Happy New Year!!! Welcome to 2025, and thanks for listening to our first podcast of the year, we appreciate you being here! I know that there are folks out there that are kicking off the year with a dry January, and we wish you all the success... However, here at the Flavors of Northwest Arkansas, we toast to the New Year with Sassafras Springs Vineyard and Winery... we'll talk with them in a minute. But first- Food News! Wanted to start with the Yankabilly Smokehouse- the former food truck at the Boardwalk in Springdale is now open inside Mothership on Emma. They've been up and going for 3 weeks and co-owner Aaron Kemper told me that they have some big plans for the spring, and it might involve their outdoor stage. 2025 will also be bringing some new restaurants and concepts to our area, and there are plenty that we're excited about: We kick it off with the Handshake coming to South College in Fayetteville. It's one of the 2 concepts coming from the Conifer team this year.. Former Conifer GM Hope Ray is a Fayetteville native and will be at the helm for this one. Just like Conifer, the menu will be gluten-free and have a heavy emphasis on being locally sourced. It will also have a market with locally sourced meat, veggies and more. The building is taking on a significant remodel, so it will take some time. The other concept from Conifer was announced a month ago, RYN. It'll be in Bentonville, and will be a farm-to-table tasting menu restaurant in a renovated farmhouse right next to their farm. They also plan to have events on their surrounding land. Yeyo's Executive Chef and Owner Rafael Rios got busier in 2024 as he became part-owner in downtown Springdale's Bauhaus Biergarten... He'll get even busier this year, as he'll be opening Casa Magnolia directly across Allen Street from Bauhaus. According to their website, outside of the café, they'll have a Two Friends Community Book kiosk, art, coffee, clubs, ice cream and more... We'll let you know when we hear about a grand opening date. Bentonville Chinese Restaurant Wu Zhao is projected to open later this month. It'll be owned by Blu Fresh Fish Marketplace's Barry Furuseth, Vincent Yao Lim, who's executive chef and known as the Wolf of WOK Street in Australia with millions of social media followers, and former champion of Netflix's Zumbo's Just Desserts, Catherine Zhang. We talked with them on November 13th, if you want to hear that episode. They'll be opening next door to Mezzaluna in downtown Bentonville. Sadly, yesterday was the final day of service for Mermaids in their current location in Fayetteville. I did receive confirmation yesterday that they're still targeting April for their opening date at their new location... still no confirmation yet on the location but will let you know once it's set. Sassafras Springs Vineyard and Winery is many things... a winery, a wedding venue, a retail space, a restaurant, a place to stay and more, but it certainly didn't start out that way. Co-owner Cheryl Long and GM Drew Gorton detail for us the journey to what it is today. They're mother and son of a family-run business, and that cast continues to grow. They have some wines that have won impressive awards in some of the biggest competitions in the US. How did they learn to make wine? You'll hear that story. Equally as important, how do they bottle it? They started off bottling by hand. It's been an evolution for sure, and they recently made a huge investment in it. On this week's edition of the Flavors of Northwest Arkansas podcast, things will be a little different, as we're going to be talking to a chef from Australia that has, literally, millions of social media followers and is going to be part-owner of a restaurant opening here. More on that in a second.   But first, what a road it's been for the Mellow Moose Burger food truck of Siloam Springs! They won the Miracle League's Northwest Arkansas Burger Competition in September, giving them a Golden ticket to World Food Championships in Indianapolis. That happened this past weekend. We'll hear how it ended and hear from Adrian Lem of Mellow Moose Burgers.   Now onto some somber news. Smoke and Barrel in Fayetteville is now closed. They decided to sell to someone else and announced it on social media this past weekend. We'll hear from them.   If you're online and follow the top influencers in the Chinese food world, you've no doubt heard of Vincent Yeow Lim, or @DimSimLim, as his millions of social media followers know him. If you don't follow him, you might want to check out his TikTok or Instagram feeds to see what kind of food will be coming to our area. And oh, by the way, Catherine Zhang is one of his partners in this. She's a pastry chef that won Zumbo's Just Desserts on Netflix and was the youngest to do it. They'll be partnering with our guy Barry Furuseth of Blu in Bentonville. So, what is it? Where will this restaurant be? What's the meaning behind the name? Adriano Zumbo is an Australian pâtissier and television presenter, who opened his first patisserie in 2007 before rising to prominence as a frequent guest on MasterChef. He is the host of the Australian baking competition program Zumbo's Just Desserts, and a judge on the Netflix web series Sugar Rush. It's fair to say that I didn't fully comprehend the work, skill, creativity and even science, that goes into making awesome sweets (cakes, pastries, biscuits, desserts, etc.), factoring in the myriad of taste, texture, presentation and ingredient variables. Not only should we not begrudge them that money, but we should thank them for the good they must have done for the world in order to satisfy so many consumers. People who do not work hard should not get as much money. If they want more money, they should work harder. Getting more money without working harder or smarter is unfair, and indicative of a false sense of entitlement. Unfortunately, modern liberal society has internalized the opposite principle: that those who work hardest are greedy people who must have stolen from those who work less hard, and that we should distrust them at until they give most of their ill-gotten gains away to others. The “progressive” taxation system as it currently exists serves this purpose. This way of thinking is not only morally wrong-headed, but economically catastrophic. Leaving wealth in the hands of the rich would “make the pie bigger”, allowing the extra wealth to “trickle down” to the poor naturally. The Counterargument: Hard work and intelligence are contributory factors to success, but depending on the way you phrase the question, you find you need other factors to explain between one-half and nine-tenths of the difference in success within the United States; within the world at large the numbers are much higher. If a poor person can't keep a job solely because she was lead-poisoned from birth until age 16, is it still fair to blame her for her failure? And is it still so unthinkable to take a little bit of money from everyone who was lucky enough to grow up in an area without lead poisoning, and use it to help her and detoxify her neighborhood? Things get "Heavy" fairly quickly, tensions rise, and pent-up frustrations become "Uncorked" as the story reaches its "Boiling Point." In the end, everyone gets their "Just Desserts," and realizes that "A Rising Tide" will, at least in this case, lift all ships.We're really happy with how this one turned out, and we don't think you'll feel "Burnt" after you listen to it. It'll be announced during the Belmont Stakes pre-race show on NBC. We already know the show is set to be held on Saturday, August 21st. Bayley will get another shot at Bianca Belair's SmackDown Women's Title at Hell In A Cell. Belair challenged Bayley on last night's SmackDown...and Bayley accepted. We got not one - but TWO - SmackDown Tag Title matches last night! The show opened with Rey & Dominik Mysterio beating The Usos to retain the gold. Dominik reversed Jimmy Uso's top rope splash into a roll-up. Jimmy actually kicked out, but the ref was out of position and made the 3-count. That led to The Usos getting another shot at the tag belts in the main event. That match ended with Roman Reigns running in to cause a disqualification. Reigns battered Rey & Dominik with the ring steps after the match. That was too much for Jimmy. He walked out on Roman...but Jey was conflicted as the show ended. Apollo Crews pinned Kevin Owens after a Death Valley Driver on the ring apron to retain the Intercontinental Title. Owens was weakened before the match by a backstage attack by Commander Azeez. After several years of construction at the Tianjin Xingang shipyard in northern China, the final test, the official sea trial, has now been completed with good results. The shipyard will present the ship for delivery this summer and the vessel will then sail to Antwerp in Belgium on its maiden voyage, where some members of the crew will board and the medical equipment supplemented. This will be followed by a visit to Rotterdam, and after this the Global Mercy™ will be ready for its first important mission in West Africa.Stena RoRo is building the Global Mercy on behalf of the international charity organization Mercy Ships, which provides free life-changing healthcare to people in some of the world's poorest countries. The project began in 2013 and Stena RoRo is responsible for design, contracting and execution. The construction project is unique in its kind and places major and specific demands on both design and layout, dependent on the special needs that hospital operations entail. On board are operating theatres and hospital wards, and everything needed for both patients and those working on board, including schools and preschools for the children of the volunteers. Sea trialThe sea trial, which the Global Mercy has just completed, means that the ship's systems and functions – such as engine performance and fuel consumption, navigation and radio equipment, maneuverability and safety systems – are tested for several days at sea.The Global Mercy will have six operating theatres, 200 hospital beds, a laboratory, a patient clinic and an eye and dental clinic. In total, she will be able to accommodate 950 people, of which 641 are crew.This summer the Global Mercy will be delivered from the shipyard. The maiden voyage will be to Antwerp in Belgium where some members of the crew will board and the last medical equipment installed, which will take a few months. After that, there will be two weeks in Rotterdam in the Netherlands, where festivities will be held in presenting the ship to sponsors, potential volunteers and other interested parties.Big difference for many peopleThe first mission will be during 2022, when the Global Mercy is expected to call at Dakar in Senegal. There will then be more than six hundred volunteers aboard from all over the world and from a variety of professional categories, who will make it all possible through their contributions of skills and time.More than 93 percent of the population in sub-Saharan Africa do not have access to safe surgical care *. The already very fragile medical care systems are at risk of being further degraded by the corona pandemic, and the need for basic but vital care is greater than ever in many poor countries. The Global Mercy will make a big difference for many people in southern and western Africa.Mercy Ships: https://bit.ly/33JfiAmCarnival Cruise Line Provides Update on Possible Restart Plan from Select U.S. HomeportCarnival Cruise Line today notified its guests and travel advisor partners of cancellations for additional sailings as it works toward plans for a possible July restart in the U.S. on select ships.Carnival hopes to begin operating sailings on three ships from Florida and Texas, including Carnival Vista and Carnival Breeze from Galveston, and Carnival Horizon from Miami.  Further, if Carnival can find a solution to allow cruise ships to visit Alaska, Carnival Miracle will assume some of Carnival Freedom's departures from Seattle. Given that there is still some uncertainty in our ability to operate these cruises, guests booked on those sailings who wish to make alternate summer vacation plans may cancel without penalty by May 31, 2021 and receive a full refund.The company is cancelling sailings on all other ships through July 30, 2021.  Guests whose cruises are cancelled are eligible for a future cruise credit (FCC) and onboard credit (OBC) or a full refund.Dream Cruises rolls out COVID vaccination for over 700 crew on Explorer Dream in Taiwan The first cruise ship to resume sailing in Asia in the post-pandemic era, Dream Cruises' Explorer Dream has been operating in Taiwan since July 2020, with over 80 successful voyages of “Discover Taiwan” and Island-Hopping cruises completed to date. With an output of up to 20 megavolt amperes (MVA), two cruise ships can be supplied with electricity at the same time in Warnemünde at berths P7 and P8. In regular passenger operation AIDAsol needs up to 4.5 megawatts per hour (MWh) of electricity.The use of shore power to supply ships with energy is a decisive step for AIDA Cruises to reduce local emissions to zero during berthing over time, as a cruise ship typically stays in port around 40% of its operating time.Holland America Line's New Rotterdam Successfully Sails Through Sea Trials in ItalyIt was smooth seas and fair winds for Holland America Line's newest ship, Rotterdam, which returned in the evening of May 6 to Fincantieri's Marghera (Venice) shipyard in Italy, after successfully completing two sets of sea trials off the country's Adriatic coast.Rotterdam left Marghera April 25 and performed the preliminary sea trials over two days before going into dry dock at Fincantieri's Trieste shipyard where standard pre-delivery hull maintenance and painting were performed. The ship started its official sea trials on May 3, returning to Marghera May 6, where the final steps in the construction process will be completed. Actor and filmmaker, Joseph Zaso was born on November 20, 1970 in Queens, New York. A performer of both the stage and screen, Zaso formed his own film production company, Cinema Image Productions in 1986. Since then he has primarily produced and acted in films of the suspense/thriller genre.Mr. Zaso is the author of 5 cookbooks: The Café Himbo Cookbook, Café Himbo: Cookbook II, Café Himbo's Just Desserts, Breakfast in Bed with Café Himbo and Café Himbo for the Holidays.Joe formed his own film production company Cinema Image Productions in 1986 and since then he has primarily produced and acted in horror films. Zaso broke into the film industry with the horror musical It's Only a Movie (1990), which he wrote, directed, and appeared in. He followed it up with several producing jobs, including the Italian giallo-inspired Five Dead on the Crimson Canvas.He teamed up with director Kevin Lindenmuth on several pictures, including Alien Agenda: Endangered Species , Rage of the Werewolf , and Addicted to Murder 3: Blood Lust. Charlotte Ree once ate 30 different kinds of croissants during a trip to France – then got a croissant tattoo afterwards. She's so dedicated to pastries that she'll stay up until 5:30am to finish a baking marathon. Pulling 120 cakes out of the oven during the hours people reserve for sleeping – and then going to work the next day, as communications manager for Pan Macmillan (the publisher of Hetty McKinnon's cookbooks) – well, that's just a normal whirlwind day for Charlotte. Charlotte's love of all things sweet is clear on every page of Just Desserts, her latest cookbook. It features recipes for Nutella thumbprint cookies, peach and raspberry tray cake, tiramisu swiss rolls and chocolate ganache Bundt (Charlotte likes big Bundts and she can not lie). Just Desserts also includes "a nod to the king of biscuits" and is laced and frosted with a good dose of puns (sieve the day)! Charlotte talks about how to land a cookbook deal (when you're not a celebrity chef), being on the publicity trail with Hetty McKinnon, as well as Charlotte's personal baking triumphs, fails and memorable moments. Plus, we take an express trip to her favourite patisseries around the world (I've saved her Tokyo recommendations for my next trip)!
