This month on Before The ENCORE, Sonic Architect Adam is joined by Toby Hatchett of Hatchett Sound – a designer of bespoke soundsystems featured across the island of Ireland. For those of you unfamiliar, you have Toby to thank for the beautifully handcrafted hi-fi soundsystems in The Big Romance, Fidelity Bar & Studio, Connolly's of Leap, Lost Lane, Hang Dai and Allta to name a few. Toby drops into Adam's studio on the way back to his West Cork workshop from Dublin to discuss his love for audio and creating that special experience for people, his ventures across venues to hi-fi "listening bars", to being tasked with designing an entire bar himself in his most recent output. If you're an audiophile or someone interested in one of the more abstract areas of the industry, this is the episode for you.*If you'd like to get this episode and all NO ENCORE episodes a full 24 hours earlier and ad-free, check us out over on Patreon here.*-Follow Hatchett Sound on InstagramHatchett Sound Website Get bonus content on Patreon Hosted on Acast. Based on the far western reaches of the Island of Ireland, Ballinskelligs Co. Kerry, Fermoyle Pottery Studio bring an approach to pottery close to the process of modern chefs. Sourcing materials from around them, Stephen and Alexis create bespoke pieces for the best eateries across Ireland, Singapore, London, Paris, Greece and Holland. A truely out-of-this-world eating experience at a restaurant is only achieved by an attention to detail that goes beyond the food on your fork: It's the lighting and sounds in the room; the colours on the walls; the smells as you enter; the tone and pace of the servers. Chef's and restauranteurs explore deep details of your entire experience with them to create a harmonious moment that will resonate with you long after you have swallowed your final bite. This is theatre, and top class theatre at that. Why wouldn't the hands behind the plates, bowls and cups not view it in the same way? Stephen and Alexis have brought to their work this same attention to detail, philosophy and personalised approach to each of their commissions which is why you will eat off their works at most of Ireland's top restaurants such as Aimsir, Anair, Allta, Ichigo Ichie, Ox and many more. Today we chat to Alexis and Stephen of Fermoyle Pottery Studio about what inspires them the most, from the landscape to the people they work with, to the chefs tables where their plates are served. We heard about their background as fledgling potters and artists to where they are today and dig into what makes them and their ceramics business stand apart.Find out more on fermoylepottery.ie Hosted on Acast. After a lost recording from a night drinking with her cousins, Lewis talks Kat into recording the first show for 2020.
Photo 20syl : CC Antoine Lamielle

Sometimes you never realize where an advanced degree in fermentation might take you. Now decades later, it's easy to say, you get to create the best Scotches in the world with creative carte blanc. Dr. Bill Lumsden is one of the most insightful and humorous figures in Scotch whiskey. A fan of music, art, and dream journaling, his creative output is unparalleled. So much so, that in the last Glenmorangie Private Edition series Allta, he found a yeast never before used and made a Scotch out of it. We chat Prince, writing, inspiration, and age.
The recipe for making Scotch is pretty simple: malted barley, water and yeast—that’s it. Talented distillers and blenders across Scotland transform these humble ingredients to produce delicious whisky. But Scotch is also one of the most heavily regulated spirits on the planet. The Scotch Whisky Association has very strict rules and regulations that you must follow if you want to call your spirit Scotch. (At the top of the list, of course, is that the whisky must be made and aged in Scotland!) As a result, whisky makers have to be very creative in order to come up with new and interesting bottlings, experimenting with everything from the type of water and variety of barley used to the type of barrel that the spirit is aged in. On this episode of award-winning podcast, Life Behind Bars, co-hosts David Wondrich and Noah Rothbaum discuss the history of Scotch and how whisky brands have been able to innovate despite the inherent constraints of the category. They are joined by David Blackmore, the global brand ambassador for Glenmorangie and Ardbeg Single Malt Whiskies. He called in from Scotland to discuss how Glenmorangie and its legendary director of distilling & whiskey creation, Dr. Bill Lumsden, have been so successful coming up with unique ideas. Blackmore also weighs in on the future of Scotch innovation, shares the backstory of their latest Private Edition release, Allta, and hints at what’s next for the brand. So pour yourself a dram and sit back and listen to this spirited conversation about Scotch. Slàinte! Life Behind Bars features Half Full’s editor Noah Rothbaum and its Senior Drinks Columnist David Wondrich as they discuss the greatest bartenders and greatest cocktails of all time. It won the 2018 Tales of the Cocktail Spirited Award for the world's best drinks podcast. Edited by Alex Skjong See acast.com/privacy for privacy and opt-out information.
Glenmorangie unveiled its 10th Private Edition release this week in London, and we were there as Allta marked a new style of single malt for Glenmorangie. The barley came from the Cadboll Farm near the distillery, but the big thing is the yeast - which also came from the Cadboll Farm. Dr. Bill Lumsden and his colleagues worked with their yeast supplier to isolate and grow a unique strain of wild yeast from the farm to use in the fermentation for Allta. We'll talk with Lumsden about Allta's origins and share tasting notes for it as well on this episode. In the news, local officials have cleared the way for construction work to begin on the revival of Scotland's Rosebank Distillery, while Diageo has unveiled its proposed design for the revival of Port Ellen Distillery on Islay. We'll also have details on the week's new whiskies, including one that took a journey down the river and up the coast.
