It's time again for another rousing episode of the Jordan Michelman and Zachary Carlsen on the Sprudge coffee podcast The Coffee Sprudgecast! Learn about how we curate our popular city guides, find out about the 16th Annual Sprudgie Award Finalists (voting open now!) On this episode of The Coffee Sprudgecast Michelman and Carlsen wet their whistles with a Chemex brew of Bekele Kachara Natural out of Muraga, Ethiopia roasted by our friends and partners Heartwood Coffee Roasters. "Bekele employs a meticulous approach to coffee farming," Heartwood writes on its website, "using shaded pre-drying beds on-site and nurturing specific coffee varieties. he uses organic methods, fertilizing his farm with compost or agricultural residues. His expertise in coffee processing comes from years of experience, including work at stations in the Bensa and Bona districts of the Sidama region." Delicious! As things started to heat up, the hosts alleyooped a Ceado Hoop Brew of Partners Coffee's *secret process* Ethiopia Suke Quto. What's the big secret? We have a few guesses after tasting flavor notes of wild cherry, pineapple candy, and concord grape. So too does Partners Coffee green buyer Sam Klein, who writes,  "we mean it when we say 'secret' process—the few things we do know only add to the mystery. (We think there was inspiration drawn from a globally beloved soft drink.) What's left, then, is sensory clues. It appears to have been dried as a natural (with the fruit still intact), judging from the intensity of fruit flavor, syrupy body, and the reddish appearance of the unroasted coffee. The flavors are articulate and complex, and we're consistently reminded of grape and cherry soda, lambrusco, and root beer, which gradually mellow to white peach, pineapple candy, and passionfruit. Signs point to some kind of intervention in the fermentation process that would aid in the coffee's complexity—perhaps an additional fermentation stage, possibly in an environment where ambient oxygen has been displaced or removed." The disparity we see in the value stream today, where those growing coffee do not receive the fruit of their labor, is the consequence.  Today we get to talk with someone who has been laboring hard to honor coffee's root in an effort to create a better future for both those who grow coffee as well as for under served communities whose own cultures are tied closely to coffee's history.  Bartholomew Jones is an emcee, cxffee nerd, and multi-hyphenate creative. Alongside his wife, Renata Henderson, he is the co-founder of Cxffeeblack and co-owner of the Anti-Gentrification Cxffee Club, a coffee educational center and cultural hub located in Memphis, TN. Founded in 2018, Cxffeeblack is a community-oriented, multi-disciplinary, education-based coffee company that became a trailblazer in the coffee industry by creating an entirely all Black coffee supply chain from Ethiopia to Memphis, TN, the first of its kind. Brewing The Best Decaf In America On The Coffee Sprudgecast

On the latest episode of the Coffee Sprudgecast, Zachary Carlsen brews BlendIn Coffee Club's Colombia Los Nogales, the winning 2024 US Brewers Cup Championship coffee (which also happens to be their house decaf coffee!) Weihong Zhang of BlendIn Coffee Club in Houston, Texas, your 2024 United States Brewers Cup champion, took top honors in Rancho Cucamonga using a decaf Typica variety from Colombia, with a coffee he serves on bar every day. Pick up a bag of it online or in their cafe year-round. This is exactly what host Jordan Michelman did the evening Zhang was announced the 2024 champion! The decaf underwent a decaffeination process developed by Oscar Hernandez of Finca Los Nogales in Huila, Colombia. After de-pulping, the green coffee is then decaffeinated using, in part, its mucilage, which helps “[avoid] off flavors and [enhance] complexity with floral and fruity notes,” Zhang told Sprudge in an interview with Zac Cadwalader. Sprudge's coverage of the 2024 US Barista Championship in Rancho Cucamonga is presented in partnership with Third Wave Water.  Zachary Carlsen replicates the brew process deployed on the Brewers Cup stage as accurately as possible (with a slightly different hand grinder and variety of Hario V60—listen in to find out more). The process is especially interesting due to its use of two water temperatures and a touch of water bypass at the end.

It's really fun having Alex Delany on the show and getting to know the food and drink (and menswear and rare book) writer and collector a little bit better. You may know Alex from his time working at Bon Appétit as a writer covering home cooking, wine, cocktails, and naturally processed coffee (respect), as well as a series of memorable YouTube videos. But since leaving BA in early 2021, Alex has been busy working as a consultant, podcaster, wine educator, and most recently as the author of a really cool city guide called “Everything Good.” As the name suggests, the free Google Doc notes the good things happening in neighborhoods around New York City. For today's episode of the Entrepreneur Evolution Podcast, we are joined by Nani Ferreira-Mathews – Owner and Sales and Marketing Director of Thread Coffee Roasters. Nani has been working in specialty coffee since 2012. She started as a barista in a small Brooklyn coffee shop that featured Crop to Cup coffees. There she learned to pour latte art and how to properly brew coffee. She went onto roasting, production, and education for Joe Coffee and Nobletree in NYC. She was the Lead Educator and Sales and Marketing Director for Unique Coffee Roasters in Staten Island, NY. In 2017, she moved to Baltimore, MD to work with Woodberry Kitchen, Artifact Coffee, and Bird in Hand as coffee director and manager. Since becoming an owner at Thread Coffee Roasters in 2018, Nani has grown this local business immensely. She has helped Thread to achieve co-operative ownership of their green coffee importer and recently received the high honor of B-Corp certification. Her dedicated work towards a more transparent, equitable and sustainable coffee industry has been recognized on an international level in recent years and has brought attention to Thread Coffee Roasters and Baltimore City on a global scale. Thread was named Best Coffee in Maryland by Food and Wine Magazine in 2019, and has had several notable mentions in Bon Appetit, Sprudge, Daily Coffee News and Roast Magazine. In Baltimore City, they offer free home delivery and have innovatively worked to create a zero-waste CSC (Community Supported Coffee) Coffee Refill Program. Thread's importing practices have a carbon neutral goal for 2022, which will be achieved by offsetting carbon emissions through meticulous tracking at the farm and shipping level then offset by supporting and funding sustainability measures, such as shade grown coffee farms and increased biodiversity and soil health programs at the farm level. Nani has already achieved so much, but isn't stopping anytime soon. She continues to make an impact and push for a more sustainable and equitable industry, helping to both facilitate a conversation and put into practice changes that are long overdue.
