The trips have been profoundly fulfilling for Dr. Scannell, both in terms of fighting burnout, reigniting his passion for the profession, and building long-term friendships with the other doctors who travel with him.

Sometimes you're fortunate enough to meet someone by chance and your interaction — even if short, has a significant impact on your life. When I happened upon Tom Scannell in May of 2020 during a family trip to Pine Island, Florida, I knew I'd found a fellow freedom fighter in this humble yet extremely driven lifelong, extremely fit farmer. He gave us a tour of his Pineshine Farms, patiently answered my barrage of questions and very generously gave me a book that is now one of my favorite reads: Everything I Want to do is Illegal by Joel Salatin, owner of Polyface Farms.Tom is a rebel in the agricultural space. He had to unlearn most of what he was taught to grow “beyond organic” food in a regenerative fashion, and I admire his focuses on appreciating beauty in Nature and harmonizing with our natural resources. I also love that he's not afraid to “fail forward” nor speak the truth, whether it means exposing the ties between big agriculture and the chemical and pharmaceutical industries, discussing the war on real milk or pointing out the scary fact that just four meat processors control ninety percent of the United States industry. Salatin's book goes into excellent detail on this, as well as the ridiculous hurdles our government (funded by big ag) makes small farmers jump in order to run their operations. It's hair-pull-out maddening!Tom rightfully comments that in today's terribly busy and off track society that Americans “take better care of their cars than their bodies… and spend more on lawn care than growing food.” Do not despair as there is plenty of hope within his message! Tom also explains how the environment in which we live and the foods we consume can help us greatly in creating or regaining our health. And we discuss how intentional purchasing from local farmers helps heal your body, the soil and the community. Give episode 32 a listen here or on Apple, Spotify or Google Play.
