This week's guest is Dave Feldman, who unusually for this podcast is not a doctor or a medical researcher, but actually a software engineer. For a long time, there has been concern that those on a very low carb or ketogenic diet are pushing their cholesterol to very high levels. This is something that Dave experienced personally, when he noticed the amount of his so called bad cholesterol -  the low density lipoprotein, known as LDL - shoot up on a keto diet. And when he found others reporting similar findings, he decided to set up an organisation called the Citizen Science Foundation to fund research to find out exactly what was happening in the particular case of  people like him - what he has labelled as lean mass hyper-responders - who are slim, metabolically healthy, but see their cholesterol levels rise substantially once they are on a ketogenic diet. Perhaps surprisingly, the early results from this work, suggest that this group -  contrary to what has been thought in the past - may not be endangering their health. At the very least what this research clearly demonstrates is the large gaps in our current understanding of the role of cholesterol in metabolic health. One illustration of this is an experiment carried out by one of Dave's colleagues, Nick Norwitz, who found that eating Oreo cookies while on a keto diet actually lowered his LDL cholesterol more than a statin, which I don't think I need to add is not a recommended medical intervention! Dave Feldman is the founder of the Citizen Science Foundation and is known for his research into the ketogenic diet. Dave is a software engineer by training who embraced a ketogenic diet to avoid his progression toward type 2 diabetes. he joins us on this episode of STEM-Talk to share that journey. After undertaking the high-fat/low-carbohydrate diet, Dave' LDL cholesterol spiked. Dave used his training as an engineer to start learning everything he could about cholesterol and lipids. What he learned led him to create the website Cholesterol Code, a research hub for information and emerging data on cholesterol, particularly in the context of a low-carbohydrate lifestyle. Dave's Citizen Science Foundation is designed to support projects and research that promote collaborative efforts across multiple disciplines, both in and outside formal scientific institutions. Les Lyons, who will turn 73 in September 2024, has served 28 years in the Army, specializing in Airborne, Infantry, Pathfinder, and Chemical Officer roles. He retired as a Lieutenant Colonel in 2002 after primarily serving in the National Guard and Army Reserves. In addition to his military career, he has enjoyed a successful sales and management career in the business world for nearly 50 years, including 20 years at Xerox and various other large companies. He also ventured into startup companies, although they were not successful. Climbing the corporate ladder, he eventually held the position of Corporate VP of Sales at several large companies towards the end of his career, but his eating and sleeping habits suffered as a result. Over the past 25 years, he has experimented with numerous diets, experiencing temporary weight loss followed by weight gain and even adding a few pounds. Eventually Les found better information, and through low carb and carnivore diets, he was able to completely transform his health. (5:00) He defines an LMHR (Lean Mass Hyper Responder) as high LDL, high HDL, and low triglycerides. He explains his background to folks unfamiliar with him. (7:00) Dave is an engineer and noticed a pattern or system. He shares the study with LMHR was about and some of its challenges. Awareness of LMHR is growing, so it should be studied even further. Funding such studies is difficult; however, the low-carb community has stepped up. The study analyzes how much LDL independently induces a high rate of atherosclerosis (lesions on the artery walls). (23:00) The participants are part of a year-long study that will measure plaque volume and soft plaque progression. The majority of studies done are on people who already have various diseases. (32:00) Dave would like to see a larger percentage of studies done on healthy populations to find a common baseline of biomarkers. Dave shares some information about Dr. Matthew Budoff's presentation that may be more useful to view on YouTube. Dave goes through the slides and explains the findings. A total plaque sore is discussed. (48:45) LDL cholesterol does not correlate with the progression of plaque. The caveat: this is preliminary data and more information needs to be collected. He was 88 pounds and dealt with severe anorexia.  Plus, Ryan was suffering from hardcore mental health problems. Eventually, Ryan got his weight up to 130. However, that wasn't the end of his health problems.  Despite gaining weight, Ryan's energy never returned, and he never addressed his emotional trauma from childhood.   Later, Ryan was diagnosed with small fiber sensory neuropathy (SFSN).  [11:40] Mercury in Tuna: Measuring Heavy Metals in Human Hair  One of Ryan Brown's heroes is Dr. Terry Wahls. At one point, Ryan had been eating tuna daily for four years.  When Ryan tested his hair follicle levels for mercury, his levels came back extremely high.  Blood tests will look at acute mercury, but they won't give you chronic levels of mercury.  The bigger the fish, the more toxins they are going to have.  [18:20] Mold Toxicity: Getting Your Energy Levels Back With a Heavy Metal Detox Another deep dive Ryan did on his health was regarding mold toxicity.  In LA, Ryan found black mold in his home; he lived in it for over a year. After moving out of that environment, Ryan's energy levels finally increased. Ketosis will help reset your body and give you humanity back. Infants are in ketosis, and women during pregnancy are in ketosis too.  So many people in the United States are metabolically inflexible. Every single one of these people can benefit from ketosis.  [30:10] Ryan Debunks Common Misconceptions About Keto  Too many health coaches and influencers are making ketosis complicated. Ketosis is not complex; it's simple.  One of the biggest mistakes people make is eating things that are labeled “keto.”  Nothing in the world labeled “keto” beats eating real and whole foods.  You need to focus on real food instead of packaged and processed goods. Another thing people are getting wrong is worrying about eating too much protein. It's actually pretty challenging to get into gluconeogenesis.  [35:40] Animal-Based Proteins Are Amazing for the Human Body  Pretty much everything you hear mainstream, almost the opposite is true.  Animals have the full array of amino acids that the human body needs. While on the other hand, plants do not have the full array of amino acids we need. Ryan is a massive fan of eating fatty red meat.  You need cholesterol to synthesize vitamin D. Also, don't be afraid to eat eggs; eggs are great for your hormones.  [39:30] Cholesterol Is Critical for the Body and Your Overall Health More people die from heart disease with normal to low cholesterol than with high cholesterol.  Cholesterol is essential; your membrane is made up of partly cholesterol.
