We have all seen it. I have seen it a good number of times. The café that was exemplary, sold, the new owner changes the menu, brings in a few kids to serve, and then wonders why six months later they are out of business. As the hospitality people yet again told their tale of woe, and do not get me wrong, times have been tight and many an outlet has struggled, but as the new numbers got rolled out for the obligatory headline, it is probably time to get a bit honest about a sector that at times is its own worst enemy. In the past 12 months, 2,564 hospitality outlets have closed. That's an increase of 19%. As a stat it's miserable. But ask yourself this: are all the cafes gone? No. So is it possible we were over-cafe'd? Is part of the problem with hospitality the fact anyone can join? You simply write a cheque, put an apron on, and you are in the hospitality game. Do you know what you are doing? Are you interested in excelling or are you looking for an easy job and an easy job for your family? Are you providing something new, or better, or different, or just adding to the collection of people who pedal paninis and bowls of cappuccino? We talk a lot about the two step, or two stage, economy. Normally it's rural vs urban, Auckland vs Queenstown. But there is another two step story: the people who are good at what they do and those who aren't. This doesn't just apply to hospitality. But hospitality is the standout example because it is one of those sectors where anyone can join and you can be anything from exceptional to useless, and a lot of things in-between. In 1990 Paul Keating, then Australian Treasurer, famously said this is the recession we had to have. Australia had not known a recession and had always been the lucky country. But part of the argument was a recession cleans out the hopeless. It tidies an economy up. The strong survive because they hustle and adjust. The weak wither and die and out of the renewal starts something afresh. A lot of people liquidating only tells you a fraction of the story and the story is supposed to make you feel bad. It shouldn't. It's life. If you are good and determined and work hard in hospitality or anywhere else, you'll be fine. If you are really determined, you will be more than fine. I went out for lunch to a cafe the other day and our table was served by a couple of waiters who all seemed to have a similar vibe about them. They just. Did. Not. Seem. To. Care. No smiling. No banter. No small talk or polite conversation. Just this blank look on their faces. You sit there and think “did they hear me”? You ever so politely repeat yourself in case they didn't. But they did. They got it. There's just no engagement. Face colder than a which's tit. No refills of your water. No "would you like another coffee? Like, hello!? Is anybody in there? Is anyone home? Why are you all moving so slowly? Shouldn't you be rushing the joint taking orders and filling coffees? When I was young it was drilled into us: when you're waiting tables and taking orders. You work your way up from "dish pig" to front of House. You basically run round busy as a bee, trying to impress your boss, trying to win your guests over. Taking wagers of who might get a tip. Can I help you, sir? What more can I get you? You'd help the elderly into their seats. You'd bend over backwards to make everyone happy. And these guys are on atleast $23 an hour. And I know what you're thinking. Maybe I'm the a-hole. Maybe I've forgotten mum's many sermons on good manners and etiquette? So I asked the people who I was out to lunch with. They all thought the same thing. I asked friends who are teachers. I asked parents with kids around that age. Guess what? They've all noticed the same thing happening. Hell, there's even a tiktok trend called ‘the gen Z stare'…. Which describes what I saw at the cafe… the vacant look a Gen Zer gives in response to a question or statement. If it's in tiktok then it must be a thing, right? So the question is why? Was it covid? Was it everyone wearing masks? So much of how we communicate is through facial expressions. Maybe they've missed out in years of social queues and norms? Is the smartphones? Is it both? Or, maybe, just maybe, they just don't give a shit? Maybe we have on our hands a generation of young people who don't really think they NEED to be bothering with mundane things like work. Disclaimer: this is is obviously not an entire generation of young people. And some people are just shy. I get that. We've all had excellent experiences. Designing the experience is pretty much all we focus on. From the colors, textures, sounds, layouts - to the drinks themselves, people's experience is something that is born from design. If we want it to be a good one, we need to put in specific effort across many different areas. Connecticut Explored and our podcast, Grating the Nutmeg, have featured many of the heritage trails that mark the important histories and sites of Connecticut's people. Preservation Connecticut has undertaken a survey of LGBTQ+ heritage sites across the state. Now, Grating the Nutmeg and Preservation Connecticut have teamed up to bring you a three-episode podcast series that pairs new research on LGBTQ+ identity and activism with accounts of the Connecticut places where history was made. The episodes include a thriving vegetarian cafe-bookstore run by lesbian feminists in a working-class former factory town, a transgender medical researcher working on an urgent public health issue in the center of Connecticut politics, and a gay, Jewish, best-selling children's book author in affluent Fairfield County. In this episode, Dr. Alex Ketchum, author of Ingredients for Revolution: A History of American Feminist Restaurants, Cafes, and Coffeehouses, published by Concordia University Press in 2022, reveals the history of women-owned restaurants in the 1970s and 1980s that had a feminist mission. In a first-ever overview of feminist cafe subculture, Ketchum's book details the role eateries played in social justice movements, including women's and LGBTQ+ liberation, and food justice. And we will highlight Bloodroot, the almost 50-year-old lesbian-feminist bookstore, collective, and vegetarian restaurant in Bridgeport.
