Key Takeaways The little CO₂ bubbles in sparkling wine dissolve in your saliva and form a physical barrier between certain molecules hitting your tongue and your ability to taste certain things. Sweetness, is the first thing that'll get blocked out. So, if you have a sparkling wine that has some sweetness, as your saliva builds up with bubbles, you won't perceive it. We in wine extrapolate a little bit and think, “It's a white wine,” so I may psychosomatically associate it with white peppery things, rather than a red wine, which might be black pepper. It's actually the same sesquiterpene, called rotundone. We just trick ourselves into perceiving it one way rather than the other. This happens a lot in wine. Copper is naturally antimicrobial and antifungal, which is why we use it in plumbing, hospitals, and as touchpads on doors. Fungal pests like downy and powdery mildew, which affect vines. We spray vines with copper base concoctions to prevent that fungus building up, which will destroy our harvests. But it's not just the heavy metal, but it when it rains, it'll hit your soils and affect earthworms and all of the things that we know to be really good for the soils, naturally. We stop our soil's ability to just look after itself. We haven't found a unified way to overcome downy and powdery mildew without the use of copper. This interview at Korbel Champagne Cellars dates back to September of 2021. We were just easing out of the pandemic, so to play it safe, I had the pleasure of joining owner, president, and chairman Gary Heck poolside. Yes, there is a swimming pool off the guest house at the winery. It was a beautiful fall morning, and to have a Korbel mimosa in hand was a bonus! Korbel Champagne Cellars has a multi-layered history full of drama and perseverance. We touch upon Gary's life on the property and how the Korbel brothers eventually created California "champagne" in 1882. Interestingly, the Hecks are only the second family to run the business, and as a result of their decades of determination, the brand can be found across the U.S. and internationally. It's a hodgepodge this week on Behind the Mitten, with stories coming at you from all over Michigan.We start off the show with Angie Quinn, the executive director of the Michigan Legacy Art Park, which is located at Crystal Mountain in Thompsonville. We recently got to do a snowy hike through this very unique art experience, and interviewed Angie trailside afterwards. Spread out over thirty beautiful acres, the Art Park boasts two miles of hiking trails that take you around almost fifty different sculptures. The park has been leasing this space from the resort, but just last year Crystal donated the land to the organization permanently. It is a super cool way to experience art, you can enter the park from dawn to dusk, on foot, snowshoes or skis.Then we have a first on Behind the Mitten, as Amy interivews her husband Jerry Adams. A graduate of the University of Michigan, Jerry shares some of his former favorite haunts, and how they have changed over the years. With a daughter currently attending U of M, we visit regularly, and recently got to enjoy burgers and fries at Krazy Jim's Blimpie Burger, a favorite no matter when you graduated. With the holidays coming, I thought it would be a good time to do a show on a different kind of sparkling wine, so this time I cover Italy's premier traditional method sparkling wine, Franciacorta. Map: Consorzio per la tutela del Franciacorta Franciacorta is a high quality Italian sparkling wine made in the area of Brescia in Lombardy (the Italian region where Milan is located). Franciacorta, as a sparkling wine, came into being in the 1960s but it didn't take long for it to gain a favorable reputation, which still holds today. With very distinctive geographical features and a unique microclimate, the wines here are marked by a balance of excellent acidity and lovely aromas of fruit, flowers, nuts and more. The thing that makes Franciacorta stand out among other sparklers from Italy is that wines from this region can only be produced using the traditional method (like Champagne, unlike Prosecco) and must be made primarily from the French grapes – Chardonnay, Pinot nero (Pinot noir), and Pinot bianco (Pinot blanc). Photo: Consorzio per la tutela del Franciacorta Despite the similarities with their French counterpart, the terroir in Franciacorta presents weather patterns that include a lake effect, Alpine breezes, and ample wind. The entire area was formed by glacial movement – no by a small sea receding and leaving a bed of chalky limestone as was the case in Champagne. Priced at a premium, these wines are ideal if you love Champagne or sparkling wine but want something fruitier, fuller, and with less piercing acidity.
