As far as food fads go, protein and the desire for more protein seems to be as enduring as the non-fat craze of the 80s and 90s. Protein injection into familiar foodstuffs and beverages seems to only be getting more pronounced. This also applies to coffee. Protein enhanced coffee beverages, or "proffee", lines RTD shelves in the grocery store and even Starbucks is joining the game with a range of protein infused lattes. Highly addictive and soul draining mobile apps like TikTok and Instagram come out with viral proffee hack each week. For this episode's Mocha Moment Presented by Ghirardelli, we took the proffee world we're all living in and made something truly delicious on this week on the Coffee Sprudgecast. That's right, it's a count your macros mocha that's as protein-packed as it is rich and decadent. It's a cottage cheese and milk based beverage we're calling The Mocha Fromage. Heck, call us proffee purists. And before you wince at the idea of cottage cheese in your coffee, make it yourself! Trust us when we say: cottage cheese milk is going to be huge. The Mocha Fromage Ingredients 1/2 cup cottage cheese 1/2 cup milk 1 tbsp Ghirardelli Sweet Ground Dark Chocolate and Cocoa Powder Double shot of Joe Coffee Waverly Espresso 1. Create the cottage cheese milk base. Place a cup of cottage cheese and a cup of milk in a blender. Pulse until all of the chunks have been blended out. Pour the frothy cheese milk mixture into a vessel and refrigerate for an hour, or until the bubbles have dissipated. 2. Place a heaping tablespoon of Ghirardelli Sweet Ground Dark Chocolate and Cocoa Powder into a pre-heated 8-10oz vessel. 3. Add espresso to the powder and whisk until combined. 4. Steam and lightly aerate cheese milk to 140-150ºF. 5. Plop a little cheese milk into the espresso/chocolate mix and stir again before pouring the rest of the milk into the mug. Refrigerate remaining cheese milk and use within a day. 6. Sip your Mocha Fromage, perhaps with a piece of funky soft cheese to really kick it up a notch.

Perusing the cookbook sections at thrift stores can be a real treat. While digging through well worn copies of Dump Cakes and other Cathy Mitchell classics, we absolutely screamed when we discovered a pristine third edition copy of The Ghirardelli Cookbook (1986). We've worked with Ghirardelli for a number of years, and on the Coffee Sprudgecast here in 2026 we are teaming up to dive deep into the rich and chocolatey world of all things mocha with a segment we're calling Mocha Moments. This forty-year-old cookbook, released in the height of the 1980s San Francisco specialty chocolate boom, is chock full of inspirations for this episode's mocha. We decided to adapt the "California Cappuccino"—a playful mix of chocolate, brandy, and foam—to create something we're calling the California Sober Mocha Cappuccino. By omitting the brandy and subbing out instant coffee with freshly pulled shots of La Barba espresso on our Sprudge HQ Linea Mini, we keep it NA while still leaning in on the psychotropic and mind-altering caffeine buzz, in true California Sober fashion. Before you begin writing your stern letter scolding us for the misnomer, we recognize mocha cappuccino is confusing, redundant, and perhaps, yes, an abuse of the english language. But we're coffee purists, purely having fun with coffee, and to be quite honest, mochas that are one third coffee and chocolate, one third steamed milk, and one third microfoam (the traditional cappuccino rule of 1/3s) is absolutely stunning. Who needs whip when you've got sweet, sweet gently warmed and textured Pacific Barista Series pistachio milk (btw, pistachios sourced from California last time we checked!) Before sliding into our DMs, perhaps give this recipe a shot: The California Sober Mocha Cappuccino Adapted from The Ghirardelli Cookbook by Phyllis Larsen (Third Edition, 1986) 1 heaping tablespoon Ghirardelli Sweet Ground Chocolate & Cocoa Powder 2oz La Barba Espresso 4oz frothy Pacific Barista Series Pistachio Milk Warm a diner mug with hot water to keep things nice and toasty. Place a heaping tablespoon (Phyllis Larsen insists on heaping and who are we to say no?) of Ghirardelli Sweet Ground Chocolate & Cocoa powder in the mug. Pull a double shot of espresso directly into your mug and mix until the chocolate powder and espresso have combined. Steam milk, cappuccino levels of froth, so that it almost doubles in volume. No soap sud bubbles, please—we're looking for micro-foam here, people. Add a bloop of that textured milk in the mug, stir it up, and add the rest. Bonus points if you can make a pattern in the shape of the state of California. Enjoy! The January 29 edition of the AgNet News Hour delivered one of the most wide-ranging and passionate interviews of the year as hosts Nick Papagni and Josh McGill sat down with Dayna Ghirardelli, Executive Director of the Sonoma County Farm Bureau. From animal-rights extremism to water insecurity, vineyard market shifts, and the rising cost of simply staying in business, Ghirardelli laid out why farming in Sonoma County has become a daily fight — and why giving up is not an option. Ghirardelli opened by acknowledging the beauty of Sonoma County, while making it clear that agriculture there faces relentless pressure. Wine grapes remain under market strain, the Potter Valley Project threatens regional water reliability, and animal-rights activists continue to target dairies and poultry operations despite strong local voter support for agriculture. “It's another day in agriculture in Sonoma County,” she said. “And it never slows down.” A major focus of the conversation was Measure J, a ballot initiative backed by animal-rights groups that aimed to ban so-called “factory farms” in the county. Ghirardelli explained that the measure deliberately misused the EPA's CAFO definition, which is meant to regulate water quality — not eliminate animal agriculture. Had it passed, she said, the fallout would have devastated poultry, dairy, and the many businesses that support them. Voters overwhelmingly rejected the measure, stopping what she called an attempt to turn Sonoma County into a statewide test case for eliminating animal agriculture altogether. The interview also addressed the recent conviction of Zoe Rosenberg, an activist tied to the Measure J campaign who was found guilty of felony conspiracy and multiple misdemeanors after trespassing, tampering with vehicles, and stealing livestock. While Ghirardelli welcomed accountability, she expressed frustration that the sentence amounted to just ten days in jail. “It sends a dangerous message,” she said, warning that weak penalties embolden extremists who view arrest as a badge of honor. Water and environmental policy were another major theme. While Sonoma County hasn't faced the wolf pressure seen in other regions, Ghirardelli noted that predator issues, NGOs, and environmental lawsuits are increasingly being used as tools to financially bleed farmers dry. “They don't need to win,” she said. “They just need to make it expensive enough to keep farming.” Education, she emphasized, is agriculture's strongest defense. Ghirardelli said the industry has done a good job marketing, but not nearly enough educating. Programs like Ag Days, Farm Fest, and school outreach events are critical to reconnecting the public with where food actually comes from — especially in a state where many residents believe it comes straight from a grocery shelf. Looking ahead to 2026, Ghirardelli called the moment urgent. Rising costs, regulatory overload, housing challenges, and political polarization are pushing California toward a breaking point. “People need to stop voting by party and start voting by reality,” she said. “Quality of life is on the line.” Papagni summed it up simply: Dayna Ghirardelli isn't just defending agriculture — she's defending common sense.

Learn about how we curate our popular city guides, find out about the 16th Annual Sprudgie Award Finalists (voting open now!) On this episode of The Coffee Sprudgecast Michelman and Carlsen wet their whistles with a Chemex brew of Bekele Kachara Natural out of Muraga, Ethiopia roasted by our friends and partners Heartwood Coffee Roasters. "Bekele employs a meticulous approach to coffee farming," Heartwood writes on its website, "using shaded pre-drying beds on-site and nurturing specific coffee varieties. he uses organic methods, fertilizing his farm with compost or agricultural residues. His expertise in coffee processing comes from years of experience, including work at stations in the Bensa and Bona districts of the Sidama region." Delicious! As things started to heat up, the hosts alleyooped a Ceado Hoop Brew of Partners Coffee's *secret process* Ethiopia Suke Quto. What's the big secret? We have a few guesses after tasting flavor notes of wild cherry, pineapple candy, and concord grape. So too does Partners Coffee green buyer Sam Klein, who writes, "we mean it when we say 'secret' process—the few things we do know only add to the mystery. (We think there was inspiration drawn from a globally beloved soft drink.) What's left, then, is sensory clues. It appears to have been dried as a natural (with the fruit still intact), judging from the intensity of fruit flavor, syrupy body, and the reddish appearance of the unroasted coffee. The flavors are articulate and complex, and we're consistently reminded of grape and cherry soda, lambrusco, and root beer, which gradually mellow to white peach, pineapple candy, and passionfruit. Signs point to some kind of intervention in the fermentation process that would aid in the coffee's complexity—perhaps an additional fermentation stage, possibly in an environment where ambient oxygen has been displaced or removed." Today's guest is award-winning pastry chef Dominique Ansel, the founder of Dominique Ansel Bakeries in New York City and Las Vegas. When the French chef came to the U.S. in 2006, he worked at Daniel Boulud's restaurant for five years before opening his namesake bakery in SoHo. Dominique is one of the most inventive pastry chefs out there and is also the author of three cookbooks.
