On the show we also try out the new double-the-size AeroPress XL and make not one but TWO delicious YesPlz “Soft Power” Blend coffees in one pump! It's a genuine flavor journey and testament to the size and girth of one of specialty coffee's favorite brew methods. To celebrate coffee history's final SCA Expo we make ourselves elevated coffees with the convenience of a Keurig. We recently partnered with a company called BestCup who crafts Keurig compatible “Hi-Fi Coffee Pods” using quality coffees roasted by respected roasters like Amavida and La Barba (just to name a few). It's time again for another rousing episode of the Jordan Michelman and Zachary Carlsen on the Sprudge coffee podcast The Coffee Sprudgecast! Learn about how we curate our popular city guides, find out about the 16th Annual Sprudgie Award Finalists (voting open now!) On this episode of The Coffee Sprudgecast Michelman and Carlsen wet their whistles with a Chemex brew of Bekele Kachara Natural out of Muraga, Ethiopia roasted by our friends and partners Heartwood Coffee Roasters. "Bekele employs a meticulous approach to coffee farming," Heartwood writes on its website, "using shaded pre-drying beds on-site and nurturing specific coffee varieties. he uses organic methods, fertilizing his farm with compost or agricultural residues. His expertise in coffee processing comes from years of experience, including work at stations in the Bensa and Bona districts of the Sidama region." Delicious! As things started to heat up, the hosts alleyooped a Ceado Hoop Brew of Partners Coffee's *secret process* Ethiopia Suke Quto. What's the big secret? We have a few guesses after tasting flavor notes of wild cherry, pineapple candy, and concord grape. So too does Partners Coffee green buyer Sam Klein, who writes,  "we mean it when we say 'secret' process—the few things we do know only add to the mystery. (We think there was inspiration drawn from a globally beloved soft drink.) What's left, then, is sensory clues. It appears to have been dried as a natural (with the fruit still intact), judging from the intensity of fruit flavor, syrupy body, and the reddish appearance of the unroasted coffee. The flavors are articulate and complex, and we're consistently reminded of grape and cherry soda, lambrusco, and root beer, which gradually mellow to white peach, pineapple candy, and passionfruit. Signs point to some kind of intervention in the fermentation process that would aid in the coffee's complexity—perhaps an additional fermentation stage, possibly in an environment where ambient oxygen has been displaced or removed." We love a little mystery in our cup. Who doesn't? This episode of the Coffee Sprudgecast is sponsored by Ceado, Pacific Barista Series, La Marzocco, Ghirardelli, and DONA.

Weihong Zhang of BlendIn Coffee Club in Houston, Texas, your 2024 United States Brewers Cup champion, took top honors in Rancho Cucamonga using a decaf Typica variety from Colombia, with a coffee he serves on bar every day. Pick up a bag of it online or in their cafe year-round. This is exactly what host Jordan Michelman did the evening Zhang was announced the 2024 champion! The decaf underwent a decaffeination process developed by Oscar Hernandez of Finca Los Nogales in Huila, Colombia. After de-pulping, the green coffee is then decaffeinated using, in part, its mucilage, which helps “[avoid] off flavors and [enhance] complexity with floral and fruity notes,” Zhang told Sprudge in an interview with Zac Cadwalader. Sprudge's coverage of the 2024 US Barista Championship in Rancho Cucamonga is presented in partnership with Third Wave Water.  Zachary Carlsen replicates the brew process deployed on the Brewers Cup stage as accurately as possible (with a slightly different hand grinder and variety of Hario V60—listen in to find out more). The process is especially interesting due to its use of two water temperatures and a touch of water bypass at the end.

Jordan Michelman and Zachary Carlsen are back for another exciting episode of the coffee podcast The Coffee Sprudgecast. Michelman and Carlsen drink some stunning coffee from Monogram Coffee. The hosts enjoy La Llama from Bolivia and an exceptional offering from Finca Takesi, a small-screen gesha coffee brewed in an automated dripper and a Chemex, respectively. La Llama is part of their Wonder Collection, coffees that exhibit an adventurous quality and is a Coco Natural processed coffee. Monogram explains: La Llama does grow many different varieties, but they are really well known for their beautiful caturras and javas. This particular coffee has been processed using Agricafe's Coco Natural process, which leaves coffee to ferment longer than the average natural process. They pay very close attention to their processing during every step to ensure that they produce the most delicious coffee that they can. They refer to this process as “Coco Natural” because of the way the bean resembles a cocoa bean at the end of processing. Monogram Coffee participates in our new Roasters Village program. On the third episode of Seed To Cup, James Beard Award-winning journalist and Sprudge co-founder Jordan Michelman interviews Abigail Forsyth, the co-founder, and CEO of KeepCup, based in Melbourne, Australia. Founded in 2007 by Forsyth and her brother, Jamie, KeepCup was designed to address an intrinsic issue in the specialty coffee industry: reliance on disposable cups. "Today, KeepCups are used in more than 65 countries around the world. KeepCup users divert millions of disposable cups from landfill every day, and through their actions inspire others to do the same," says the company. Abigail Forsyth continues to direct the brand from its new headquarters in Clifton Hill. 2020 has offered an unprecedented set of challenges to the reusable movement, as cafes around the world convert to takeaway-only and struggle to keep up with an ever-changing set of information about the transmission of COVID-19. This moment feels especially desperate from where we're sitting right now—Sprudge is published out of Portland, Oregon, currently engulfed in smoke from the largest wildfire event in modern history. But it's also an opportunity, a defining moment for the human race to address the reality of environmental destruction. "COVID-19 is a frightening glimpse of what is to come," Forsyth told Smart Company earlier this year. "Zoonotic diseases, which spread from animals to humans, climate change, loss of biodiversity, plastic oceans—they are all facets of how we co-exist with the natural system. This is a wakeup call to bring our economic and social systems back into line with earth's finite resources." All this and more is addressed in our interview with Abigal Forsyth. This season of Seed To Cup is sponsored by La Marzocco and Seattle Coffee Gear.

As Max Ng tells it, his start at Momofuku—where he has risen to executive chef at the restaurant group’s New York City flagship, Ssam Bar—began when he showed up, as a young CIA student, with a backpack, knives, and a chef coat. Unannounced. On a busy Saturday afternoon. Asking for a “trail”—restaurant parlance for an unpaid tryout. “Whoa, whoa, whoa, slow down, this is a fucking Saturday and you are demanding a trail,” Max, laughing, recalls a cook telling him. “Come back in a week.” Ng did return, and has never left, and I wanted to talk to him this week about his experience working for David Chang and his time living in the United States far from his home in Singapore. It was so good to get to know this rising star in the chef world. Also on the show we have the editors of influential coffee blog Sprudge, Zachary Carlsen and Jordan Michelman. Today’s episode is our annual hangover party podcast, an event we host here at the studio in the wake of Upper & Downers, our coffee beer festival. People have started traveling from all over the world—in some cases, as far away as Japan!—to attend this insane mashup of coffee and beer culture we put together with our friend Stephen Morrissey (a world barista champion and works at the Specialty Coffee Association). And this hangover party, which we stupidly (brilliantly?) throw the morning after the big event, has become a bit like a brunch after a wedding. We get to sit down with the out-of-towners, drink even more coffee and beer, and for those brewers who want to celebrate coffee beers with us, but can’t make the fest, they send us bottles and cans of their latest experiments just for the party. We get some biscuits from Bang Bang, while some friends and roasters operate the La Marzocco espresso machine—in some cases getting a personal training session from people on the Acaia scales. Beyond that, we lounge. We also use that time as a chance to revisit the festival, talk about our favorite things, and interview some of the brewers and roasters that participated. We invited Jordan Michelman of Sprudge.com to sit in with us again, which is always super fun for me because I get to hear from someone who sort of does what GBH does, but for coffee. Plus, he’s been at it a lot longer than I have, and it shows.  This is a long one with a lot of different, shorter interviews just stacked end-to-end. So settle in, go for a drive, get in a run, whatever you gotta do. Hope you enjoy it.  Photo by Nick Kohout of Acaia
