Pét-Nat has a “reputation.” Some people love it, and some people think it is a revival of an ancient technique that should have stayed ancient. But, did you know that the Pét-Nat style of making sparkling wine, more broadly known as Méthode Ancestrale, is hundreds of years older than the Méthode Champenoise? The origins of Pét-Nat probably came about by accident when wine that wasn't quite done fermenting yet was bottled, and so carbon dioxide, which is produced when yeast turns sugar into alcohol, was trapped in the bottle, producing bubbles that people found to be a pleasant surprise. Pét-Nat is also sort of attached to the Natural Wine movement which, in and of itself, is not without controversy, which we discuss in this episode. Some people find Natural wines and Pét-Nat to be more authentic and unspoiled, even exciting, while others find it to be flawed and funky. In this episode, we tasted and reviewed two Pét-Nat wines that could not be more different, and the ratings of each wine were really different between Joe and Carmela, which was really fun. Recipes below.Pathetic in Pink1 1/2 oz Hibiscus and Orange-Infused Vodka1/2 oz Cointreau1/4 oz Simple Syrup3/4 oz Lime Juice2-3 oz Sparking Wine or Sparkling WaterShake first four ingredients with ice until well-chilled. Strain into a rocks glass with fresh ice. Top with Sparkling Wine or Water. Mix gently to combine.To infuse vodka: Take 24 oz of Vodka and place in a large jar with three Hibiscus Tea bags and three large orange peels. Let infuse for 6-24 hours. Remove bags and peels.White Elephant2 oz Whisk(e)y1 part Old Fashioned mix/syrup received as gift2-4 dashes of bittersOrange twist3-7 brandied cherries (as needed)Combine whisk(e)y, mix/syrup and bitters in a mixing glass with ice. Stir for 15-30 seconds or desired dilution. Strain over a single large chunk of ice in a rocks glass. Express twist over the glass and rub along the rim, then drop it into the glass. In this episode of Spanish Loops, we uncork the fascinating story behind cava, Spain's most famous sparkling wine and one of the country's most recognizable celebratory drinks. Although often compared to champagne, cava has its own identity, history, and cultural significance deeply rooted in Spain, especially in Catalonia.The story begins with the influence of French champagne in the 19th century. Champagne, produced in the Champagne region of France using the traditional method of secondary fermentation in the bottle, had already become a symbol of luxury and celebration across Europe. Spanish winemakers, inspired by this prestigious technique, began experimenting with the same method in the wine-growing regions near Barcelona. By the late 1800s, producers in the Penedès region of Catalonia successfully adapted the traditional process using local grape varieties such as Macabeo, Xarel·lo, and Parellada.However, international regulations eventually restricted the use of the name “champagne” exclusively to wines produced in the Champagne region of France. Spanish producers responded by embracing a new identity for their sparkling wine: cava, a word that means “cellar” in Spanish, referring to the underground caves where the bottles age during fermentation.Today, cava is produced mainly in Catalonia—particularly in the Penedès region—but it is also made in several other wine-producing areas of Spain. Over time, it has become an essential part of Spanish culture and celebrations. From weddings and birthdays to Christmas dinners and New Year's Eve toasts, cava is the drink that marks life's most joyful moments. In Spain, it is nearly impossible to imagine ringing in the new year without a glass of bubbly in hand.Beyond its cultural importance, cava is also a major economic engine for the regions where it is produced.
