El pico de gallo es una receta tradicional mexicana que por nuestras lindes se conoce como picadillo (la diferencia sustancial es que no lleva pimiento). Ideal como guarnición para el gazpacho, como ensalada fresca o para servir con nachos, tacos, quesadillas, carnes, pescados… se trata de un conjunto de verduras crudas troceadas y aliñadas. Mix well. Taste and adjust the seasoning as needed with salt and pepper. Transfer the pico de gallo to a small serving bowl and cover tightly with plastic wrap. Put the bowl in the fridge and let the pico rest for one hour to allow the flavours to come together. Serve the salsa right away or store it in the fridge for up to 24 hours.

Makes 2-3 servings INGREDIENTS For the Tomatillo Pico de Gallo: 1/2 small white onion, small diced 1/2 – 1 jalapeño, seeded and diced 1 garlic cloves, grated or minced Salt, about 1 1/2 teaspoons Juice of 1-2 limes, about 3 Tablespoons 4 tomatillos, husked, cleaned and chopped 1 small handful cilantro, plus some to garnish Pinch of ground cumin Splash of green hot sauce, to taste, optional For the Avocado Greek Yogurt ‘Crema’: (this will make extra) 1 Hass avocado, pitted and peeled Juice of 1 lime Pinch of cumin 1 cup plain Greek yogurt Salt and pepper For the Migas: 4 corn tortillas Drizzle of olive oil 4-6 oz Mexican chorizo, removed from its casing 5-6 eggs, scrambled in a bowl 1/2 – 3/4 cup mild cheddar cheese and/or pepper jack, shredded Garnish: 2 scallions, thinly sliced Pickled jalapeno rings, mild or hot EQUIPMENT ESSENTIALS: - Large nonstick skillet (to cook egg mixture) - Gas stove, or cast iron or stainless pan on electric stove (to char tortillas) - 2 medium size mixing bowls (to make pico and to scramble eggs) For recipe instructions, visit www.CookTracks.com. If I could date a recipe, I would definitely take this one out! I know I say it all the time, but this dish is so good! It's the perfect date night dish or even if you want to romance yourself. Here's what you will need. 4 boneless, skinless chicken breast 1 teaspoon of Cumin 1 teaspoon of coriander 1 teaspoon of salt 1 teaspoon of pepper 1 teaspoon of smoked paprika 1 teaspoon of cayenne pepper 1 teaspoon of granulated garlic For the tequila butter sauce ½ cup of white tequila 5 tablespoons of unsalted butter ½ cup of heavy cream Salt and pepper to taste For the pico de gallo 1 small red onion diced 1 jalapeno diced (take the seeds out if you want a mild level of heat and leave the seeds in if you want it spicy 1 small tomato diced Juice of one lime (of course this is contingent upon the size of the lime. If the lime is small and not giving you at least two tablespoons of juice you might need to juice two) 1 cup of roughly chopped cilantro Salt to taste. Pepper's is the front end cafe (read: less fancy) for what is likely the most expensive restaurant in Las Cruces; The Double Eagle. A true chimichanga, in all its fried glory, one would expect exceptional quality given the outrageous price of this burrito. One would be disappointed. We certainly were. It wasn't a bad burrito, so much as thoroughly unexceptional. We even try to dumb it down to our blue collar standards by ordering it with Seasoned Taco Beef. This only reminded us how far from Taco Bell we had traveled. Also, we must have blown our load the past weekend with so many guests on the quest, as we sound generally drained and dull through much of the recording. Amy joins us with a burger and fries from the same establishment, and they turn out to be even worse than the chimichanga. Ben continues to eat vegetarian, Burrito Quest notwithstanding. He dubbed the car Oh My God!. After graduating from UC Santa Cruz and drawing from the influence of his documentarian father Les Blank, Harrod began photographing art cars around the country. This led to his first documentary Wild Wheels, which has been seen by an estimated 55 million people around the world. Harrod has continued to create art cars, his second being The Camera Van which included several working cameras among the 2500 cameras attached to the van and a third interactive musical art car called Pico De Gallo. Harrod's most recent feature documentary film Automorphosis looks into the minds and hearts of a delightful collection of eccentrics, visionaries, and just plain folks who have transformed their autos into artworks.
