This week on Three Kitchens Podcast, Erin decides to celebrate Australia Day with an Australian recipe for Lamingtons, a sponge cake dipped in chocolate and rolled in coconut.There's some fun debate about how this recipe was first developed. Was it when a dinner guest accidentally dropped a piece of cake in gravy, which inspired the idea to dip it in chocolate? Or was it Lord Lamington's personal French chef who came up with the idea on the fly to please last-minute guests? Who knows. However they were created, they are a delightful dessert (or tea cake, or snack for anytime). Erin walks us through the challenges of baking with an original recipe published in The Queenslander Magazine in 1910. Erin actually ended up baking this twice because that old recipe just wasn't great. And the icing recipe was just plain weird. You'll have to listen in to hear what happened and what recipe she found to solve the problems. It seems not all sponge cakes are created equal...In the end we absolutely loved these Lamingtons, and came up with all sorts of ideas for zhuzhing them up (think sprinkles, or nuts or jam!). One of the most difficult cakes for bakers to master is the sponge cake. And if you are intrigued by this challenge, here are a few tips to ensure your success. Start with sifting the cake flour which makes for a lighter batter. Cake flour is more finely milled and produces a finer crumb. For egg whites that whip to the highest heights use only the freshest eggs. And skip the fancy frostings as this cake tastes perfect with only a dusting of powdered sugar and a few berries. On National Sponge Cake Day, don't be intimidated by this lofty queen of cakes. While the Wright Brothers took to the sky in 1903 with a combustion engine plane, it turns out that a human powered aircraft was much tougher to build. That's why the Royal Aeronautical Society announced the Kremer Competition in 1959 with a prize of 50,000 pounds. The strict figure 8 course was tough to navigate and the prize was not awarded until August 23rd, 1977. That's when Paul MacCready's Gossamer Condor 2 beat the Japanese Stork and a year's worth of work paid off big! Another day in the kitchen, another awesome recipe to share! This week we talk about a new movie, Loves Kitchen. It drives Adriane so crazy she branches out to her old baking skills and re-creates a main dish from the movie! Join us while we talk about different passions, a helpful plant by the name of yarrow, and bring back our sweet tooth! Sponge Cake: 2 lbs 4 oz Egg 1 lbs 8 oz White Sugar 1 lbs 8 oz Flour, sifted 8 oz Butter, melted .5 oz Vanilla This is the Sponge Method of cake baking so follow carefully: Scale all ingredients and keep at room temperature. Combine the eggs and sugar and warm to 110* using a water bath stirring to prevent clumping or cooking. This helps the foam create volume. With the whip, whip eggs on high speed until light and thick, this may take 10-15 minutes. Fold in sifted flour, do this by hand to prevent over-mixing gluten. Fold in melted butter slowly. Immediately pour into prepared pan and bake at 350 for about 15-20 minutes. Let cool before removing from pan. Creme Anglaise (Vanilla Custard) 12 Egg Yolks 8 oz White Sugar 1 quart Milk 1 Tbsp Vanilla Combine yolks and sugar in a stainless steel bowl, whipping until thick and light. Scald milk over a water bath stirring constantly and watching temperature. Very slowly pour milk into the yolk mixture while whipping. Set the bowl back over the water bath and heat slowly stirring constantly to avoid clumping or speaks. Stir until it thickens enough to coat the back of the spoon or until it reaches 185*. (Or a little less to avoid carry- over cook) Remove the bowl from the heat and set in a cool pan or refrigerator, add vanilla. This is a quick and easy berry filling using frozen berries, please keep this in mind if you are using fresh fruit or a compote! 5 lbs berries, frozen Water as needed 6 oz Sugar 6 oz water, cold 3 oz cornstarch Thaw berries and drain, reserving juice. Measure 12 oz of juice and water if needed. Stir in the first amount of sugar. Stir together a cornstarch slurry- cold water and cornstarch until dissolved. Bring the juice mixture to a boil, add cornstarch and return to boil to thicken. Stir in second amount of sugar also adding in salt, cinnamon, and lemon juice if you would like at this time. Pour syrup over drained berries and cool. Now that you have everything to layer a trifle, go for it! Start with cooled cake, add custard and then berries! Continue the process in any fancy container you like! Also loved in this recipe is a healthy portion of whipped cream! We continue from yesterday with Inspector Kemp declaring that this is an entirely different situation. He offers his hand to the creature in friendship, welcoming him to the community. They shake and the villagers begin to cheer in earnest, perhaps none as much as Igor. The inspector then begins to invite everyone over to his house for a little sponge cake and a little wine, when suddenly his arm pops off. We do a quick dissolve and then Dr. Frankenstein carries Inga, both of them dressed as bride and groom, across the threshold of his room. We end with him saying, "Hello, Mrs. Frankenstein." Show Notes: Yom Tov has come and gone and I've been behind lately but no issue we are going to keep trudging ahead. This episode starts with a dancing purple dinosaur.. Ok... fine you know how it, starts. The same way it always starts. Moving on.. Bubbe tells us about how to make parave sponge cake one of the most traditional deserts around. It is used for Yom Tov, shabbos, whenever you want it, it is always available. You can eat it plain or with desert but the key is to try to make the recipe and you will not be disappointed. Bubbe shows us the way her mother used to do it. We get to see her bowl and her beater. Bubbe shows us that the beater is still working like the day it was bought from the store. After beating, mixing, adding, stretching, stirring, blending and everything else involved in making a cake we take a quick look at the special cake pan used. Now it's time for the yiddish word of the day! Oh wait, no, what is this brand new segment? Ok lets go with it, I got questions, so lets ask Bubbe! Shoshana asks: "Bubbe, I want low fat traditional recipes!" and Bubbe responds letting her know that we do everything simple and in fact many of the ingredients are in fact low fat. You tube fan that contacted us by AOL IM asks: "Bubbe, is grape Jelly Kosher?" The answer to this is a certain brand that begins with S 32 ounces and is Concord Grape Jelly has a kosher symbol on it. Now it is time once again for the yiddish word of the day and what is it this time? Why Kaledz Student of course. That translates to College student. It sounds the same but as Avrom notices there is a bit of an accent to it. That being said back to the cake. The sponge cake is served with strawberries. Yum.... strawberries, my mouth is watering as I type this. But of course we need a story. Uncle Peretz drank 5 or 6 glasses of tea. Can you imagine how large that pot of tea is!
