He explains the human digestion of milk, to help clarify why he advocates for raw milk. But he also explains why it can be dangerous under certain conditions. They explain the various fermentation processes of dairy. (11:45) The problem with dairy isn't the milk itself, but the system of handling it. (21:00) Pasteurizing doesn't make bad milk good; it makes bad milk not lethal. Bill shares where to legally buy raw milk. (29:00) However, this comes with the responsibility of doing your research and visiting the farms you are considering buying from. Bill describes homogenization, what it's used for, and why it's not superior. (31:00) They discuss various cheeses and Bill shares how a quality mozzarella is made. (36:00) He also explains what to look for in a real mozzarella, which can be very different than what is available in most grocery stores. Sardinians Have It Right Vinnie asks Bill to elaborate on his studies on the “Blue Zones”, particularly Sardinia. (44:00) He gives great detail about his experiences in Sardinia, the food, the preparation, the activity levels, and the culture. In the midst of the COVID-19 pandemic, perhaps one of the most important things for us to consider in order to protect ourselves is to be as healthy as possible. I've sought to do this myself through physical training, mindfulness practice, getting the right amount of sleep, and of course, a proper diet. To address the latter component, I'm joined in this episode by fellow archaeologist, Dr. Bill Schindler, who has taken a unique approach to the way he and his family eats by studying the diets of our ancient ancestors. Dr. Schindler is an Associate Professor of Anthropology and Archaeology at Washington College in Chestertown, Maryland. Throughout his tenure as an archaeologist, he has studied primitive technologies and various aspects of prehistoric food acquisition, storage, and consumption. He believes that gaining a better understanding of prehistoric life could help us address some of the issues that we face today. And that the lessons learned can be implemented into the diets of modern humans. This is a pursuit that has taken him all over the world! He's traveled to remote areas in Asia and Africa and has interacted with different cultures to learn about their traditional foodways. He's also traveled for media purposes and was featured as a host for National Geographic's television series The Great Human Race. Currently, Dr. Schindler is on sabbatical and he and his family are living abroad in Ireland for a year while he researches for his book on ancestral diets via The Food Evolutions Project. Most recently, Dr. Schindler co-starred in National Geographic's series, The Great Human Race. As both a prehistoric archaeologist and experimental archaeologist his research and teaching interests revolve around a comprehensive understanding of prehistoric technologies including lithic (stone tool), ceramic, and fiber technologies and all aspects of prehistoric food acquisition, processing, storage, and consumption.
