So to start off, would you just give us a brief introduction of who you are and how you got to be where you are eating like a human. Who is Dr. Bill Schindler [00:00:17] Bill Schindler: Sure, I would love to, and thank you for the opportunity to talk with you today. So my name is Dr. Bill Schindler, and I am the executive chef currently of the Modern Stone Age Kitchen, which is a full family endeavor, which I'm sure we'll talk about in a little bit, and also the director of the Eastern Shore Food Lab, which is our non-profit. https://eatlikeahuman.com/eastern-shore-food-lab/ [00:00:34] Bill Schindler: And the where, how we got to this place, you know, our tagline, our, our motto, all of it is, is "eat like a human" because my background is actually in anthropology and archeology and I've spent literally my life at some level looking and I'm trying to understand and studying ancestral and traditional diets. [00:00:52] Bill Schindler: Some through the archeological record and some millions of years old and some more recent in historic through the ethnographic record and tried to make sense. And I'm using that to make sense of, our current issues surrounding food and diet and health and ethical eating and sustainability and all those things that we're really, you know, trying to problem solve today as a species. We don't have all the right answers, I'm sure, and we're headed in the right direction, but I think we've, we've started to at least ask the right questions, which I think is, is, is very important, especially in today's [00:01:28] Bill Schindler: dietary climate where we had landscape, where we have all sorts of, of information hitting us, left and right and don't really know, know how to feed ourselves. But my own relationship with food is, is actually incredibly important as well. I spent most of my life, very unhealthy because of how I ate, incredibly poor self body image, battling weight, battling, metabolic disease until we've really took this ancestral and traditional approach. [00:01:52] Bill Schindler: my, I'm I'll turn 50 in about a month, and I've never felt better. I've never been in better health and, my entire life has been transformed because of, of this approach. And, and very quickly, I think just to mention what that approach is. We as a species right now, as humans, are trying to understand obviously how to feed ourselves. [00:02:11] Bill Schindler: Most of us wanna lose weight or feel better or live a better life, and to figure out how to do that, we're asking the question, "what should I eat?" [00:02:19] Bill Schindler: And trying to achieve that health or that body. Through that answer. You know, what, what should I eat? And we think that, you know, from that sort of Weight Watcher's mentality, if I have this much carb, this much protein, or I go on this diet and I eat this green smoothie and all this, all my problems will be solved. [00:02:35] Bill Schindler: And even though what we should be eating is a very important question, what I hope we get a chance to dive into a little bit today during this conversation is it's not the only questions that humans need to ask. How Should We Eat? [00:02:47] Bill Schindler: We are a completely different species. The way we go about eating and getting our food is completely different from every other animal on the planet. It is partially the what built us as a species with these big brains and these big bodies.

Dr. Bill Schindler In this episode, we are joined by Dr. Bill Schindler; Associate Professor of Anthropology and Archeology at Washington College and the Founder and Director of the Eastern Shore Food Lab. Dr. Schindler received both his Master's degree and Ph.D. at Temple University. With much of his studies being centered around primitive technologies and various aspects of prehistoric food acquisition, storage, and consumption. He believes that gaining a better understanding of prehistoric life could help us address some of the issues that we face today. And that the lessons learned can be implemented into the diets of modern humans. This is a very nuanced topic so I wanted to do a thorough podcast with probably the best person in the world to speak on this, Dr. Bill Schindler. We frame this whole conversation around a recent New York Times opinion piece called “The end of meat is here” https://www.nytimes.com/2020/05/21/opinion/coronavirus-meat-vegetarianism.html This is an absurd article that uses the coronavirus era we’re in as a way to propose that the human race should not eat meat anymore. It’s a strange notion that we’d stop eating the most important food in human history, a super food that literally made us human. I usually wouldn’t pay much attention to such a thing, but it was a good way to frame our discussion and expose all the errors the author made. It’s always fun to debunk these type of things but there's not always time for each and every one that keeps popping up. This episode should also go a long way to clear up many aspects of meat-eating and a proper human (or should I say Sapien) diet. Dr. Bill Schindler is the director of the Eastern Shore Food Lab at Washington College where he is also an associate professor of archaeology and anthropology. But the modern diet has overtaken the real essence of how food should be prepared and eaten. There is a lot to learn about how ancestral diets can benefit us. So, to expound more on the components of ancestral diets, we’re learning all of that from Dr. Bill Schindler, my guest on this episode. Connecting With Nature Dr. Bill Schindler grew up in the coast of New Jersey. He narrates that his parents worked hard to connect him with nature and outdoors like hunting, fishing, trapping, hiking and camping at a very early age. Dr. Bill Schindler didn’t take any pleasure in killing, but there was something about being a part of the entire process that drew him in at a very early age. Dr. Bill Schindler also spent a lot of time in the kitchen cooking with his mother. He also battled with weight issues until high school. However, taking up wrestling was an exercise that helped Dr. Bill Schindler maintain his weight. Despite that, Dr. Bill Schindler still didn’t feel healthy and felt there was still something wrong with his diet. “I was stuck in that rut trying to figure out what I should be eating by looking at the nutritional components of food. And I would chart out my weekly diet to the gram of every single nutritional component of food that I had access to understanding,” recalls Dr. Bill Schindler. College Years Dr. Bill Schindler continued wrestling in college. But then he also developed an eye disease called keratoconus. He went blind and ended up failing at school. It was not long before Dr. Bill Schindler had a cornea transplant. Eventually, he got back into college at the College of New Jersey and wrestled again. After college, he went further by pursuing a Masters’ and Ph.D. degree. “My journey towards health for a long time was always focused on that which I got from books and magazines, doctors and nutritionists. Nothing felt right. One thing that felt right to me was when I was a part of the entire process,” Dr. Bill Schindler said. Looking For A Deeper Connection Dr. Bill Schindler soon realized he wasn’t satisfied with purchasing a gun and ammunition for hunting. He felt there was something about it that’s too cold and distant. He wanted a deeper connection, so he focused on learning how people in the past hunted. Dr. Bill Schindler then learned how to make his bows and arrows. That led him to archaeology, particularly experimental archaeology. He also went on to teach classes at a university. “During that time, there was a major transformation in my life that made me who I am now. And that’s having children,” shares Dr. Bill Schindler. “Almost every pre-historic technology that I spent my life learning about has something to do with food. I realized that that was the key to making an impact on my family.” Ancestral Diets When we talk about ancestral diets, there are components to consider like prehistoric technologies, behaviors regarding food, food acquisition, and processing. Dr. Bill Schindler says ancestral diets was almost always focused on increasing the nutrient density or bioavailability of the nutrients in our food. Between five and seven million years ago, Dr. Bill Schindler said our earliest ancestors first stood up and became bi-pedal. The size of our gut impacts how well we digest our food and how well we absorb that food that’s been broken down. “On the other hand, the food processing today are focused on other things like storage, shipping, and shelf life and usually at the expense of nutrients. I realized how important it is to understand this and how it completely impacts our approach to food or diet and health,” said Dr. Bill Schindler. Food Evolution Dr. Bill Schindler says that during the early times, we were able to obtain food using only our biological characteristics or traits. As a result, our bodies and our brains remained the size that they did. “This is because our ability to take in large amounts of nutrients is very restricted because of our physical limitations,” said Dr. Bill Schindler. “It all began to change three and a half million years ago when one of our ancestors picked up two rocks and struck them against each other.” He adds, “That moment completely transformed the course of us becoming human. We could butcher for the first time. The earliest stone tool we ever found dates back 3.4 million years ago found in Kenya. And the earliest example of butchering dates to 3.3 million years ago in Ethiopia.” Furthermore, Dr. Bill Schindler said it opened up a world of possibilities. This includes hunting for the first time, cooking with fire, fermentation, cooking in containers and vessels, and drying. Over time, we continued to improve our diet, create new technologies and behavior patterns that can extract more nutrient-dense foods from the environment. So, we began to hunt more efficiently and detoxify certain plants that were inaccessible to us before. Maximizing Food Dr. Bill Schindler explains that to make the most use of the food we eat, we have to process that food before we eat it to allow our body to access it. He says our genes is a combination of our gene make-up and the environment that it interacts with. “If it’s about nutrient density, meat is more nutrient dense than vegetables and fruits. The biggest transformation of our ancestors occurs about two million years ago. I believe the biggest change here is we begin to hunt, and we begin to cook our food,” Dr. Bill Schindler said. Truth About Meat The reason that hunting is so important is that it is not about meat. Dr. Bill Schindler says, on the contrary, it is about animals. And the reason we could scavenge it three and a half million years ago is that the carnivores and the predators that killed that animal you’re scavenging from, left the meat behind after they ate all the good stuff. “When we began to hunt, we have first access to the most nutrient dense parts. And when that happens, we began to cook food,” said Dr. Bill Schindler. “Our brains and body exponentially grow. He adds, “Women also become more similar in size than men do which is an indicator of a quality diet as well. Our body was built on a diet that access animals. So, we need to focus on what was our diet like that produced our species and what technologies did they use to extract the most amount of nutrients in our environment.” Raw Dairy Dr. Bill Schindler says we can mechanically break down food with knives, mortars, and blenders. We can also ferment, take that food and derive nutrition from it. But Dr. Bill Schindler also shares that when he started having children, he wanted to learn more about dairy, especially dealing with raw dairy. He says all mammal babies are called mammals because their mothers have mammary glands. All baby mammals produce two different enzymes in their stomach that allow them to do some amazing things with milk. One is lactase, and the other is the enzyme chymosin which curdles milk. “The other thing that happens when raw dairy stays in the stomach for a little while is that it ferments. It is also important to allow it to break down better, releases nutrients and delivers all sorts of amazing probiotic nutrition into their bodies,” said Dr. Bill Schindler. He adds, “By fermenting milk, we’re automatically getting rid of a lot of the lactose that we’re having trouble with, and the enzyme lactase is already there. So that’s why people that are lactose-intolerant can often tolerate long-aged cheeses or things like yogurt.” Dr. Bill Schindler says that another thing we can do is harness chymosin and use it to curdle milk before we even eat it. And that’s cheese. But he also is firm in declaring that we have no business drinking ultra-pasteurized skim milk. Because skim milk delivers almost no nutrition. Cooking Corn We have to realize the limitations of our bodies and understand what has been done in the past to access those nutrients and re-adopt those practices. Dr. Bill Schindler says if we adopt the crop and not the practice behind how to transform that raw material into a finished product, we’re missing out on a significant component of that diet. It can cause a lot of problems and corn is a great example. Dr. Bill Schindler shares what Native Americans figured out for a long time. They discovered that if they took the corn and boiled it in a solution of wood, ash, and water, it would break down that corn into something our bodies could digest. This became the basis for tamales or real tortillas. But if you take the corn and boil, grind, bake, or eat it raw, you’re not getting all the nutrients that corn has. Dr. Bill Schindler says much of it will pass through our bodies even if we grind it into cornmeal. “If we’re eating food to derive nutrition from it, we have to realize the limitations of our bodies and understand what has been done in the past to access those nutrients and re-adopt those practices,” advises Dr. Bill Schindler. He also says corn is easy to grow. Hence, it is natural if people make it a significant part of their diet. In some ways, it may be good, but if we adopt the crop and not the practices behind how to transform that raw material into a finished product, we’re missing out on a significant component of that diet. Eventually, it can cause a lot of problems. “Grains are designed to stay dormant until they are in the perfect condition to support new life and to sprout and to grow. We can keep grains for years in a dry condition. And by grinding it and baking it, it does absolutely nothing,” said Dr. Bill Schindler. Reconnecting With Food Dr. Bill Schindler says the most important thing we can do is reconnect with our food and where it comes from. Cook everything entirely from scratch at least once. This way, we would find out how food is made. He also says thinking about food based on nutritional components is a terrible way to look at food. And that only started a little over a hundred years ago. To reconnect with food, Dr. Bill Schindler advises to do these steps: Focus on those food processing techniques that increase the nutrient density and the viability of nutrients in our food. Take steps to reconnect with our food, our diet and where it comes from. Understand and appreciate the context for all of our food. “Most of the traditional food that we all enjoy like real cured meat, real cheeses, real bread, all sorts of dairy ferments are deep-rooted in the past,” said Dr. Bill Schindler. “And when we make them the right way and apply the right techniques, they taste amazing they smell amazing, they look amazing, and they are satiating.” Bio Dr. Bill Schindler is an Associate Professor of Anthropology and Archaeology at Washington College in Chestertown, Maryland. His research and teaching combine both academic and hands-on approaches resulting in unique teaching and learning opportunities, and he is equally at home in the middle of the forest armed with a hand-made bow stalking a deer or in a college classroom delivering a lecture to a group of students. He truly lives what he teaches and teaches what he lives. Dr. Bill Schindler’s teaching style is based on the belief that students are active learners and are best served by doing and solving real-world problems whenever possible; his approach is what he calls sole authorship, project-based, hands-on learning where students are engaged in a project for its entirety – immersed from the very beginning to very end. In 2014, Dr. Bill Schindler was awarded the Washington College Alumni Associated Distinguished Professor of the Year Award, was nominated for the Carnegie-CASE-Phi Beta Kappa Professor of the Year Award, and in 2015 he delivered the keynote address focused on his approach to teaching at the world’s largest Experimental Archaeology Conference in Dublin, Ireland. Dr. Bill Schindler also has a book coming out with Rowman and Littlefield Publishers, slated to be available in January 2019. Dr. Bill Schindler is the director of the Eastern Shore Food Lab at Washington College where he is also an associate professor of archaeology and anthropology. Two years ago he co-hosted the National Geographic show The Great Human Race. He spent the last year abroad continuing his hands-on research and professional development by immersing himself and his family with indigenous and traditional groups around the world to learn about their food and diets. As an experimental archaeologist and primitive technologist his specialties are in recreating technologies of the past to better interpret our ancestral diets. His current focus is learning how to translate the outcomes of that research into something meaningful for modern day diet and health and is working to fuse lessons from our ancestral dietary past with modern culinary arts to create a food system that is relevant, accessible and meaningful to modern Western life. We got into so many interesting things like the development of humans and how it tracked with food technology, drinking blood and milk with pastoral tribes in Africa, eating brains, ancient food preparation and hunting, my favorite topic - nutrient density, and so much more. Thanks! http://indiegogo.com/projects/food-lies-post Show Notes Dr. Bill Schindler is a professor at Washington College in Maryland Director of Eastern Shore Food Lab https://www.washcoll.edu/departments/eastern-shore-food-lab/ His whole life has led up to his career and interests His dad took him into nature and he learned to deal with taking an animal’s life even though he didn’t enjoy it Also grew up with mom and grandmother in kitchen cooking - realized it was all connected Learned to hunt and make tools as our ancestors did He became what’s known as an experimental archeologist Almost every single primitive technology made is related to food. Every tool and invention was based on getting food, processing food, storing food THe realization of the different types of food processing made all the difference Food processing of the past all focused on INCREASING nutrient density All modern food processing focused on money savings, shipping, shelf life, etc. Modern food processing also DECREASES nutrient density Not everything new we do is bad though Dairy is a hot topic. Just because we didn’t always consume it or other mammals don't consume it past a certain time in their life, doesn't mean it’s not healthy (if you tolerate it) Everything changed 3.4 million years ago when we made the first tool Humans are one of the weakest species on the planet on our own Our bodies and brains were quite small before we created tools to access meat Our digestive systems are actually pretty inefficient. We need to process our food with tools and fire to feed our large brains We have bones from Ethiopia that have butcher marks on them from this time, as well as impact fractures to get bone marrow inside 2 million years ago the invention of fire and some other hunting techniques were monumental for our species Humans started off as scavengers Once we started actually hunting ourselves we had first access to the animals we killed so therefore all the most nutrient dense, choice parts like the organ meats, etc. Results in a huge increase in body and brain size and women catch up in size to men more We mimic other animals in techniques of acquiring and processing foods Our biology isn't set up to eat meat like other carnivores - humans are set up to use tools and technology to consume nutrient dense animal products As we changed our diets, our bodies adapted to it. Homo sapiens wouldn’t have made it 300,000 years ago if we didn’t develop these extensions of our physical form necessary to cook and process meat We have brains that require high quality animal fats to function What is domestication? Humans were the first domesticated species - we domesticated ourselves Our teeth got smaller as we started relying on processing food outside of our bodies If we had absolutely nothing and were left to survive, the first thing we’d have to do is create a tool or control fire. Our body can do almost nothing on it's own Our food technology tracked with our body and brain size over history Almost all our modern produce was at one point toxic Nobody knows our exact diet 300k years ago, but that doesn’t matter - we have certain nutritional requirements that were established We accomplished the impossible back then, but even more impossible we now have gotten ourselves obese and malnourished at the same time We’re using modern processing to create nutrient-free food and it is what we are basically programmed to seek out in the modern food environment He argued with a pediatrician who was demanding patients to drink skim milk We evolved away from our chimp ancestors who’s digestive systems were made for digesting a ton of plant matter When we became bipedal 5-7 million years ago, everything changed Apes have to eat all day long and have giant jaw muscles to do this and tiny brains Theories on why are brains doubled in size Fat was prized for all of history Eating the ENTIRE animal White meat chicken breasts are the least nutrient dense, newest, wackiest thing we could eat His family rule is kill the animal yourself or know the person who raised and killed it Farmers markets are key The advent of agriculture can clearly be seen in the fossil record with a decrease in physical size and brain size What’s the real problem with agriculture? How can we utilize modern agriculture and technology to feed the billions of earth today? Connect yourself to your food. Try foraging. Go hunting. Go to a butcher. Make the foods you like from scratch at least once. Know the story of food Focus on quality Animals are the most nutrient dense foods available, especially the organ meats, brains, marrow, etc. He spent a year abroad in places like Kenya and Mongolia and studied many hunter gatherers such as the Hadza He was with a group that brought down a genet cat and ate all the organs immediately They were continuously hunting and gathering and hide a very varied diet Picturesque physiques with wide, healthy jaws, white teeth, big smiles, almost prancing as they ran Just blood and milk diet for 6 months How to have a meaningful conversation about diet, health, and sustainability Took a year off to live with these cultures and wrote a book His TV show on NatGeo called The Great Human Race http://www.natgeotv.com/int/the-great-human-race We must use the lessons of the past to learn what to do now and the future He painstakingly made all the period-accurate clothes for the show by hand How did our ancient ancestors lived based on this knowledge?
